Serves: 4
INGREDIENTS
1 tablespoon olive oil
1 tablespoon butter
1 pound yukon gold potatoes, sliced about ½ inch in thickness
3 garlic cloves, minced
1 teaspoon thyme, chopped
1 teaspoon rosemary, chopped
1 teaspoon oregano, chopped
2 lean New York Steak strip steaks
salt and pepper
Garlic Butter Compound:
¼ cup softened butter
3 garlic cloves, minced
1 teaspoon thyme, chopped
1 teaspoon rosemary, chopped
1 teaspoon oregano, chopped
INSTRUCTIONS

In a large cast iron skillet over medium high heat, add olive oil and butter, potatoes, garlic, thyme, rosemary and oregano. Cook for about 3 minutes, stir and cook and additional 3 minutes or until fork tender. Remove and set on a plate.
Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium high. Cook the steaks to desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
Right before the steaks are done, make the garlic butter compound. Quiero comenzar a compartirles el estilo de vida que estoy adoptando, sin la intención de exponerlo como "la verdad absoluta", "soy superior a ti", "esto es lo que TIENES que hacer". Quiero compartirlo por que quiero generar un contenido distinto en mis redes, documentar mi progreso, celebrar mis logros y mis dificultades en el proceso, e inspirar a quien se deje y a quien tenga la inquietud de comenzar a hacer lo mismo. Así que... Yo no puedo cenar como mendiga; tengo hambre tooooodo el dia. Y hoy, particularmente, por ser viernes de Netflix en casa, tengo mucha ansiedad por comer algo tasty y crujiente. Entonces hice esto: 
1. Hojas de lechuga con atún. El aún está sazonado con limón, un poquito de mostaza y mayonesa, y hierbas finas.

2. Rodajas de jitomate con un poco de sal y gotitas de limón.

3. Apio con un dip de aguacate, yoghurt natural y trocitos de espinaca.

4. Jícama con arándanos por si se me antoja algo dulce. 
5. Agua de papaya con una hoja de espinaca.

Después de comerlo: 
Pa' empezar, no dejé ni tantito 😂. El dip de aguacate con yoghurt y espinaca ya es mi favorito de hace tiempo, pero para ser la primera vez que pruebo el atún como lo preparé, es mi nuevo favorito. En cuanto al agua, la papaya no estaba tan dulce como pensaba... Si la próxima vez sucede lo mismo la endulzaré con piloncillo para ir eliminando el azúcar blanca de mi alimentación. 
Buena opción para el antojambre. La repetiré 😈

So simple and fast (and can be made with any sauce/protein/grain/green/cheese for endless variety) and soooo satisfying 👌

[10.20.17] Jerky made a healthy dinner for me tonight! Yum! Do you ever have a dinner you enjoy so much that you're already eagerly anticipating tomorrow's leftover-lunch even as you're eating the dinner itself? That happened to me tonight with this satisfying, healthy chickpea curry (also featuring tomatoes and cauliflower rice). My secret: I toss the chickpeas with a bit of olive oil and then toast them in a pan before adding in the rest of the curry ingredients. It gives them such a nice texture and a bit of a toasty taste.

I topped the curry with a hearty dose of za'atar, and served it with some nice warm whole-grain pita. Yum!

It's Friday already! Where has time flown? When we are busy, the passage of time just eludes us. But no matter how busy life gets, it's crucial to allow ourselves time for self-care. What was a simple act of self-care that you did over the past week?Mine was to sit quietly without distraction to enjoy my meal. No cell phone, no TV, just me and my food. Also for self-care this past week, I made a pot of chicken broth with some sweet root veggies--carrots, parsnip, two types of sweet potatoes, onion and ginger. It's so nourishing for both body and soul! Since chicken is an avoid for Types B and AB, use turkey instead. We flew in late last night.  But guess what? Yesterday, after our coffee review, I could not move!  I was in a position (actually, my position was this; I could not move), the pain was so bad that I could have called 000 to get an ambulance. 🚑

