The other night I made this pear-persimmon-berry crisp, completely AIP and vegan. If you know me at all, you know I HAVE to have dessert every night before bed! I literally will not fall asleep unless I do :). Therefore, I’m always trying to think of healthy treats for the evening. I LOVE a good crisp, but it’s hard to make them without nuts, I’ll admit. This turned out great for on the fly and I may have eaten the whole thing in a just a couple days 🙈

The Recipe is as follows:

1 10 oz bag of frozen mixed berries, thawed
1 pear, thinly sliced
1 persimmon, thinly sliced (honestly you can use any variation of fruits here that you want)
Juice of 1/2 lemon
1 tbs. tapioca or arrowroot starch
1/2 cup coconut flour
1 cup shredded coconut
2 tbs. maple syrup
1/4 cup melted coconut oil

Preheat oven to 375F
Mix fruit, lemon juice, and tapioca starch in a 8x8 or 9x9 baking dish, spread evenly along bottom of dish.
Mix remaining ingredients in a separate bowl. They should form a crumble consistency, add a little extra liquid if necessary to hold it together.
Press crumble topping over fruit mixture.
Bake for about 30 minutes until the top is golden brown

Cool slightly before diving in!

Apologies for being missing for the past couple of weeks. This year began with lots of travel (including a cruise that I am still working on a post for) and once I got back in town, a lot of focus has been put into my non-blogging job, holiday catch-up, giving myself enough rest to support my thyroid medication change/decrease, and finally getting into an exercise routine!!! That's right - today was class 9 and I have been going almost daily to get my butt kicked by well, basically my me, myself, and I.

Since getting sick in 2014, I really had to lay back off exercise. Although my husband and I love rock climbing, even that would cause me to go overboard much quicker than I could accomplish results and would result in me feeling ill for days if I pushed myself too much. Even walking for too long, same story. This past week we went on a hike and that was a bit too much. So cardio...seems to be a no go.

I'm giving @purebarrecumming a chance for a month as part of the New Year, New You promo that @collectionforsyth is hosting and so far so good! To me, pure barre feels sort of like yoga and crossfit had a baby. You get to lift and tone and challengeing your body and while doing so, you feel similar mental benefits as yoga - grocery lists and to-dos have no place in my brain during my workouts 😂. At about session 6 is where I noticed my first flexibility and strength improvement. It's considered a low intensity workout, but I feel like I'm getting high intensoty results. Pretty exciting! .

No one is more excited than I am about all the new AIP and Paleo convenience foods and baking goods coming to market. (See my last post about pancakes.) But, gut healing requires nutrient density and most of the “technically compliant” pre-packaged products don’t provide that.

So I have a pantry full of compliant indulgences.  But most meals?  Still just meat and veggies.

Got all my good fats and proteins from @proteinbreadco 6 seeds bread, smashed avo, feta my organic grown tomatoes amd basil BUT most importantly sprouted chia seeds from @fermentanicals. ALL my meals are getting a sprinkle of this good stuff! So gentle on the tummy and gut health happy.

I have been researching organic mattresses for over a year and we finally received ours last night! After thoroughly researching at least 20-25 different brands, I decided on a @plushbeds 100% latex mattress. What appealed to me about this brand is their many awards and certifications, their use of organic latex and zero chemicals, and their commitment to healthy beds that are also very comfortable. Can’t wait to sleep in this 🛏 tonight!!😴

I grew up on chicken pot pie! And no not the homemade kind. The ones that were in the freezer section and you just threw in the oven. It was one of my favorite dishes and my dad and I would always eat them when my mom was out of town for work

this turned out pretty darn good although next time I would like to try a full crust. I have to say, the topping was a little gummy, but every time I cook with cassava flour things turn out that way. Maybe it’s just me 🤷‍♀️

Hearing up leftovers from last night’s dinner: Kalua pig (fried up in bacon grease leftover from breakfast🙌🏼), mashed potatoes (totally dairy-free, and delicious!), cabbage cooked in the juices from the roast, boiled beets (I prefer boiled over roasted🤷🏼‍♀️), and some carrots and zucchini that I overlooked a little and is now kinda limp and slimy, but I despise food waste so I’m eating them anyway. 😂

This was the owner's grocery haul from last night. A few things to point out:

1. Not all of this is Autoimmune Protocol. Who can spot what the owner has added in since starting AIP? 
2. The burlap sacks turned into grocery bags. Trying to be a little more sustainable every month. 
3. This is a week's worth of food for multiple people. The salmon and turkey meat are not the only meats eaten. The owner gets >90% of his meat from local farms.

I made the association because I woke up with mild foot and leg cramps and the need to urinate in the middle of the night and knew that I probably lost some weight and along with it, electrolytes (true: 1.5 lbs since yesterday). After breakfast I could feel the muscles in my neck and shoulders tighten up, to the point I had to immediately use the heating pad. It struck me that the dehydration and electrolyte depletion could be the underlying cause of the chronic pain. I’d been thinking that if I didn’t have the leg muscle cramps and I felt well, i.e., not nauseous, fatigued, that I was sufficiently hydrated. Now I think those symptoms are just the tip of the iceberg.

