I love anything with avocado and eggs! And anytime of day!
Hi guys! Some of you will see me and know me from my previous ‘fit page’ and some will know me from my personal page.
So many were following me when I took down my previous page. There is a reason for that. I was going through what will likely go down as one of the hardest things I’ve ever gone through in my life. Separation and divorce.
When you saw me before, I was sharing things as an adoptive mom, married and losing weight post fertility treatment and diagnosis of PCOS and endometriosis.
Well, I also was able to share that through my lifestyle change to Paleo, I not only lost 70lbs, but was able to get pregnant (by surprise) with Miss Nora Lane.
After having this beautiful baby girl, my ex-husband and I separated and decided on divorce. I still went on to lose 100lbs!! Part of the stress of divorce likely contributed to the ease of that. I couldn’t eat much and was working out to relieve stress.
I hit some hard moments, scary hard, but got healthy again physically and even more in my heart and mind. So, I’m here again.
I hope to share my true journey, without holding back, inspiring you on yours.
With love...Amanda ❤️
If you haven't tried spaghetti squash with pesto and chicken, drop what you're doing and try it right now 😍 And guess what!? I remembered to measure this time when I made the pesto!! If you didn't catch the recipe on the @stay.lively story this weekend here it is 👇🏻
Cashew collagen pesto: 1 1/2 cup packed basil, 1/2 cup spinach, 1/2 cup cashews, 1/3 cup pecans, 1/4 tsp garlic powder, 1/2 tsp salt, 2 Tbsp nutritional yeast, 1 scoop @vitalproteins collagen peptides (if you don't have this m, no worries! Leaving it out doesn't affect the recipe), 3 Tbsp @chosenfoods avocado oil, 1/4 cup water
I've seriously been putting it on everything!! It adds so much flavor and a good dose of healthy fats which you know I'm allll about 😎 This was the perfect brain fuel to get me through studying 🤓

(Weekend Adventures Part 1) Last weekend we headed up to Fernie, British Columbia to fix a bit of a banking disaster that we've been trying to deal with for a while now. Not to get into boring and tedious details, but suffice it to say merging two lives across a border through immigration, with finances in both countries is interesting to say the least! We knew we had to show up in person to deal with this particular problem, but when we arrived in Fernie, the bank had just randomly shut down for technical problems. I mean... after 3 hours of driving, that's some bad luck, (and did I mention it was Friday the 13th, not that I'm superstitious or anything). We figured we'd might as well make the best of it, and headed to Freshies the local coffee shop for a large hot chocolate, and some much needed Wifi to figure out this latest turn of events. After a little digging, we discovered that the closest bank that would be open the next day would be in Lethbridge, yet another 3 hours away. So we decided to stay in Fernie and go out for a date night, before moving on the next day. We left the coffee shop for a restaurant called Nevados where they serve Latin tapas, and ordered these Tostones with Pico De Gallo and Pasilla Chile Sauce, which of course disappeared in about 2 seconds flat! (The rest of this story is to be continued, but for now you can head over to the blog to check out my rendition of this recipe with my Tostones with Mango Salsa and Cilantro Chimichurri.)
Here is my life saver! I wanted to post it in hopes that maybe someone else out there could find relief or hope for those really bad days! When I have the horrific tummy pain from a flare up and nothing helps I put this on the area of my stomach or my stomach and back as often the pain is referred there too. It is the only thing that helps to relieve the pain. It's a TENS machine that I have for my back and one day in a moment of desperation I thought about putting it on my stomach and it helped and provided my with relief. Last night it was the only thing to save me and quiet the tears. I hope this helps someone 😊 it's called the Empi Select Pain Management system
I've been curious about The Good Kitchen meals since I heard about them on Robb Wolf's IG feed a few months ago. #Paleo , #whole30compliant , #organic , #grassfedmeat meal options delivered to my door--sounds amazing 🤔 I have really enjoyed learning to cook since discovering Paleo, but I decided to order from @eattgk cuz I knew I'd be burnt out after returning from vacation. 😩
I'm glad I did! This Chili Lime Chicken meal is the first one I've tried and it's awesome. Tastes fresh, looks appealing, and the spice was on point 💯 I really appreciate the transparency of having all of the ingredients and nutritional information listed. Great for anyone who tracks calories. 🔥
Looking forward to trying more of these meals & I'll share each on with ya, IG. (I did add the tomatoes myself ofc cuz never enough veg 😜). 🍅

Good morning. Today was all about balance and core strength. 2 very important things when it comes to every day functions and good posture also strengthening your back. Don't leave this out of your workouts.!!
I am so grateful I took the time to rest last night. It seems the cold season is full upon us and I was starting to feel really run down. Some @bonafide chicken bone broth, @doterra on guard, and probably most importantly I took it easy and went to bed after the little ones did.
Now I am ready for my awesome but insanely busy day! P.s. I really dislike making my own bone broth! This one is amazing and the real deal without the struggle or smell! What's your favorite go to when you start to feel the tickle of a cold?
Can we all just take a second to talk about how THICK this piece of salmon is? 🤤 Can we also talk about how it's only Tuesday and I'm almost out of all of my staple veggies... How does one tiny human eat so many vegetables!? Honestly. Roasted up a head of broccoli to add to this salad and only the roasted stems made it in post-pic because I literally ate the WHOLE head of it before it could get in the bowl 🙃 But I guess veggies aren't the worst thing to be obsessed with 😉
I've been trying to incorporate more omega-3s in my diet lately because although I eat a lot of healthy fat, they're from many of the same sources. Varying my diet lately hasn't only made it more fun (and food should always be fun!!) but it's been nourishing my body in different ways 🤗 It's super easy to get in a habitual pattern with eating, so make sure to be switching things up to provide your body with different nutrients than it's used to! Trust me, your body will thank you 😚