But there was no need to, I’m very intuitive of my body and I listen to it.  And I know what works and what doesn’t.  Coffee was one of those things that I shouldn’t be drinking (for the moment anyway). I wasn’t born with this knowledge about health & well-being, over 37 years, I have studied and I’m forever learning, growing & evolving. 💫

I was born with intuition though. So, these days, I work with my Mind & my Intuition, together to heal my body.  I drank orange juice & within 15 minutes I felt better. 😁

Yet, this morning, I was in the same critical position. I woke up with the same pain; right side, under the rib, liver/gallbladder area. 😭

I called 13SICK for the very first time! Within a few hours, a house visiting doctor arrived and he checked me all over! 👨🏻‍⚕️ He confirmed what I’ve been talking about all week. THE LIVER!  Medically; our liver creates bile which goes to our gallbladder. I may have a build up of bile (to which turns into a stone)... I could possibly be giving birth to a bile filled stone! 🙈 I’ll be getting an ultrasound and blood work done soon to double check. 👩🏻‍🔬 Whilst waiting for the results, I’m continuing my DIY RETREAT; meditation, juicing, yoga, self care, walking, vitamin D intake (sun), wholesome foods and water. 😁

It’s great to be back at home too... Charli is the best Nurse! 🐈

🍴Cena de viernes🍴...Tartas trenza, una de ricota y espinaca y la otra de humita. Ya subí como hacer el relleno de estas tartas, pero voy a explicar como hacer el trenzado que tanto me preguntan😉. Acá va👉 Cada tarta se hace con una tapa. Poner el relleno en  forma rectangular en el centro , hacer cortes perpendicular de 2 cm.aprox. en la tapa e ir trenzando. Yo después las pinto con huevo y agrego semillas😊. Lasagna-Stuffed Spaghetti Squash for dinner tonight! The recipe is from @thekitchn and it's super filling and super tasty. I'm not the biggest fan of spaghetti squash but I liked it here. Used the #instantpot to cook the squash in just 5 minutes (after it came to pressure)! I didn't figure he calories but I made it healthier by using 93% ground beef, part skim ricotta and Trader Joe's Lite Mozzarella.

Had a serious craving for some comfort food tonight & this totally hit the spot!👌🏻The Monson Family Chicken Enchilada Casserole!🌮 This is definitely one of "those" recipes. You know the ones I'm talking about... Where they've been in your family for generation after generation & the recipe's all faded & practically falling apart.. And no matter how hard you try no one can ever seem to make it quite like grandma can (or in this case mom😉). One of THOSE recipes! Well thankfully my mother (being the stellar woman that she is) decided it was time for me to learn the ways of this delicious masterpiece tonight!🙌🏻 And I'm tellin' ya, it's like being transported back to my childhood!💃🏼 Ta-co 'bout a great end to a Friday night!

Chicken Enchilada Casserole
12-13 corn tortillas
2 15oz cans black beans
2 fresh corn cobs, (cut corn off)
4 chicken breasts, cooked & shredded
Your favorite Enchilada sauce (ours is homemade)
Cheddar cheese
Cilantro, optional
Avocado, a must!💚

Directions
1. Preheat oven to 375 & prepare a 9x13 pan.
2. Pour a thin layer of enchilada sauce on the bottom. (This helps to keep the casserole moist 🙊)
3. Top with a layer of tortillas. (About 4-5)  Sprinkle with half of the black beans, corn & chicken. Then sprinkle with some green onion & cheese. 
5. Add another layer of tortillas and repeat for a second layer with sauce, black beans, corn, onion & cheese. (The layers should be pretty thick)
6. Lastly, add one more layer of tortillas, enchilada sauce & cheese.
7. Bake uncovered for 35-40 minutes. (Watch it to make sure the cheese doesn't burn)
8. Serve with avocado, cilantro, sour cream or extra cheese!
