But really, I'm hanging in there. Day 2 of my (potentially) 5 day fast was definitely more challenging than the first. This afternoon my drowsiness was solid, but my go-to Tri-Salts picked me up. I went to see my lymphatic therapist after work, and she could sense that my body is going through a major detox and my liver is weak (what's new 🙄; 👉🏽 upping my liver support even more now!) ... but that my belly was the least swollen that it's ever been! Making my own wellness a priority can be challenging. We try to have a stretching and exercise practice in the morning. It started out as an attempt to do yoga but we mostly just try to bounce around in the morning and get our energy up. It's my hope that the more that the boys observe me making healthy choices, the more they will carry those habits forward as they get older."⠀

I was craving some cookies and tried @hewontknowitspaleo's lemon cake cookies! My non-AIP family said they were "good but needed more sugar." I, on the other hand, wanted to eat the entire batch! 😍🍋🍪
If baking sounds like the perfect Saturday night to you, we've got you covered. Here's how to make these GF Jam Thumbprint Cookies.⠀
1 ¾ cup GF flour⠀
¾ cup softened butter (1 ½ sticks)⠀
⅔ cup coconut sugar ⠀
1 tsp vanilla extract⠀
½ tsp baking powder⠀
½ tsp salt⠀
⅓ cup blueberry, blackberry, strawberry, or raspberry fruit spread ⠀
1. Preheat oven to 350 degrees.⠀
2. Line baking sheet with parchment paper.⠀
3. In a bowl, mix the flour, baking powder, and salt together.
4. In another large bowl, mix the butter and sugar together. 5. Then add in the egg and vanilla, and mix well.⠀
6. Slowly add in the dry ingredients to the large bowl of wet ingredients, and mix well.⠀
7. Make 1-inch balls with the cookie dough.⠀
8. Press a thumbprint into the center of each ball.⠀
9. Fill each indentation with about ¾ tsp of jam.⠀
10. Bake cookies for about 15 minutes.⠀
11. Makes about 20-24 cookies. ⠀

I'm not a huge fan of salads, but every once in a while I get an urge for a nice, refreshing salad. This one is from First Watch.
a lot of the ingredients in this salad are things I once would've ran to the bathroom after eating, been bloated, or had a headache from. 🚽so happy I can eat this now and feel totally fine! 🙌🏽.
Since food allergies run in my family, the first thing I had done when I started feeling poorly was an allergy test. Turns out I was/am allergic to many fruits (amongst many other things), so my allergist suggested I cut out all fruits, gluten and dairy for a couple months to see if I felt any better. A lot of these supposed "allergies" were from a leaky gut because now that I'm healing my gut, i can eat some of those fruits without any problem. .
Well, I cut out all fruit for 3 months (this meant avocados too (gasp! 😱 wtf?!)) along with gluten and dairy and I was still feeling like shit. That's when I went through the full AIP elimination diet (plus no fruit still...yes, pretty brutal). during that time I had colonoscopies, MRIs, endoscopies, etc., and was diagnosed with UC and celiacs. I continued the elimination phase for 3-4 months and then started reintroducing things after I combined the diet with remicade. .
This salad has ingredients that just last year I would've only dreamed about eating again like avocados (took 3 different times to successfully reintroduce), red pepper flakes (only took one reintro), and walnuts (2 reintros, same with almonds). .
Haven't completely healed my gut, but man am I happy to be eating different foods again! 👍🏼😊🙏🏽

Matcha coconilla latte this morning! 🍵🙌🏽 I am so sensitive to caffeine that I immediately felt the buzz after a couple sips. I don't drink these often for that reason, but on the weekends...#treatyoself 😜 .
▫️3/4 cup full fat coconut milk.
▫️1/4 to 1/2 cup filtered water ▫️1 heaping teaspoon of matcha powder ▫️coconut sugar to taste (save a little to sprinkle on top!) ▫️1 scoop collagen peptides ▫️1 teaspoon vanilla ▫️1T @nutiva coconut manna
Heat up in a small saucepan then blend to make frothy (or you can just blend and then microwave...whatever your laziness level is. Mine was high this morning. Microwave won) and sprinkle some coconut sugar on top.

Shrimp & Sweet Potato Coconut Curry
Time: 30 minutes
1 T olive oil
1 large white onion- diced
1 inch piece of fresh ginger - grated
1 T garlic granules
1 T dried ginger powder
1 T dried cilantro leaves
1/2 T turmeric powder
1 1/2 t sea salt
1 large or 2 medium sweet potatoes - cut into 2 inch chunks
1 cup frozen spinach
3 cups water (or fish stock)
1 1/2 pounds cleaned shrimp
1 cup coconut milk
handful of fresh cilantro leaves
juice of 1 lime
1/2 t black pepper (omit for strict AIP).
