Tonight was about being creative... last night before pay day finally... so had to use my best ideas to cook us a lovely dinner with was left in the fridge !
Basic ingredients, nice herbs and some pasta... and here we are !! Pretty proud of myself I may say 😂😂

I used to think seeing my leg muscles meant I was super strong and healthy.
Boy was I wrong. 🙅
Those muscles are due to the lack of body fat I had, the skeleton of myself that was walking around, lifeless, exhausted 24/7, food focused. The extremes I went to to lose weight 🙄
That's what's so tricky about the fitness industry, there is a fine line between health and eating disorders or ed tendencies. What some may seem as normal, just cutting back on carbs, can spiral into restricting all carbs, and becoming fearful of a food.
Those body building competitors you follow, that shouldn't be the body image you desire. It is NOT healthy, nor is it sustainable. I wanted to look like that, maybe I even did at some point, but was I healthy? No. I lost my period, I was shivering in the middle of summer, I was constantly exhausted, not partaking in social outings.

Made these little “toasts” for a quick snack today using @pamelasproducts Honey Grahams which are the perfect size and great for grab and go snacks or meals like this! This smoothie bowl though! After my workout was starving (light lunch) so made an amazing Summer Strawberry bowl:
Summer 🍓 Bowl
1 cup frozen cauliflower
1 cup frozen strawberries
1 tsp maca powder
1/2 scoop vanilla protein powder of choice
1/2 cup water or nut milk (I use water)
Ice to taste
Toppings: frozen wild mini blueberries @traderjoes, freeze dried strawberries @traderjoes, @nutiva chia seeds, cacao nibs, and @nutiva cacao hazelnut spread
Spent the day packing and doing last minute errands and was starvingg by the time I got home. Whipped up this sweet potato "rice" burrito bowl in about 15 minutes and man did it hit the spot 💯😍🌯
Spiralized a sweet potato then used a blender to make it rice-like & cooked for a few min. Topped with sautéed peppers & onions, romaine lettuce, black beans, salsa, @heatandflavor hot sauce and alllll the homemade guac 💃🏻🔥🥑
Someone bring me back down to earth cause I am in heaven 😍😍😍 Whenever I see ripe bananas on my counter I get so excited because it means I can bake a treat! This time, I made @rachlmansfield banana bread cookie skillet and let me tell ya, I had to freeze half of it because I was on my way towards eating the whole dang thing. That good! ...And then I took a piece from the freezer and put it in the microwave because who can have self control knowing this is in your kitchen?!?! Not me 🙅🏻

Made THE BEST veggie 🍕 pizza for dinner tonight 🌱🌶🥑 I used the same recipe for the quinoa crust as my first 🍕 post and topped it with @nourishedbykale vegan cashew pesto, spinach, yellow bell peppers, zucchini, avo chunks, feta, red pepper flakes, nutritional yeast, and more pepper 🙌🏻 hope you all had an amazing day 💓
Hellllllo everyone😊😊Just got home from an amazing workout💪🏼Today we're in for a little treat! I wanted to surprise my family with something sweet for this weekend so I decided to make vegan salted chocolate & peanut butter truffles! Yum😋😍😋🥜🍫 Here's a little guide to show you how I make them!
-Normal (vegan) chocolate
-White (vegan) chocolate
Let's begin!😀(The numbers are according to each photo)
Warning: It will get a bit messy.. but so worth it🙌🏼💕☺️
1-The finalized truffles🙈
2-Pit the dates. Just cut them in half and take out the little seed (or whatever that is😬!)
3-Put it in a food processor until it has a sticky "play dough" texture
4-Add some sea salt and blend it again
5-Your mixture should look like this
6-Roll into little balls and then stick it in the freezer for 25-30 minutes
7-Dip (or drench) them in peanut butter and stick it in the freezer for another 20 minutes
8-Heat up the chocolate and tablespoon of coconut oil until it gets to a good consistency. You can heat up only one type of chocolate or mix the two together, its up to you!
9-Take the balls out of the freezer and cover them in chocolate+sprinkle some more sea salt
10-(Optional) Drizzle the white chocolate on top of the balls (I did it with a ziploc bag) to make it fancy shmancy & stick in the freezer for 30 more minutes
Aaaaaaaaaaand you are done🌟🌟

i *hope* that whoever marries me 🤷🏼♀️ loves pizza as much as i do because we will eat it 80% of the time, i mean I'll even let them throw some meat on there and real cheese ✌🏼🤞🏻I ain't scared [well cheese 🧀 yes, I'll die] this one I had to make it quick 👉🏼 roasted fennel, roasted pink sea salt squash, pistachio pesto, spinach, cashew cheese, drizzled with tahini + my cilantro avocado cream sauce (on blog) 🤳
pesto variation on blog, just sub pistachios. Roast fennel in pink sea salt + pepper at 400 for about 25 mins. Roast squash in cinnamon + sea salt at 400 for about 40 mins then mash it up. Spread layer on crust of liking, then add spinach, cashew cheese (@treelinecheese i used their cracked pepper), spices next- nutritional yeast, turmeric, pepper, sprinkle pesto, add fennel. Cook pizza crust for another 15 mins or according to directions. Then drizzle with tahini + cilantro avocado sauce 💥 #pizzaboy 🍕
