But really, I'm hanging in there. Day 2 of my (potentially) 5 day fast was definitely more challenging than the first. This afternoon my drowsiness was solid, but my go-to Tri-Salts picked me up. I went to see my lymphatic therapist after work, and she could sense that my body is going through a major detox and my liver is weak (what's new 🙄; 👉🏽 upping my liver support even more now!) ... but that my belly was the least swollen that it's ever been! I may not be getting taller, but maybe leaner 🙌🏽✨#bonebrothfast #shewillbewell

In fact I'm even going to speak to Toby's preschool for next year about me purchasing and donating a copy to them, because I think it would be a great resource for non-gaps kids to read to understand why a child may bring food to eat that is different to theirs.

Since it's back to summer weather, I'm poppin out the chicken salad using @primalkitchenfoods avocado oil mayo served with @simplemills GRAIN-FREE crackers. 🤗 
So, I definitely always passed these crackers in the store assuming they were like other processed gluten-free packaged foods, but to my surprise they have an A+ ingredient profile AND taste better than the crackers I used to enjoy any way. Tip of the day: I recommend using the @wholefoods app to find coupons or sales for these guys, because they're fantastic but pricey (of course).

If baking sounds like the perfect Saturday night to you, we've got you covered. Here's how to make these GF Jam Thumbprint Cookies.⠀

Ingredients:⠀
⠀
1 ¾ cup GF flour⠀
¾ cup softened butter (1 ½ sticks)⠀
⅔ cup coconut sugar ⠀
1 egg⠀
1 tsp vanilla extract⠀
½ tsp baking powder⠀
½ tsp salt⠀
⅓ cup blueberry, blackberry, strawberry, or raspberry fruit spread ⠀
⠀
Directions: ⠀
⠀
1. Preheat oven to 350 degrees.⠀
2. Line baking sheet with parchment paper.⠀
3. In a bowl, mix the flour, baking powder, and salt together.
4. In another large bowl, mix the butter and sugar together. 5. Then add in the egg and vanilla, and mix well.⠀
6. Slowly add in the dry ingredients to the large bowl of wet ingredients, and mix well.⠀
7. Make 1-inch balls with the cookie dough.⠀
8. Press a thumbprint into the center of each ball.⠀
9. Fill each indentation with about ¾ tsp of jam.⠀
10. Bake cookies for about 15 minutes.⠀
11. Makes about 20-24 cookies. ⠀

In another large bowl, mix the butter and sugar together. 5. Then add in the egg and vanilla, and mix well.⠀ 6. Slowly add in the dry ingredients to the large bowl of wet ingredients, and mix well.⠀ 7. Make 1-inch balls with the cookie dough.⠀ 8. Press a thumbprint into the center of each ball.⠀ 9. I'm not a huge fan of salads, but every once in a while I get an urge for a nice, refreshing salad. This one is from First Watch.

a lot of the ingredients in this salad are things I once would've ran to the bathroom after eating, been bloated, or had a headache from. 🚽so happy I can eat this now and feel totally fine! 🙌🏽.

Since food allergies run in my family, the first thing I had done when I started feeling poorly was an allergy test. Turns out I was/am allergic to many fruits (amongst many other things), so my allergist suggested I cut out all fruits, gluten and dairy for a couple months to see if I felt any better. A lot of these supposed "allergies" were from a leaky gut because now that I'm healing my gut, i can eat some of those fruits without any problem. .
 Well, I cut out all fruit for 3 months (this meant avocados too (gasp! 😱 wtf?!)) along with gluten and dairy and I was still feeling like shit. That's when I went through the full AIP elimination diet (plus no fruit still...yes, pretty brutal). during that time I had colonoscopies, MRIs, endoscopies, etc., and was diagnosed with UC and celiacs. I continued the elimination phase for 3-4 months and then started reintroducing things after I combined the diet with remicade. .
This salad has ingredients that just last year I would've only dreamed about eating again like avocados (took 3 different times to successfully reintroduce), red pepper flakes (only took one reintro), and walnuts (2 reintros, same with almonds). .
Haven't completely healed my gut, but man am I happy to be eating different foods again! 👍🏼😊🙏🏽

I browned some ground beef in a large skillet, seasoned with salt, Rosemary, and oregano. I then set the beef aside and sautéed some chopped radishes and pre-cooked beets in the same pan
.
Once those were cooked (I like them soft and slightly browned), I mixed the beef back in and served this mixture over a bed of arugula. Since I can't have any spices (FODMAPs) the arugula adds a nice kick 😉

▫️1/4 to 1/2 cup filtered water ▫️1 heaping teaspoon of matcha powder ▫️coconut sugar to taste (save a little to sprinkle on top!) ▫️1 scoop collagen peptides ▫️1 teaspoon vanilla ▫️1T @nutiva coconut manna 
Heat up in a small saucepan then blend to make frothy (or you can just blend and then microwave...whatever your laziness level is. Mine was high this morning. Microwave won) and sprinkle some coconut sugar on top.

Dinner last night...and breakfast this morning! I made my spaghetti and meatballs in the #instantpot off my blog (Link in bio) - quick, delicious, and nutritious! What isn't obvious is the fact that there's a ton of organ meat hidden in there. My regular recipe is just uses beef, but I made this half beef and half organ mixture ("Paleo grind" from @whiteoakpastures ) including heart, liver, spleen, and kidneys. Yummy 🙄😂 ...but really 😋. I also used @kcnaturalbbq pasta sauce instead of the regular tomato sauce. I also did a slight modification and instead of using cassava/almond flour, I used a mixture of nutritional yeast and coconut and left out the cayenne. Eating pretty close to strict AIP for the next few days leading up to my first real estate exam 🤓. .

Organic food that doesn't need a label is what we found at an Amish market somewhere in the middle of Pennsylvania today. A basket of sweet potatoes for $2, three cucumbers for $1, pure apple butter with no additives (not even sugar) for less than $3, and a dozen farm fresh eggs for $1.65. If only Whole Foods had these prices...or even better, if only all food was grown and sold this pure.🥕🥒

I have a sinus infection and am so tired that I am trying to think of everything possible I can do to feel better while we wrap up our last two days in the car. Times like these are reminders that because I have an autoimmune disease, I can't go at the same speed as someone who is "normal" and that I need to do a better job with self-care. Over the past few years I've also learned that life with chronic health issues should be approached like a marathon, not a sprint...you have to pace yourself and have a plan of action so you can enjoy the process.

Shrimp & Sweet Potato Coconut Curry
Time: 30 minutes
Serves: 4-5

Ingredients:
1 T olive oil
1 large white onion- diced
1 inch piece of fresh ginger - grated
1 T garlic granules
1 T dried ginger powder
1 T dried cilantro leaves
1/2 T turmeric powder
1 1/2 t sea salt
1 large or 2 medium sweet potatoes - cut into 2 inch chunks
1 cup frozen spinach
3 cups water (or fish stock)
1 1/2 pounds cleaned shrimp
1 cup coconut milk
handful of fresh cilantro leaves
juice of 1 lime
1/2 t black pepper (omit for strict AIP).

My hubby and I indulged our inner children today before heading out of Toronto with a visit to the African Lion Safari. Part of me was sad to see these beautiful creatures on display for human entertainment. But another part of me was so grateful to see them up close and really be able to appreciate their beauty and strength. I love the purity and authenticity of animals so much. Unlike humans, animals don't know how to do anything but just be themselves. It's such a good reminder about how to live our own lives and being in their presence today made my ❤️smile.

Part of me was sad to see these beautiful creatures on display for human entertainment.
