The most simple dinner of @eatbanza + Trader Joe’s new vegan kale and cashew pesto (which freakin rocks if you’re wondering) 😋 After the looooongest past week and this weekend I was so happy to finally finish work and all my meal prep today! I’m so sad I had to miss all the pretty snow in Atlanta and be at work, but if we’re being honest, I would have only last 30 minutes outside because I hate the cold 🤷🏻‍♀️ So ready to curl up with my fuzzy blanket and candles to binge watch bravo 🙃 What a great Sunday night. The most simple dinner of @eatbanza + Trader Joe’s new vegan kale and cashew pesto (which freakin rocks if you’re wondering) 😋 After the looooongest past week and this weekend I was so happy to finally finish work and all my meal prep today! Tagliatelle w/Saffron Sauce & Roasted Broccoli, anyone🤤😍? I don’t wanna tease you but this was REALLY REALLY good 🤤! The saffron sauce is just bombastic, trust me everyone will fall in love with it🙈! Here you have the recipe ❤️😘

INGREDIENTS:
•100g chickpeas
•2 garlic cloves
•1 onion
•salt & pepper
•½ tbsp coconut oil
•3dl oat or soy cream
•2 pinches of saffron
•240g broccoli
•1 tsp coconut oil
•250g tagliatelle (egg-free)
METHOD:
1) For the tagliatelle, fill a large pot with water and bring to a boil. Add some salt and cook the taglietelle for about 8 min.
2) For the Sauce, coat a saucepan with coconut oil over medium heat. Add the chopped onions and cloves and cook for 5 min.
3) Add the chickpeas, season with salt and pepper and cook for another 10 min.
4) Add oat cream and saffron, whisk until the saffron melts completely.
5)Process the sauce in a high speed blender until creamy and lumps free.
6) For the broccoli, coat a saucepan with coconut oil, season with salt pepper and cook over medium heat for 20 minutes turning them every 5 minutes (don’t over cook them or they wont be crunchy).
7) Pour the saffron sauce over the pasta and serve with the roasted broccoli and ENJOY ❤️😘

Dzień dobry! Jak wam się wstawało w ten cudowny #PONIEDZIAŁEK 🙈? mamy nowy tydzień moi drodzy, z każdym dniem do świąt coraz bliżej! ❤️❤️❤️ a ja mam dla was #PRZEPIS NA WEGAŃSKĄ ZUPĘ KREM 🍲. Tak, wiem, że na zdjęciu są kanapki z szynką 😅, ale danie główne jest całkowicie #veganfriendly a do tego superpyszne. Ja zjadłam cały garnek w dwa dni 🙈. Potrzeba:
✔️dwie garści suszonych warzyw lub świeżą/mrożoną włoszczyznę
✔️1/2 łyżki soli himalajskiej
✔️ok 7 sporych marchewek
⏩Marchew obieramy, kroimy w plasterki, zalewamy wodą ok 1-2cm ponad jej poziom, dodajemy warzywa i gotujemy pod przykryciem ok. 15 min.
✔️150g czerwonej soczewicy
⏩Płuczemy na sitku i zalewamy wodą aż marchewka się ugotuje, po tym czasie dodajemy do garnka i gotujemy kolejne 15 minut:
✔️3 cebule
✔️2 ząbki czosnku
✔️łyżeczka masła (weganie zamieniają na dowolną oliwę!) ⏩Cebulę kroimy w półksiężyce, czosnek siekamy i szklimy na złoto na maśle. Gdy soczewica się ugotuje, dodajemy do zupy. ⏩Gotujemy jeszcze wszystko razem ok. 5 minut i blendujemy na gładki krem. Możemy zostawić w takiej wersji lub przyprawić łyżeczką wędzonej papryki, dwiema łyżeczkami suszonych pomidorów z czosnkiem i sokiem z połowy cytryny. PYYYYCHA! 😍😍😍

Some yummyness happened tonight courtesy of @yaisthai . Tried one of their curry jars in the crockpot and it worked so well! We used boneless/skinless chicken thighs and tons of veggies, added the #yaisthaicurry and about a cup of chicken broth just to add a bit more liquid because we added so much to the pot. About 6 hours on low and it was perfection. Just as a tip (that you all probably already know), make sure you brown your protein before placing in the crockpot - it helps seal in the flavor. I love Sunday Suppers.  Tonight we had coq au vin, mushroom risotto and roasted asparagus.  The risotto definitely makes it feel like comfort food, but sometimes we get to indulge, right?! Tomorrow, we’ll be right back on plan and having such a decadent meal won’t be a big deal at all!! .

I've been in #buddhabowl mode lately and that's what was on the menu again tonight! I love them because are simple, delicious, and an amazing way to pack in several servings of veggies at a time. 
The basic formula to make your own Buddha Bowl is: - Brown rice - A handful of greens and sprouts - Colourful veggies like grated carrots, shredded purple cabbage, chopped peppers and steamed broccoli - Sunflower seeds or pumpkin seeds - Protein like chicken, tempeh, chickpeas or shrimp - A generous drizzle of a savoury homemade sauce!

Dinner parts 1️⃣ and 2️⃣. I really wanted a Subway salad but didn’t think it would fill me up enough today, so I started by making a calzone using @wwg4life 2 ingredient dough and sharing it with my husband. I used 1/2 cup each Gold Medal self-rising flour (5sp) and Fage 0% Greek yogurt and this time I tried using my food processor to mix the dough and it was much easier! It was so sticky the first time I made it and this time it was much easier to work with. I used 5 slices of salami (3sp) and 1 slice of Tillamook Smoked Provolone (2sp) and baked at 450 for about 15 minutes. My portion was 5sp. Then I had a Double Chicken chopped salad (0sp!!) and added 2sp of feta plus red wine vinegar at home. The salad was enormous and I can’t finish it. I think the never ending pit in my stomach today is finally full!
