We were stuffed full but didn't feel heavy and gross. Dinners like this are energizing and satisfying in a different way than my body is used to, but I would like to get used to it!! Ohh even though we were stuffed we STILL had the most amazing vegan pie!! I had to steal a pic of the marbled mint pie from Pure Pies' feed so you could see pie. We ATE OURS before I realized- the Chocolate Salted Caramel and the Key Lime Pie we had were phenomenal!

➰Sauté some garlic and 1 whole onion in a pan with some coconut oil
➰Add in broccoli, some vegetable stock, 1-2tbsp. coconut cream and 1 tbsp. tomato paste
➰Stir to combine then allow to simmer over medium heat for 2-3 minutes
➰Add in chickpeas and cook for a further few minutes then finally add in baby spinach and stir in until wilted and take off heat
➰Can season with chilli 🌶 flakes, salt or pepper!

Date night! Friday nights I always try to plan something a little special for dinner just to help prevent any temptations for eating out!
Today was a lean burger 🍔 with no bun and baked yam fries on the side! 🍟
My secret ingredient for the burger was grated carrot! Gets in some extra greens and keeps the burgers from drying out!
Best part! All shift shop approved! ❤️💚💛👊
