I used a basic pancake mix and jazzed it up by adding in vanilla powder, cinnamon, a chocolate maca turmeric adaptogen powder that my friend @health.inbloom gifted me😍(she knew I needed something to help me get my chill on after the last couple weeks I’ve had, bless♥️) Topped these bad boys w kiwi, blackstrap molasses, hemp, coco shreds, and bee pollen. SO good. Sunday, you get me. Let’s do this more often✨

GF Veggie Frittata❣️:
~ sliced sweet potatoes (as the base - I put these in the oven and let bake a little bit while slicing/preparing the other ingredients to soften the 🍠)
~ sliced zucchini
~ sliced mushrooms
~ sautéed (frozen) spinach & diced onions
~ egg mixture = 5 eggs, 1 c unsweetened almond milk, & 1/4 c feta cheese
-> layer by layer & pour the egg mixture on top; bake @ 350° for about 20-30 minutes; top with some avocado & dig in

🔘1 cda de esencia de vainilla 🔘2 cdas de coco rallado
🔘1 taza de cashews remojados por 7 horas (overnight)
🔘3/4 de taza de leche de almendra
🔘1 cda de harina de plátano
🔘1/2 taza de mermelada de frutilla-mora de @stevia_kinu
🔘1 cda de aceite de coco
🔘1 taza de frambuesas

1️⃣En un procesador mezcla las almendras, dátiles, 1/2 cda de esencia de vainilla y coco rallado (foto2)
2️⃣Coloca en un molde la mezcla sobre papel enceraso aplastando con los dedos hasta que quede una superficie sólida (foto 3)
3️⃣En la licuadora, mezcla los cashews escurridos, leche de almendra, harina de plátano y aceite de coco
4️⃣Coloca la mezcla en el molde cubriendo toda la superficie (foto 5) 
5️⃣Coloca la mermelada sobre la superficie y con un palillo de dientes mezcla ligeramente (para que tome un color degradado) (foto 7)
6️⃣Colo frambuesas para decorar y refrigera por 6 horas

These little canapé-style tasters were rather special with this wonderful fresh, local, sustainable fish: Sunflower seed rye bread with cream cheese, apple slices and pickled herring topped with strips of pickled onion and finely shredded wild sorrel. They went down well with the audience 😃

I made the chocolate oats with 1 cup of oats, 2 cups of almond milk, 1 tsp of cacao powder and left it in a jar overnight in the fridge. You can add any sweetener you like or fruit to make it taste nicer. Also, continuing my @Huel baking journey...I’ve been experimenting with their oat and raisin cookie recipe. I was a little concerned that using vanilla Huel might make them a little too sweet...however, they are AMAZE, very pleased...and I’ve made loads 😅🙏🏻. Perfect post run snack 🙌🏻😊🍪🍪🍪 🏃‍♀️🏃‍♀️🏃‍♀️

100g rolled #oats
60g raisins (or ‘green raisins’ as Huel suggests...I’m not sure what they are so I used standard ones 🙌🏻)
60g shredded coconut
1 tsp cinnamon 
100g melted coconut oil 
1 tsp vanilla extract 
100g maple syrup 
Optional extras adding as much as you fancy 😊...i went with a handful of each!)
Cacao nibs
Almonds 
Blueberries.

To make...
• Mix together all the dry ingredients, and in a separate bowl combine the wet ingredients
• Pre heat your oven to gas mark 3/4 • Once the wet ingredients are fully combined...pour into the dry mixture, stir to create a ‘dough’.
• Divide the dough into mini balls and place on a greased baking tray (i used coconut butter).
• Bake for 15-18 minutes
Eat! (In moderation 😂...but beware they are very moreish 😀)

INGREDIENTS:
▪️3 large pastured eggs

▪️2 tablespoons @lakantosweetener Monk Fruit Sweetener, or a natural sweetener of your choice (or 1 tablespoon if you prefer less sweetness)
▪️1/2 teaspoon vanilla extract
▪️2/3 cup full-fat, no-guar-gum coconut milk
▪️1/4 cup of water (or less depending on the consistency of the pancake batter)
▪️1/4 cup coconut flour
▪️1/8 teaspoon baking soda
▪️A pinch of Himalayan pink salt
▪️Grass-fed butter, goat butter, or coconut oil for frying
▪️@lakantosweetener Maple Flavored Syrup to taste

DIRECTIONS:
1️⃣ Mix eggs, coconut oil, sweetener, vanilla extract, and coconut milk until well combined.
2️⃣ Add coconut flour, baking soda, and salt. Mix together without over mixing.
3️⃣ Check the batter consistency. If it’s too thick, add water, up to 1/4 cup or until the batter resembles regular pancake batter.
4️⃣ Heat a frying pan on medium heat and add a bit of butter or coconut oil. Pour 1/4 cup of the batter into the pan to make a large pancake.
5️⃣ Cook like traditional pancakes until bubbles appear and the edges look a bit browned.
6️⃣ Flip to the other side and cook about 1 minute or until browned.

🌞Buenas buenas🌞 Día veintinueve del plan🙆‍♀️ hoy muffins de huevo sin harina acompañado de una ensalada de ricotta y aguacate. Siempre sano, nutritivo y fácil🤗
👩‍🍳 Para los muffins necesitas: Precalentar horno a 165 grados, enmantecar un molde con ghee y si desean lo enharinan un poco con harina de quinua o arroz integral.
🍃2 huevos @huevoskikes
🍃1 clara
🍃Queso ricotta
🍃Sal rosada
🍃Curry
🍃Páprika
🍃Canela
🍃Cebolla en polvo
🍃Pimienta
Mezclar todo en un bowl y vaciar en el molde luego llevar al horno hasta que esten listos. Chequea cada 10 o 15 mins.
En un bowl aparte poner mezclum, brotes @somospomario, queso ricotta, aguacate, 1cda aceite de oliva, 1cdita de limón y mezclar.
En una sartén con ghee saltear champiñones con un poco de pimienta, sal y páprika.
Servir y disfrutar con un super mug de cafe o te matcha.
