These Cheesy Bacon and Kale Potato Skins are loaded with a fresh kale pesto and topped with crumbled bacon and melted cheese.

INGREDIENTS
1.5 slices bacon
5 medium russet potatoes
2 tablespoons oil, divided
1 tablespoon butter
5 ounces kale
3/4 cup almonds or pine nuts
1 handful basil leaves or other herbs (optional)
1 cup cooked chickpeas (optional)
1/4 cup olive oil
1/4 cup shredded Parmesan cheese
2-3 cloves garlic
1/2 teaspoon salt
1 cup any kind of shredded cheese – I used Chihuahua cheese

INSTRUCTIONS
1.BACON: Fry the bacon until crispy. Transfer to a paper towel lined plate. When cool enough to handle, crumble or chop the bacon into small pieces. Set aside.
2.POTATOES: Preheat the oven to 400 degrees. Wash and dry the potatoes. Rub or brush them with 1 tablespoon oil. Place on a large baking sheet and bake for 40 minutes. When they’re cool enough, slice the potatoes in half, scoop out most of the flesh (use for another recipe – yay mashed potatoes!), but leave a little bit attached to the skin to help them hold their shape. Melt the butter and combine with the remaining tablespoon oil. Brush the insides and outsides of the skins with the butter/oil and bake for another 5-10 minutes, skin side up, until nice and crispy.
3.KALE: In a food processor, pulse the kale, nuts, herbs, chickpeas, olive oil, Parmesan, garlic, and salt until smooth.
4.ASSEMBLY: Fill each of the potato skins with the kale mixture. Top with crumbled bacon and cheese. Bake for 5-10 minutes until ooey-gooey melty and delish. Sprinkle with extra bacon or herbs before serving to make it look extrafancy.

Let’s start with one of my go-to quick meals: stir-fried tomato egg noodles! 🍅🥚🍜 When I want something that warms my tummy, delicious and quick to make, this noodle bowl does the trick. Always done in under 10 minutes (or 7 if you push it) 🔥

Stir-fried tomato eggs is the staple dish in pretty much every Chinese family and goes extremely well with a bowl of soup and white rice! I put my own twist to it by converting it into a noodle soup which locks in all the caramelized flavor from the pan!

Tomatoes are high in vitamins A, C, potassium and lycopene! Eggs serve as a good source of complete protein and fat (helps with nutrient absorption) as well as noodles which keep us fuller longer. It’s a great combo of flavors and nutrition if you ask me ✌🏼

Stir-fried tomato egg noodle soup (serves 2 or 1 hungry person - me)
.
You’ll need:
- 1 large tomato, cut into wedges
- 1-2 eggs
- 1/2 stalk green onion, chopped (garnish)
- 2 tsp soy sauce and 1/2 tsp Sugar (you can substitute with 2 tsp vegetarian oyster sauce)
- 1 tbsp oil (I use grapeseed)
- 1-2 cups water (depending on how much soup you want)
- 3/4 cup cooked noodles/spaghetti per person

1. Cook your noodles in advance. Drain them but keep the water around. 
2. In a saucepan over medium high heat, heat oil and fry the tomato wedges for 5-10 seconds (be careful - it splatters!). 3. Add soy sauce and sugar (or oyster sauce). Stir and cover for 30 seconds. 
4. Uncover, crack eggs into the pan. Gently stir/fold the egg and tomatoes until eggs are half cooked (think scrambled eggs). 5. Add the noodles/pasta water and bring it up to a boil. Add your noodles and season with more soy sauce or salt to taste. Serve hot with a garnish of green onions!!! 🔥🍜

This reminder is so true. So much so that I went ahead and turned off all of my notification settings on my cellphone 📱  I honestly think it will help with the anxiety I’ve been experiencing since choosing to go back to school.  I’ve done this in the past but it has been a while. I hate the constant pull of social media when I am trying to balance so many things, especially for daily self care. I can’t wait to see the changes I feel not hearing my phone buzz/beep or seeing little red notifications all over the place. Made this amazingly good vegan mushroom and wild rice cream soup my friend @forthehealthofittami gave me last night in my instant pot.  This soup is so so good I can’t get enough of it. This is how it goes👇🏻

Mushroom and Wild Rice cream soup. 5g of fat per serving
•

Instapot
2 medium onions diced
5 cloves garlic minced
1c carrots sliced
1c celery ( leaves included) chopped
8 oz mushrooms
6c low sodium broth
1c wild rice 
2 bay leaves
2T Italian seasoning
Pinch of red pepper flakes
Salt/pepper to taste
Couple handfuls of kale chopped