So, so happy with how this turned out! Perfect for a cold winter day (or night)! I have been craving hot chocolate recently, probably because I desperately need more fat in my diet, but little Sky is soooo sensitive to caffeine! So I went on a mission to create a smooth, creamy, delicious white chocolate completely caffeine free!!
And here it is! .
Recipe:
2 cups full fat coconut milk
1/2 cup raw cacao butter
1/4 cup maple syrup or honey
1/2 cup of water
1 Tbs vanilla extract 
1/4 tsp salt

Combine all ingredients in a sauce pan and gently heat. Then blend with an immersion blender to combine and froth the milk.

Ummmm these are homemade curly fries and they are AMAZING!!! 😲😋They have very  little fat, just a tiny bit of oil added and some light salt. It really blew my mind at what is possible with just simple natural foods! One potato spiralized creates a heaping plate of fries. You can eat all of them (it's just 1 potato) and have zero regret because they are actually nutritious and good for you! 🥔💪Just gotta watch the ketchup intake👌 These are baked and they are good with our without oil. It's so cool that fries can be healthy and yummy!!!!! 🍟😎😄 .

What a day, what a night!
Worked alllll day! That 7-7 shift.. came home, I had NOO desire to get on my mat! I was ready to eat dinner and jump under the covers!! BUT I made it happen, I thought about my WHY, WHY am I doing this?! I want CHANGE in my life, and in order for CHANGE to happen, I need to push myself to reach my goals! I didn't want to workout soooo bad that I challenged my self to workout LIVE in my challenge group!! I got after it tonight, and I honestly FEEL better, I think I will sleep better as well tonight!! Today is day 18/21!! I LOVE chatting with my team and hearing about their journey!! Together we are committed! Every day we push each other to be stronger, both physically and mentally! .

About to have my first solid meal in nearly 48 hours, I'm taking this opportunity to shift back to the super simple, mega-healing diet I was on back in the spring.

I knew my morning would be hectic, but this hectic, yikes.

When I finally got home, I just needed to chill for a bit. I’ve been digging my guided meditations, but today, sounds just felt right.

Instantly, my body dropped into a much calmer state (almost like it knew what it needed 🤔) and off I was.

So often we neglect this part of healing. The quiet moments, the “active” passivity. We focus on the foods we’re eating, if we’re doing it “right”. But what about our soul? That needs healing too.

It’s flippin cold here in Texas. I am such a sucker for soups in cold weather! This is my own version of @againstallgrain Leftover Chicken Soup recipe!! I have been making this for 4 years now I think?! That’s hard to believe. But it’s seriously that good! I used my instant pot last night and didn’t roast any of the veggies. I just didn’t have the time and I was hangry 😂 Just diced and tossed the carrots, butternut squash, sweet potatoes, onion, baby kale, raw cubed chicken and chicken bone broth + all the delicious herbs into the instant pot and set to soup for 30 mins. When it was done I added a tablespoon of coconut cream and a tablespoon of olive oil to make it creamy and add some healthy fats. It was so dang good! I will say the flavor of the original recipe is incredible but this version turned out great and was super fast 🙌🏻 Do you have a favorite soup you indulge in during the winter months! Today’s lunch is a component meal. I cooked the veggies all separately and then did my own thing with the ground beef. I seasoned the beef and mushrooms with my Greek blend and some balsamic vinegar, added the rest of the veggies and gave the whole thing a drizzle of olive oil.

Sacha Inchi Seed butter! I will admit that I have an unhealthy addiction to almond butter, and wondered if I could create seed butter from these @traderjoes sacha inchi seeds as an alternative. Threw them into my NutriBullet, processed it for about 60 seconds, and voila! *
According to @thepaleomom, “Sacha inchi are chock-full of nutrition! They are good sources of vitamin A (carotenoids), vitamin E, and several minerals, including calcium, iodine and iron.  Sacha inchi seeds are very rich in protein (8.5g per serving), fiber (5g per serving), and essential fatty acids. Monday night on my stories I made @adventuresinpartaking’s AIP beef and parsnip curry. I had to sub a few things out since I’m also low FODMAP

I used cauliflower instead of onion and cabbage (I don’t do well with cruciferous vegetables but do better with cauliflower over cabbage. Even though it still bothers me I needed to rotate my veg intake a bit). I left out the garlic, too, of course. And used water instead of broth because I don’t tolerate broth and can never find one without garlic and onion. I didn’t have time to make my own vegetable stock either

The curry was delicious although didn’t quite taste like curry. I served it over my Cilantro Celeriac Rice (recipe on my site) and have really enjoyed this warming meal for leftovers this week .

I LOVE curry, it’s definitely one of my favorites. I really miss it since going nightshade free. How do you feel about curry? .
