Can use a pre cooked rotisserie chicken to save time. With fresh Ontario peaches, crunchy cashews and the most yummy orange and sour cream based dressing this was a winner! This hot weather calls for #saladfordinner ! Feast your eyes on my #VeganWedgeSalad !!!! Hallelujah, I have been craving a good wedge all summer, and finally created the perfect one and I'm sooo exited to share with you!
I N G R E D I E N T S :
1 pkg of tempeh bacon (I love #LightLife ), chopped
2 tbsp olive oil
1/2 cup slivered almonds, toasted
1 head of iceberg lettuce
4 large tomatoes or pint of cherry tomatoes, diced
2 scallions, thinly sliced
1 cup of bread and butter pickles, quartered
1/4 cup fresh dill, finely chopped
vegan ranch dressing, homemade or store-bought
D I R E C T I O N S :
In a large skillet, heat the olive oil over medium heat. Add
the chopped #tempeh and sauté until brown and crisp. Drain
on paper towels and let cool.
Remove the core from the lettuce head and slice into quarters.
Right before serving, arrange a wedge of lettuce on four salad
plates. Spoon the dressing over the wedge of lettuce. Heat the tomatoes, scallions, pickles, and toasted almonds and drizzle with a bit more dressing. Sprinkle with fresh dill and a few
cranks to fresh black pepper.
Go to your kitchen and make this now!!! ***Summer Squash Caprese Noodle Salad*** Taken from the book #practicalpaleo ▪️4-6 medium zucchini (sliced with a spiral slicer) ▪️1 cup cherry tomatoes, quartered
▪️1/4 cut fresh basil (this MAKES the salad!) ▪️1/4 cup olive oil
▪️1 clove garlic
▪️sea salt and black pepper to taste
Mix and enjoy! Perfect side to dinner on a summer evening. 🙌🏻