Cashew cream
1/2c cashews 1/2c water and blend until smooth

Dry sauté onions, carrots, mushrooms, celery and garlic. Add broth to veggies once they are tender. Add seasoning, wild rice to pot.  Seal pot. Set manual 25 minutes.  Let the pressure out before opening. Put in kale to wilt. Approx 2-3 minutes. Stir in cashew cream

Super easy to make. •Preheat oven to 350° •Put the fish in a glass baking pan, squeeze half a fresh lemon on fish with a small amount of oil on bottom of baking dish
•Bake for 20 minutes
•On stove top put about 1 inch of purified wayer in a pot under a metal steamer. •Put desired amount of brocolli on top of steamer amd cook on med heat until brocolli is tender.
•Top both the fish and broccoli with lemon, grass-fed butter and cayenne pepper

My new favorite condiment is Harassa made by @mina 🌶 It’s a spicy red pepper sauce and has tons of flavor! The mild version is spicy enough! I mixed 1lb of 99% lean ground turkey breast with 1/4 cup of harassa sauce to make 4 turkey burgers. I topped my burger with another tablespoon of the sauce. (1sp) 1 tbsp of the sauce is 0sp. Between 2-4 Tbsp is 1sp. since I used one in the burger and one on top I counted it as 2 Tbsp. 
The roasted veggies are 4sp Because I put some Kalamata olives & olive oil in it as well as some red potato & sweet potato among all of the vegetables. I also put in brussels sprouts, cherry tomatoes, broccoli, zucchini, yellow squash, butternut squash, carrots, onions, & garlic.

(1sp) 1 tbsp of the sauce is 0sp. Between 2-4 Tbsp is 1sp. since I used one in the burger and one on top I counted it as 2 Tbsp. The roasted veggies are 4sp Because I put some Kalamata olives & olive oil in it as well as some red potato & sweet potato among all of the vegetables. I also put in brussels sprouts, cherry tomatoes, broccoli, zucchini, yellow squash, butternut squash, carrots, onions, & garlic.

Changes be a happening... and along with them, REVELATIONS. BIG TIME. .
Here's the deal... you NEVER see me at a party without a drink in my hand. Social anxiety is the main reason for that. Quite honestly, I have a very hard time talking to people. I feel awkward. I feel that constant "outsider" feeling, and I don't understand why that happens or why it has plagued me my whole life, but it is a reality for me. .
Beyond that, I REALLY love WINE. And I really love GIN. I love the way they taste so much that I will hold them in my mouth for a really long time before I swallow them. Like I love them more than chocolate ... THAT kind of love. So that means I drink often. .
When I first accepted this personal challenge of 80 Day Obsession, I planned on having cocktails at least on the weekends. But Autumn's words to us early on in our group made me reconsider that. She said, that unlike 21 Day Fix, with this program there would be no allowances for alcohol. She said if the thought of going 80 days without alcohol gave us THAT MUCH anxiety, perhaps there was a deeper issue that we needed to examine...

At first, I  brushed it off. But I sat on it a few days and reconsidered. What if I challenged myself fully?? What if I didn't allow myself to rely on my CRUTCH?? How could that change my life??? .
This weekend was my first test - well, second when you throw in last Saturday's kid party while on 3-Day Refresh. .
I went to 2 birthday parties this weekend, and not only did I adhere to my eating plan 100%, I DIDN'T DRINK. I took my meal prep, some sparkling water and tea bags with me. .
I pushed myself out of my COMFORT ZONE. I talked to people without the slippery ease of a martini. And I discovered that I really enjoyed conversation without it. I can ACTUALLY REMEMBER the names of the people I met. I never once felt like an outsider. I felt like me. .
I realized that sober me is just as fun as drunk me, but the difference is, I didn't wake up the next day trying to remember the things I'd said the night before, hoping I didn't offend someone with my loose lips. .
Comfort zones may be nice places, but NOTHING ever GROWS there...

When it comes to food prep, some people like pre-made meals all organized into individual containers, while others prefer more bulk items. I like to have one pre-made item like soup, at least one healthy grab-and-go snack and then a few bulk items to choose from according to what I feel like eating that given day. Salmon on a Monday! Along with a whole bunch of veggies. Did some meal prep after the gym and created this plate of perfection 🙌🏻 Meal prep is soo helpful and I highly recommend to everyone. It saves me a ton of time in the mornings when packing up my lunches and breakfasts. Time is of the essence when your alarm goes off at 1:30am 🤣 Have a wonderful evening everyone!
