Farmers Market Haul this weekend (from Saturday!)... kale, tatsoi, bok choy, sorrel, radish, fresh ginger, fresh turmeric, thai pumpkin, and two candy roaster squashes. Not a huge haul as I had 10 min to run through the market before class, but knowing that next week I wouldn't be able to go...I wanted to make sure I was able to get a few local goods 😋 .

I haven’t seen a weight change from going hard core keto to low carb with leniency. I have noticed some bloating and food cravings though 🤰🏽🥐 ~

It’s upper bawdy today and I’m finally growing fond of these workouts. Im usually a little cautious with my tweaky wrist and shoulder from yoga, but now that I know the correct forms in weight training I feel a lot less stress. ~

Luscious liver...said nobody ever! Except possibly my Mum (it must be a generational thing!) We all know organ meats are good for us, ‘natures multivitamin’, high in all the b vitamins and essential iron, but even the thought of eating offal manages to offend! 😣 
I wanted to start including organ meats in my diet to boost my low b12 and iron levels, but how to make it even vaguely palatable?....Mickey Trescott to the rescue! I knew I could rely on @mickeytrescott to have a simple and genuinely tasty way to put liver in my diet...and here is the outcome! 😊

It’s all in the sauce.... Mix up: * 3 tablespoons of olive oil * 1 lemon, juiced
* 4 cloves of garlic (chopped small)
* 1/4 teaspoon sea salt 
Method: 
Use 450g of free range chicken livers - 
Simply rinse and dry the liver, dry fry it over a medium heat (no oil needed in order to keep it from going soggy), 3-4 mins on one side before flipping to do the same on the other side. They are done when they are fully brown with no pink inside.

Pour on the sauce (be very generous as it needs the flavours) I served with some black cavolo nero kale and some precooked spaghetti squash. And it tasted yum! Next milestone will be get the husband to try it...think I’ve got a little work to do on that one! 🤔😊 Love Paleo. Paleo love ❤️

I attended an industry dinner the other night with work colleagues. The steak I ordered was massive, but too good to waste. I’ve had steak for lunch for two days, and I’m not sad about that one bit. Today I made use of the work salad bar and topped with the chopped steak, salsa and a little olive oil I keep hidden at my desk.

Paleo Pumpkin Pie Recipe 🙌🥧⠀

Picnik friends outside of Austin - this one is for you today! A video on how to make Naomi's famous Paleo Pumpkin Pie. Everyone can enjoy a little bit of Picnik holiday spirit no matter where you are in this world.⠀

Ingredients⠀
⠀
Crust:⠀
⠀
2 1/2 cups almond meal⠀
1/4 tsp baking soda⠀
1/4 cup avocado oil (can use melted butter or coconut oil instead)⠀
1/2 tsp vanilla extract⠀
1/8 cup maple syrup⠀
1 large egg, room temp⠀
1 large egg white, room temp⠀
⠀
Filling:⠀
⠀
1 can pumpkin⠀
3 eggs⠀
1/2 cup coconut milk (blend coconut milk first so there are no chunks)⠀
1/2 cup maple syrup⠀
1 1/2 tbsp pumpkin pie spice ⠀
2 tbsp tapioca starch⠀
⠀
Directions:⠀
⠀
1. Pre-heat oven to 350 degrees.⠀
2. Combine crust ingredients in a large bowl and roll into a ball with your hands.⠀
3. Using the method shown in the video, press dough into a pie pan and flute the edges of the pie. Have a small bowl of water close by and wet your hands as needed to prevent the dough from sticking to you. Use a fork to dock your crust by poking it several times to keep it from rising in the oven.
4. Pre-cook crust for 15 minutes at 350 degrees.⠀
5. While the crust is baking, combine filling ingredients and whisk together.⠀
6. When the crust is done pre-cooking, remove from the oven and pour in your filling.⠀
7. Return to the oven and bake for 60 minutes until the center is set (you can tell center is set when you move the pan slightly and the center doesn’t wiggle). If crust is browning or burning, you can use a pie shield crust or wrap aluminum foil around the edges to slow the burning.
8. When the pie is done, let it cool at room temperature and place in the fridge to set until you are ready to serve.⠀

