Zucchini noodle lasagna 😍 This recipe is SO good and SO easy!.

Pre heat oven to oven to 350, then dice up about a half of a sweet onion. SautΓ© onions in a little olive or avocado oil over medium heat for about 5 mins.  Mix zucchini noodles, onions, and whatever type of pasta sauce you like together (I like to use organic and no added sugar) then place in casserole dish. Cover with your favorite cheese. I used fresh shredded pepper jack and mozzarella. Bake for 35 mins. Feel free to add any type of meat or veggies. My favorite! Today I'm feeling really optimistic about the future of our world, humanity and all our fellow earthlings. I'm loving the fact that I've been out shopping this week and encountering so many open minded individuals floating around the plant based sections in grocery stores. I spoke to a 60 year old woman in Trader Joe's about her current switch to almond milk over regular milk. I recommended plant based meat alternatives to an older man who was on a journey to improve himself and his current lifestyle. Then, this morning I came across a family who were inspired by online campaigns and were buying Beyond Meat for a family BBQ... How wonderful and inspiring this all was to hear and experience. Vegan is the future. I'd like to take the time to express my thanks to all the vegan Youtubers, campaigners, lobbyists, shelter workers, nutritionists..anyone who spreads this message. We are making a difference in this world, keep your spirits up and keep spreading this message!! Also, thanks @benandjerrys for these alternatives...the availability of these products in mainstream markets is encouraging changes in many consumers choices. Thank you πŸ™πŸ»βœ¨

You don’t have to add in ALL or really ANY of the extra upgrades!  DO YOU! πŸ’…πŸ»They definitely add extra vitamins and micronutrients (and sometimes flavor!), so for me, I love to get them all in in a daily smoothie, but YOU don’t have to. Today on this #throwbackthursday i was asked to share my first time ever before Photo and my most recent photo.  I thought about it and I was like, this would be perfect because these photos are almost exactly 2 years apart.  2 years ago at the end of June I made the commitment to begin to live a healthier life.  It hasn't always been easy, honeslty, I failed a lot with my nutrition.  Like A LOT!! When I first took these before photos (my first ones ever) I was completely embarrassed.  I hated looking at them. I hid them on my computer so I couldn't find them. 
Now, two years later, I actually love to look at them. I love to see the huge progress I have made.  It means that what I have been doing these past 2 years is working. This is why I never gave up on myself after I accidentally gave myself a concussion.  I knew I had something good to go back to. It was so hard not to workout. I can honestly say that since I completed the 3 day refresh and had to take a week off from working out, I've actually kept my weight off! I didn't gain any weight.  I also was able to wear a pair of jeans yesterday that I have been trying and trying to wear the past couple weeks and they were actually a little lose on me.  Now why would I want to give up on such a good thing? I don't and I won't! It's a part of me now! For me this is only the beginning of a new journey. Once I'm 100% healed from this concussion it's game time!

Since I posted what I feel like is a meal fail today, I figured I should redeem myself & post a winner! I've been meaning to share this for awhile, but I never remember to stop & snap a pic of this chicken! It sounds so weird, but it's really good!!! I salt & pepper my chicken breasts (I've been getting thin ones lately), then in a bowl mix up 1c plain Greek yogurt & 1/2c Parmesan cheese and 1tsp garlic powder. It's super simple and quick to make (if you have a blender), freezes well and I love to pack it into Mr B's lunchboxes as a bread alternative. (And it's to die for with cream-cheese... sshhh don't tell! πŸ˜†)

RECIPE πŸ‘©πŸ»β€πŸ³: 1cup flour (I like 1/2 almond, 1/2 wholegrain spelt), 2cups fresh cauliflower, 1/3cup olive oil, 1tsp salt, 3 eggs, 1/2tsp baking powder. (I process everything in my kitchen processor until kinda smooth, pour the dough evenly on a baking sheet and bake it for ~20mins at 350F/180C. (Baking time obviously depends on the thickness- keep checking πŸ˜‰).
