Corn bread made with polenta, whole wheat flour, baking soda+powder, salt, egg, vanilla extract, soymilk, oil, honey and greek yoghurt. Pan de maíz para el desayuno 🌽😍 INGREDIENTES *1 taza de harina de maíz * 1/3 de taza de leche de almendras * 1 taza de maíz desgranado, puede ser en lata o natural, en caso de ser natural debemos cocinarlo por unos minutos para que esté completamente tierno
* 6 claras o 3 huevos completos * 3 cucharadas de aceite de coco * 1/2 cucharada de polvo para hornear
* Pizca de sal * Stevia al gusto 
PROCEDIMIENTO

1. Precalentamos el horno a 200 grados

2. Licuamos todos los ingredientes, pero reservamos un poco de los granos del maíz que hemos cocinado ya que personalmente me gusta sentirlos en el pan, para darle textura.

3. Engrasamos un molde para horno con aceite de coco, ponemos la mezcla,  agregamos el maíz que teníamos reservado y con la ayuda de una cuchara revolvemos para distribuirlo.

4. Llevamos al horno de 35 a 40 minutos o hasta que esté dorado y al meter el cuchillo salga limpio.

🌟🌟🌟||Vegan Jalapeño Cornbread Muffins||🌽🌽🌽
•1cup organic cornmeal
•1½cup organic unbleached all-purpose flour
•1teaspoon baking powder
•½teaspoon baking soda
•⅛teaspoon organic salt
•⅓cup organic light brown sugar
•¾cup homemade almond milk
•2tablespoons virgin coconut oil
•2tablespoons raw agave nectar
•2teaspoons fresh squeezed organic lemon juice
•2 jalapeños finely chopped
1.Preheat oven to 200°C. Line a 12-count muffin pan with liners.
2.Whisk together cornmeal, flour, baking powder, baking soda, salt and jalapeño in a large bowl. Set aside.
3.In a medium bowl, whisk oil, brown sugar, and honey together until completely smooth & thick. Then, whisk in milk. Pour the wet ingredients into the dry ingredients & whisk until combined.
4.Spoon batter into muffin liners, filling all the way to the top. Bake for 5mins 200°C then, keeping the muffins in the oven, reduce heat to 150°C & continue baking for another 16-17 mins. Use a toothpick to test.
5.Remove muffins from the oven, allow to cool in the pan for 5-10 mins before enjoying.😊 Serve muffins with honey or jam😋

Since it is grain free, it obviously doesn't have corn in it, but still satisfied our craving! We made this a couple of weeks ago, and loved it. Amazing recipe I found on bakermama.com for healthier pumpkin corn bread! No oil, no butter (I'm talking IN the bread not ON 😉). 🍞Whole Wheat Pumpkin Cornbread Recipe: 🍞
1 cup corn meal 
3/4 cup whole wheat flour 
3 tbs sugar 
4 teaspoons baking powder 
1/2 tsp salt 
1 tsp pumpkin pie spice 
1 cup almond milk 
1 egg 
1 cup pumpkin purée 
Mix dry ingredients. Then mix in wet ingredients. Pour into greased 8x8 baking dish and bake for 20 min at 425 degrees. 
To make the honey butter put 1/2 cup softened butter into a stand mixer and beat on high. Add in 1/4 cup honey and continue beating until smooth & fluffy.

Felt like eating a #pamonha so I decided to make this healthy corn bread. 1 can of sweet corn, 3/4c of cornmeal, 1/4c of coconut flour, 1c of unsweetened almond milk (I used vanilla), 2 eggs, 1T of baking powder, 1/4 cup of truvia. Blend everything together and bake at 350F for about 35-38 min. To my Brazilian friends out there it tastes like a healthy pamonha.