Baked organic potatoes and fried mushrooms with fresh parsley wrapped in purple cabbage, heart lettuce, fresh spinach and arugula with tahini dressing and a mix of roasted seeds. When I first began the #autoimmuneprotocol in January of 2017, I was so darn intimidated by the idea of #batchcooking all of my meals and I thought it would be a waste of my entire weekend! However, with a little planning ahead of time and mental preparation, I made all of the food shown above in only 1.5 hours.
#
A new activity or way of living can definitely be scary because we are not sure how it might all work out but it can also be very empowering. Something as simple as batch cooking has taught me to organize other aspects of my daily life such as waking up a bit earlier to take care of chores, or to get an extra hour of alone time to exercise as well as develop a morning and evening routine so that I’m not struggling to accomplish it all the following day.

 The bottom line is that if we just take a small amount of time to prepare for a project or activity ahead of time, we will be that much more successful and likely to continue that behavioral pattern moving forward.

As an adult living in an inner city, I was able to use food AND drugs and was just a mess. Here’s the irony, this was simultaneously when I was going to school for nutrition. There is a famous quote that we teach what we most need to learn. That was me. I was going to school getting a Master’s degree in Nutrition, and suffering. I was suffering with my body image, dieting, counting my almonds, eating salads, prepping my food, and because I put myself in food prison all I week, I’d escape on the weekends. ⠀

Because I suffered so much with my body, digestion, and anxiety, I came to the point where I had to choose between medication or learning how to fix it in a real way. That’s when I started on a spiritual path of starting to understand that there was something deeper going on that I really needed to address if I ever had a chance of fixing and balancing my body.⠀
⠀
It’s an evolution; it was and still is for me. Today, I do feel that I have a healing, beautiful relationship with food but that doesn’t mean I have a perfect relationship with food. To have a healed relationship with food is to be respectful of the food and to be respectful of what your behavior with food means. ⠀

A lot of what I do with my client is called mind training. I believe that there are the emotions that we typically live in: fear, anxiety, anger, frustration, and so on. Instead of learning that these are trigger emotions, I view them as a trigger for my higher self to know that I have some work to do. ⠀
⠀
So now if I feel anxious I notice, “OK I am feeling nervous, I’m feeling fear,” and acknowledge I have some work to do. Then, I do the work. And, well, I’d need many more Instagram posts to dive into that.⠀

Back on the #weightloss train 🚂 my daily diet has been more on track than ever and weight loss has commenced. Even better is that I can tell it’s helping reduce inflammation which means I’m healing faster. I’ve been doing light workouts and using my weighted hula hoop to start strengthening my muscles again. I’m feeling very positive about things. .

Now that my pain levels are coming down I’ve got s new set of complaints. My hair has been falling out, my skin is all zitty, and I’ve been FREEZING which is super weird for me. We may be checking my thyroid out, but it could also just be caused by the stress of everything. So we’re figuring it out but I’m getting BETTER! I’m easing back into my fit lifestyle and I’m finally feeling hopeful about my fitness future!

I’m seeing a orthopedist tomorrow to discuss options regarding my bulging disc, hoping we can do some non-invasive things to get it back where it’s supposed to be. I’m just excited to get my life back and not be ruled by pain, chiropractor, and dr appointments!

Had a blast seeing Dr. Amen this evening! For those of you who don't know, I used to work at his Atlanta location clinic for several years. There are several other locations around the US. The clinic uses SPECT brain imaging as a tool in psychiatry to help properly diagnose and treat mood and behavior issues and also as an early detection tool for Alzheimer's and to see toxicity, traumatic brain injuries, etc. Treatment is very individual and the approach is integrative/functional. It was because of working here and having access to such a wealth of knowledge that I am where I am today and why I was able to put my autoimmunity into remission as quickly as I have. My journey accidentally started in 2012 (I first got sick in '09 and in '14 is when I really got sick) when I did a brain scan and it showed me having an AWFUL brain despite the fact that I did not do an drugs, drink, and I exercised and ate fairly well (as good as SAD gets). Every year I worked there, my scans got worse and worse. It was here where I first learned about the power of food in healing. It was here that I learned about supplements, ingredients, and labwork. It was here that I learned of my current doctor and here where I learned about all the different things that can happen to our bodies. I am so glad to still be able to be a part of the Amen Clinic family, even after shifting my career a bit. While I am not finished healing, the tools I learned have been wonderdul to have. I am forever grateful for the time I spent working there and hope to continue spreading the value of what Dr. Amen does! Side not, I don't think this man ages! 😂

