Work has Tiff loving frittatas.😋 So tonight she made herself one! Turned out to be WAY more veggies than egg but hey the more veggies the better right?
GF Veggie Frittata❣️:
~ sliced sweet potatoes (as the base - I put these in the oven and let bake a little bit while slicing/preparing the other ingredients to soften the 🍠)
~ sliced zucchini
~ sliced mushrooms
~ sautéed (frozen) spinach & diced onions
~ egg mixture = 5 eggs, 1 c unsweetened almond milk, & 1/4 c feta cheese
-> layer by layer & pour the egg mixture on top; bake @ 350° for about 20-30 minutes; top with some avocado & dig in
Very chilled Sunday but I’m not complaining, watched “Cuando conocí a El Chapo” documentary with my dad, cleaned my room, some school work and I’m resting a little bit after this delicious meal I had before I start doing some experiments in the kitchen🤗

CHEESECAKE DE FRUTOS ROJOS PALEO-VEGANO! Es genial para esos días de creatividad en la cocina 👩🏻🍳💕 .
INGREDIENTES: 🔘1 taza de almendras
🔘1 cda de esencia de vainilla 🔘2 cdas de coco rallado
🔘1 taza de cashews remojados por 7 horas (overnight)
🔘3/4 de taza de leche de almendra
🔘1 cda de harina de plátano
🔘1/2 taza de mermelada de frutilla-mora de @stevia_kinu
🔘1 cda de aceite de coco
🔘1 taza de frambuesas
1️⃣En un procesador mezcla las almendras, dátiles, 1/2 cda de esencia de vainilla y coco rallado (foto2)
2️⃣Coloca en un molde la mezcla sobre papel enceraso aplastando con los dedos hasta que quede una superficie sólida (foto 3)
3️⃣En la licuadora, mezcla los cashews escurridos, leche de almendra, harina de plátano y aceite de coco
4️⃣Coloca la mezcla en el molde cubriendo toda la superficie (foto 5)
5️⃣Coloca la mermelada sobre la superficie y con un palillo de dientes mezcla ligeramente (para que tome un color degradado) (foto 7)
6️⃣Colo frambuesas para decorar y refrigera por 6 horas
¡Queda súper deli! 💡Esta vez opté por usar una mermelada endulzada con stevia para no cargarle de azucar a este postre y darle todo el sabor de la fruta! (Me gusta que en esta mermelada no se siente el after-taste que deja la stevia muchas veces)

A beautiful morning it is in this beautiful part of the world. Today for breakfast l had this yummy bowl of goodness 💙😋. I made the chocolate oats with 1 cup of oats, 2 cups of almond milk, 1 tsp of cacao powder and left it in a jar overnight in the fridge. You can add any sweetener you like or fruit to make it taste nicer. Then l topped it with coconut 🌴 threads (🤗 welcome back to your home 😉), blueberries, a piece of dark chocolate and some pretty flowers 😍💙🌴. Anyone kept their @coconutbowls wrapping? It’s so pretty l had to keep it 💕🌄. Hope you all have a swirly beautiful Monday 🦋🌴😎.

GRAIN-FREE PANCAKES RECIPE 🥞 Finally figured out the best #lchf , #lectinfree , #grainfree , #Keto , and #Paleo pancakes recipe with @joeltsanders help!!! 😋
These are more like regular pancakes than the recipes I’ve tried before. I serve them with butter (or goat butter as pictured in the photos) and @lakantosweetener #sugarfree , monk-fruit-sweetened Maple Flavored Syrup. This makes my Sunday 😀
Now I can go to my Yoga Burn class and burn those few net carbs 😂
▪️3 large pastured eggs
▪️2 tablespoons coconut oil, melted
▪️2 tablespoons @lakantosweetener Monk Fruit Sweetener, or a natural sweetener of your choice (or 1 tablespoon if you prefer less sweetness)
▪️1/2 teaspoon vanilla extract
▪️2/3 cup full-fat, no-guar-gum coconut milk
▪️1/4 cup of water (or less depending on the consistency of the pancake batter)
▪️1/4 cup coconut flour
▪️1/8 teaspoon baking soda
▪️A pinch of Himalayan pink salt
▪️Grass-fed butter, goat butter, or coconut oil for frying
▪️@lakantosweetener Maple Flavored Syrup to taste
1️⃣ Mix eggs, coconut oil, sweetener, vanilla extract, and coconut milk until well combined.
2️⃣ Add coconut flour, baking soda, and salt. Mix together without over mixing.
3️⃣ Check the batter consistency. If it’s too thick, add water, up to 1/4 cup or until the batter resembles regular pancake batter.
4️⃣ Heat a frying pan on medium heat and add a bit of butter or coconut oil. Pour 1/4 cup of the batter into the pan to make a large pancake.
5️⃣ Cook like traditional pancakes until bubbles appear and the edges look a bit browned.
6️⃣ Flip to the other side and cook about 1 minute or until browned.
Makes about 2 servings. Enjoy!

I've been out of my routine for the past few months because I haven't been at my home, but I'm finally back and getting back into my routine of meal prepping, grocery shopping and planning out my meals makes me feel so good! This week it's slow cooked beef, curried cabbage, roast carrots and greens for lunch's. Is your meal prep game strong? What's for lunch this week?
