#throwbackrecipe !! It’s Friday night and I bet you’re craving some pizza. Instead of grabbing your phone to give Pizza Hut a call, grab your oven mittens and make this recipe instead! This pizza is low in fat and high in protein. It also tastes spectacular. You’re welcome.
Ingredients for Crust
1/3 cup warm water
1 tsp dry active yeast
1 cup oats ground into flour
dash of salt and garlic powder
¼ cup plain greek yogurt
1 tsp ranch seasoning mix
1/3 cup fat free mozzarella cheese
4 oz chicken
Frank’s Buffalo sauce
Preheat oven to 450 degrees. Dissolve 1 tsp yeast in 1/3 cup warm water for about 8-10 minutes. Then stir in oat flour. Knead and flatten dough onto greased cookie sheet, making a circle. Bake for about 10 minutes, until crust is crispy.
Meanwhile, mix greek yogurt and ranch seasoning mix together and set aside. Toss the chicken with Frank’s buffalo sauce. Once crust is done baking, spread with greek yogurt mixture then top with cheese and chicken. Return pizza to oven for about 5 -10 more minutes. (Unfortunately fat free cheese doesn’t melt very well) Drizzle with more buffalo sauce if desired!
This recipe serves 1-2 people, depending on your nutritional or hunger needs.

Lemon chicken summer soup!! 🥘🤤 -1 leek - 2 large carrots -1 zucchini - 1 squash - 2 Roma tomatoes -asparagus -6 cups of bone broth (I used 4 cups bone broth, 2 cups reduced sodium chicken broth) -1 sprig of rosemary -5 sprigs of thyme - juice of 1 lemon (I used more bc I love lemon) - & 1 lb of chicken thighs!

Lemon Blueberry Granola Tart..... guilt free! Great for breakfast😀
* 2 Cups Granola
* 3 tablespoons butter, melted (or coconut oil, melted)
* 1 pinch of salt
* 1 tablespoon honey
* 2 cups Greek Yogurt, (fold in a teaspoon of lemon zest )
* 1 cup fresh berries
* additional granola for topping
* Fresh mint
1. Preheat the oven at 180 degrees
2. To make crust, add the granola, butter (or coconut oil), salt, and honey to a food processor. Pulse the granola until the crumbs are the size of very small grains and begin to clump together.
3. Pour the processed granola mixture into a non-stick 20cm tart dish. Press the granola mixture firmly down with a flat measuring cup and also up the sides.
4. Bake the tart shell for 15 to 20 minutes, until golden brown.
5. Remove the shell from the oven and allow to cool completely.
6. Fill the tart shell with yogurt.
7. Top tart with fresh berries and granola. Keep chilled or serve immediately. #insideoutbox#ajourneytowellbeing#guiltfree#granola

You know what sucks? When people feel like their dishes aren't "pretty" or "good" enough. For me, cooking has always been an experience. It is calm in the kitchen and the possibility of failure without doing serious harm to our world.
Yeah, dinner tonight was delicious. And no, it wasn't all freshly made or even 100% healthy. But guess what? That's okay!
Some nights I don't feel like cooking. Other nights I want to cook all the foods. And on my in-between days, I make stuff like this. So yeah, I picked up $.99 garlic bread, lean ground turkey, a jar of vodka sauce, and a box of rigatoni. Only thing missing (for me) is a glass of wine.🍷
Don't feel guilty for what you can or cannot make. Try new stuff sometimes. Other times, buy a frozen pizza! Life should never be that serious. On that note, have an awesome weekend!!💕