Today I just want a comforting dish. I just made eggplant cannelloni with a macadamia cheese. A delight!😋😋
I put my eggplant slices in the steamer during 5 minutes. I stuffed them with a homemade macadamia cheese. I serve it with my tomato 🍅 sauce, I could believe that I am in Italy 🇮🇹. No gluten, no dairy, super healthy ✨, super tasty!

I bought beef tenderloin for the first (and probably last- holy crap that’s expensive!) time this weekend. I seasoned I️t with salt and thyme then seared it on both sides (about 3-5 minutes) before baking at 400F. I like my meat medium well to well done (I know I know, tenderloin is best rare but ew and this was still tender and delicious!) .

I served I️t alongside my Cinnamon & Ginger Roasted Carrots That I shared the recipe for on Monday (get it on the blog!) plus some broiled ginger bok choy .

Made a massive bowl of my favourite cabbage salad today. It's delicious, but does take a lot of chewing so feels like a nice workout for the jaw. The recipe is pretty simple (serves 3-4):
✅1 small head of white cabbage (shredded)
✅3-4 carrots (grated)
✅500g of cherry tomatoes (halved)
✅1 bunch of spring onions (thinly sliced)
✅1 handful of dill (finely chopped)
✅1 cup of frozen petits pois (soaked in hot water to defrost)

Shred the cabbage as finely as possible and give it a good squeeze and toss with your hands to soften. Add the rest of the ingredients and mix everything together with a good glug of extra virgin olive oil. Up until my late twenties, I was a sugar and exercise addict. My dad was Vice President of Imperial Sugar in Sugar Land, Texas. Sugar was a huge part of my life. Sugar made me happy, and I wanted to spread this happiness out into the world by opening a bakery.

Unfortunately...sugar didn't love me back. I was malnourished, and completely missed the signals my body was sending me, begging me for change. From the outside I looked fit, but my health was quickly deteriorating.

My wake up call came when I landed in the hospital when I was 26. This was startling because people actually thought I was healthy, and I thought I was healthy. As I laid in the hospital with an IV, I kept thinking, “How did I get HERE?! I was just trying to be the best Charlotte I could be.”

I instantly realized that I had to change what I was eating and how I was living. Doctors didn’t have drugs for what ailed me. I was on my own. My vitality had collapsed. I was depressed and life was hard. I kept looking for answers and discovered that I had severe inflammatory responses to many of my staple foods, which included lifestyle habits.

As I peeled back the layers of my concerns, I realized that I never had asthma. I had a dairy allergy. It was both liberating and maddening at the same time. I used my anger as a platform to create positive change in the world.

In April 2008, I graduated from the Maryland Institute for Integrative Health (formerly known as the Tai Sophia Institute) with a Masters of Science in Herbal Medicine, a rigorous, 3-year clinical program designed to build a bridge between the practice of traditional and conventional medicine. I am Board Certified in Holistic Nutrition.

Almond crusted salmon and green beans sauteed in ghee with a few pine nuts for dinner last night. Not very AIP with almond, green beans, ghee, and pine nut reintros, but it was paleo & yummy. I've been eating so much fish lately, but it's what my body is craving! Did you know fish is one of the most nutrient dense protein options? 🐟 Ender wanted a piece so bad. 🐶

I️ made @empoweredsustenance’s Creamy Leek Spaghetti Squash Casserole but modified I️t by subbing out the shallots, leek, and dill for peas, mushrooms, and cilantro. I️ included shredded chicken and this dish was so delicious and filling!

My homegir @amkotten and I️ made this for girls night over the weekend. Highly recommend although next time I’d use more cauliflower and less parsnip so the creamy sauce isn’t so sweet .