Not sure what I've done today my tummy has been good lately but it's killing me right now 😭. Maybe it was the gluten free brownies yesterday or the rice noodles the day before. Both had rice flour. Ugh. Popped a peppermint oil pill, rubbed some on.... Any other suggestions? #flareupssuck#sick#pain#sadness#mytummysucks
I'm a little late putting together my meal plan for this week, so I made it for next week as well just to get a head start, and this Bacon and Eggs Breakfast Pizza is slotted under Sunday brunch for this weekend. It's pretty hard to beat the joys of Sunday brunch, so I try and have something extra good every weekend we're at home. Sometimes it's baked goods like the Glazed Cinnamon Apple Streusel Muffins from last week, but over the last while, we've both been really getting into savory recipes like this super easy to make breakfast pizza!
Green toast & egg, @safecatchfoods tuna salad on the back porch for lunch today. I love that I can have pancakes for breakfast & a sando for lunch without coming within 100 ft of a grain 🙌🚫🌾 or any refined or added sugars! Actually it's my gut that is really happy about this & I have to tell you that after this past week of smokey & what I'm sure is probably carcinogen filled air from all the everything that's burned down this past week, my system is feeling it. My sinuses are feeling it. My throat is feeling it:/ As some one with auto immunity I have come to a place where I take rest when I know I need to for my overall well being. I hunker down on my dietary yeses & the no-no's so that my immunity has the best chance of keeping above water. So, glad I have some 'yes' things already in my fridge & pantry so that I can just eat!
If you're curious about the green bread check a few posts back🍀🍞
So I gave up pasta many moons ago when I became gluten free. Then a million gluten free products came into the market but I never felt well eating them. Later I discovered that I needed to actually be grain free, and at that point there weren't too many options on the market at all. But today's options are so different-thankfully!🙏 So in honor of #nationalpastaday I made my favorite grain free gnocchi courtesy of @cappellos. I tossed it with some chopped cherry and sungold tomatoes from @ladymoonfarms, vegan pesto from @gothamgreens, castelverano from @jeffsnaturals, @cucinaantica Tomato Basil sauce and organic basil. So yummy and so simple. 🤗
What's better than avocado on toast? Paleo Avocado toast 🥑 Made with @paleolifestyleuk Paleo/Keto bread, which is gluten free, grain free/flourless and only 1g carbs per slice, and tastes like freshly homemade bread! Link in Bio to order with delivery in Greater Glasgow. 👌 🍞

Today’s lunch! Grass-fed burger served with organic green salad and pesto, sautéed organic mushrooms, bits of yuca and organic sauerkraut 😋💚
Whipped up a little stir fry lunch on the go! 🏃🏻♀️ Fast, easy, nutritious, delicious 👏🏼👏🏼
1 package chicken thighs (team thigh always!)
3 bell peppers (orange, red, yellow
1 - 2 Tbsp @fourthandheart ghee
1 - 2 tbsp @chosenfoods Spicy sesame oil
1- 2 tbsp coconut aminos
Sea salt + pepper
@traderjoes everything but the bagel seasoning
1. Roughly chop bell peppers and chicken thighs the same size
2. Sauté chicken thighs and peppers in ghee, use 2 separate pans (I like to use a sauce pan for the peppers so when you combine the 2 it doesn’t splash everywhere)
3.when the chicken is cooked and the peppers are soft (but not mush) combine the two and add remaining ingredients
4. serve on a bed of greens or cauliflower rice, top with @traderjoes Everything but a bagel seasoning
Have you tried incorporating turmeric into your diet? It’s powerful anti-inflammatory and antioxidants properties makes it a great addition to your diet. For example with this turmeric cinnamon latte. .
1 can coconut milk
2 tsp turmeric
1 tsp cinnamon
1 tsp honey
1/2 fresh ginger
Heat all ingredients over medium heat.
It's a tough act to learn to say yes to yourself and then face the disappointment of people you love. What I have learned is that I may disappoint people when I say no but that when I do say yes it has more value. That they know, it's a complete yes that I am happy to fulfill. Brene hits it out of the ball park with this bit of wisdom!
I loved my first week of @imperfectproduce & I love the idea of getting produce that might otherwise end up in a landfill for no reason other than being a little quirky. One mans trash, is another mans treasure, as they say... (but sad to think of any fresh food being trash when there are so many without) I honestly couldn't find the imperfections in any of the gorgeous produce I received?! Either way,
I'm more than happy to give some beautifully flawed produce a home I'm my family's belly, where it all looks the same:)
Especially in this world of so much curated perfection, it's great to grasp the plain beauty of imperfection, as it is really the only perfection there actually is I think.
The remains of last weeks box were floating around my fridge just begging to become this perfectly balanced flavorful soup.
