I used to skip breakfast, but then I always found that as the day progressed I constantly wanted to eat and was playing 'catch up'. Since I swapped to refueling my body correctly at breakfast time, I find that I am eating LESS (yes LESS!!!) throughout the day.

A combination of:
⭐️ healthy fats
⭐️ protein
⭐️ fibrous carbohydrates 
will always keep me satisfied 😋

Southern Spiced French Toast Recipe!! 💛💜.5❤️.5💙🖤 Makes 4 Servings! 
Mix together 4 eggs🥚, 1/4 cup almond milk🥛, 1 tbsp maple syrup, and 1 tsp pumpkin pie spice 🎃in a shallow pan. .

Soak 4 slices of low-sodium sprouted whole-grain bread (I use @foodforlifebaking Ezekiel bread🍞) in your eggs mixture for 10 seconds on each side. .

Heat 2 tsp of coconut oil in a medium skillet then add the bread and cook for 2-3 minutes on each side (until golden brown). .

I ate mine with half of a large banana🍌, 1 tsp of maple syrup, and 2 tbsp of pecans. NOT PICTURED: I cooked the remaining eggs mixture 🍳and divided up into 4 so I could enjoy some eggs with my French toast, too! 😋

Anti-Inflammatory Sweet Potato & Kale Curry🌱

I batch cooked this recipe to have it for a few meals this week, adding the protein with each meal to switch it up (garden veggie tempeh pictured here). It was delicious! Recipe below:
.
1 tbsp coconut oil
1 yellow onion, sliced 
2 cloves garlic, minced 
2-3 carrots, chopped 
1 sweet potato, cubed 
1 cup water 
1 can coconut milk 
2 tbsp curry powder 
1 tbsp cumin 
1 tbsp turmeric 
1 bunch of dino kale, chopped 
salt & pepper . 
Over medium heat, add olive oil to deep pan with lid (I used my Dutch oven). Sauté onion for 3-4 minutes. Add garlic and stirring occasionally for 2-3 minutes. Add carrots and sweet potato and sauté for 5 minutes, continuing to stir occasionally. Add water, coconut milk, and spices. Bring to a boil and then down to a simmer for 5 more minutes with lid on. Add kale, salt and pepper and stir. Cook until kale is slightly wilted. Remove from heat and serve with your favorite protein and grain! .
Note: You can totally add chicken, beef or chickpeas to the recipe to cook in the curry juices! I decided to omit the protein and pair while serving to add variety to the meal. .

This recipe uses the natural sugars in dates and the result is a delicious paste that I use to sweeten my smoothies, baked goods or just spread it on my toast. Reminiscing on meals of cheese & wine 🍷 I try to stick to a dairy-free diet, but I'm human and sometimes I can't help but order a huge cheese board 😂 if you struggle with IBS, my biggest success thus far has been cutting out dairy from my diet. I know it seems impossible at first, as we grow up with dairy incorporated into everything, and with the large use of dairy proteins in the fitness industry.. but I actually don't miss it much at all and I feel worlds better. Replace cheese dips/cheese on sandwiches with avocado, there are protein alternatives, and @nocow is a lifesaver 😩 I encourage everyone to limit dairy, or cut it out for a little, and see how you feel 😌

I liked yesterday's lunch so much I had it again today!

Bonus- I finally found a homemade dressing recipe that U really like! 
Recipe: 1 serving
~1.5 tsp red wine vinegar
~1.5 Tbs extra virgin olive oil
~1.5 tsp Dijon mustard
~1/4 tsp raw honey
~1/8 tsp thyme
Pinch of sea salt 
Pinch of ground black pepper 
Whisk together and enjoy!

My meat free meal plan for the coming week. It starts tomorrow. Got a busy week ahead.
Tomorrow, I'll  go food shopping straight from work so will just have a quick meal or cereal whilst I'm putting the shopping away. On Friday it's my younger son's birthday and he and Robert are going out over night so my elder son has requested that we have cheese and biscuits for dinner whilst the other two are out!!! On Saturday we are eating out at an all you can eat buffet so we probably won't want any dinner that night! On Tuesday's I have to stay late at work and also go to yoga so it's a quick meal that night too!
