😋New Recipe😋Asian Marinated Grilled Chicken Breast
Many marinades are filled with sweeteners, infusing your #healthy dinner with unwanted simple sugars. This recipe removes all worry by using a small amount of liquid stevia along with other fresh and wholesome #flavors to liven up this tender, grilled chicken breast.
Enjoy with a side of #veggies !
Here’s what you need
For the Asian Marinade:
* ¼ cup coconut aminos
* ¼ cup Balsamic Vinegar
* 1 tablespoon olive oil
* 1 teaspoon Liquid Stevia
* 1 tablespoon Garlic, minced
* 2 tablespoons fresh ginger, minced
* 3 fresh scallions, thinly sliced
For the Chicken:
* 4 boneless, skinless chicken breasts
1. Combine all of the marinade ingredients in a large ziplock bag. Add the chicken breasts and marinade in the fridge for 2 hours or overnight.
2. Preheat grill for medium-high heat. Oil the grill grate.
3. Place chicken breast on the grill and discard the marinade. Grill for 5-7 minutes on each side, until cooked through with no pink remaining. Enjoy!
Had a really good mid week day off from work (as I'm working Saturday morning - which means no weigh in :( boo!). Had a bit of a lay in this morning, got up and had my usual mid week breakfast of weetabix minis with mixed berries. For lunch I had left over paprika pork (sorry forgot to take a photo!!) This afternoon I went with my Maid of Honour to try my wedding dress on again as I had a bit of a wobble last week and decided I wasn't sure that I liked it (#periodbrain ) Thankfully I loved it as soon as I had it on and decided it can only look better the more weight I loose! I then went and did an hour at the gym with one of my bridesmaids! 😘 I came home to this beauty of a meal that my OH cooked for us - Turkey Pizzas (turkey breast topped with tomato puree, mushrooms, peppers, onions and hexA cheese) with SW chips and veg! After a lackluster Carlsbad Half-Marathon finish Sunday (2:25:24), it felt good to get back in the gym today and START to build back some muscle (yes, it hurt to make this pose for more than 2 seconds). While I'm on indefinite hiatus from running, I'm very much looking forward to pursuing other passions this calendar year, and who knows, once I accomplish a few other to-do's maybe running will be calling my name once again.
