3 cups oats (we use @bobsredmill old-fashioned)
1/4 cup pecans, finely chopped
1 tablespoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
3 medium ripe bananas
2 large eggs or *vegan flax egg (1/4 cup fresh ground flax meal mixed with 2-3 tbsp water)
1/4 cup honey or *coconut syrup
2 small zucchini, grated and excess water squeezed out
1/2 cup unsweetened applesauce
1/2 cup @thenewbarn unsweetened almond milk
1 teaspoon pure vanilla extract
1/2 cup blueberries, fresh or frozen
1. Preheat oven to 375. Prepare muffin tins by filling each muffin cup with a paper liner and spraying with nonstick spray.
2. Mix dry ingredients (oats through salt) together in a large bowl.
Separately, mash banana and mix remaining wet ingredients in a small bow (bananas through vanilla extract). Stir until well combined.
Stir the wet ingredients into the dry ingredients and mix until well-combined. Then gently fold in blueberrries.
3. Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
4. Bake at 375 for 20-25 minutes, until golden brown and a toothpick inserted in the center comes out clean.
We made ours vegan. You can omit the pecans if you want these to be completely nut-free.💕

Yeah you read that right - these babies are filled with a peanut butter chocolate chip cheesecake filling. Given that it's national peanut butter lovers month I had to make something special and these def fit the bill. They are fairly easy to make, the hardest part is just waiting until they set so you can dig in! Full recipe will be below! ---------------

Milk & Cookies 🍪 practically ran home after my morning gym session to have this for breakfast , a childhood fav that I’ve managed to keto-fy winning ! Cookies were made using @annaslowcarbkitchen low carb cookie mix , each cookie comes in at about 4.5 g of carbs. I added some cocoa powder and no sugar dark chocolate for an extra chocy hit 😋 absolutely obsessed with @aodrinks chocolate milk still can’t believe that the whole bottle comes in at only 1.1g of carbs 😱 excuse me while I go and dip my cookies in my milk 🤤

Dijon Sockeye Salmon w/ Zoodles, need I say more?! 🙌🏻💥 there's just something about a fat piece of salmon that gives me allll the feels every dang time! paired w/ cauliflower rice and some broccoli florets, and all drizzled with some coconut aminos... sign me up!! I've recently gotten into replacing soy sauce w/ coconut aminos because they are soy-free, a lot lower in sodium, and not as heavy in taste. It's a win-win! I'm diving into this plate and catching up on some TV shows and watching Stranger Things, aka it's gonna be a good night!! hope you guys have a great rest of your saturday ✨.
how to make: @traderjoes sockeye salmon fillet (seasoned w/ garlic powder + paprika) and cooked at 350 for 30 min //at the 10 minute mark, spread Dijon mustard over the salmon and let it cook the rest of the time.
I spiralized my zoodles and grated my cauliflower while the salmon was cooking and cooked sautéed both on the stove!
Din from the other night was on fleeeeky deeeky! I just died and came back to life thanks to @autumncalabrese @21dayfix PLYO fix workout 💀 but now it's over and I feel great 🙌🏻 so blessed to be able to do the things that I do with fitness and I don't take it for granted one bit... working on getting stronger mentally and physically! Fueling my body RIGHT! I don't want food to control me and my diet is doing me so well. NO cravings WHAT-SO-EVER and I am in complete control. It is AMAZING! (check out my smoothie in my story!) I've been intermittent fasting and staying LOW-CARB and HIGH-FAT! I do carb re-feeds once a week and on that day I do a protein fast! 😊

Healthy Stuffed Pepper Soup! In the Instant Pot!
1 pound extra lean ground beef
1/2 red onion diced
2 bell peppers chopped (1 red 1 orange)
1 small zucchini chopped
1/3 cup merlot
14 ounces crushed tomatoes
3 cups bone broth
1/2 teaspoon basil
1/2 tsp oregano
1 tsp onion powder
1/2 tsp chili powder
1 1/2 tsp garlic powder
Salt and pepper
Cooked brown rice
Sauté beef and onion in IP. Then add all remaining ingredients, except cooked rice. Cool on low pressure 20 minutes. Stir in cooked rice and enjoy!

Hoy tenía invitados para la cena y se nos ocurrió hacer varias versiones de la TORTITZZA.
👉🏻 La verdad es que me da bastante miedo preparar cosas así a personas que llevan una alimentación digamos “normal” porque suele suceder que no agrade al paladar porque lo tienen acostumbrado a alimentos con más sabor, más procesados, vamos que con más glutamato y esas cositas😂
En fin hoy para cenar he preparado 3 Tortitzzas 🍕 y un flan con mis copos crujientes de postre 🍮 y ha gustado mucho.
He utilizado para cada una:
- 250ml de claras, 90gr harina de arroz, 10 gr de copos de avena finos, pizca de levadura y sal.
Opcional para la decoración: copos de avena gruesos (un puñadito), salsa de tomate la que uséis y especias a gusto.
👉🏻 Montáis las claras a punto de nieve, integramos todos los ingredientes con las claras con muchísimo cariño para que no se bajen. Ponemos una sartén al fuego engrasada con un poquito de AOVE, ponemos la mitad de la mezcla el relleno que elijáis y la otra mitad de la mezcla. Dejamos hacer a fuego bajo cuando esté cuajada damos la vuelta y dejamos hacer por el otro lado.
👉🏻 Las mias han sido de:
1- Salmón, queso gouda y albahaca.
2- Atún al natural, pimientos asados, tomate espaciado casero, queso brie y orégano.
3- Fiambre de pavo, queso brie, piña, tomate especiado casero y orégano.
El resultado ha sido muy bueno y han gustado a todos 🤗

Another packed lunch but it's full of my favs so no complaints from me 🤗 Ate this for a late lunch before getting a run in 🏃🏼♀️ Having a meal prepped lunch allowed me to spend time with the fam, still get a workout in, and not have to spend money on a lunch out 💯 It took me about two hours to pack up my meals for the weekend but in my mind it's so worth it. Meal prep has relieved so much stress from my life 🙌🏻 If anyone ever has any questions, feel free to message me because I know it can be intimating. Spending the evening packing and going to bed early because I've got an early flight to Ohio tomorrow morning ✈️ Excited to see some family I haven't seen since summer 💞 Anddd the boy is coming with me which makes even more exciting 💃🏼 Happy Saturday people, get out there and make the most of your day ☀️ ------------------------------------------ #whatsforlunch 1 piece of salmon (Trader Joe's chili lime seasoning and then cooked over medium for 3 mins on each side in @primalkitchenfoods avocado oil) + zoodles with tomatoes (zoodles spiralized and cooked in ghee for just a few mins) + 1/2 avocado with Trader Joe's everything but the bagel seasoning + roasted red potatoes (roasted at 400F for 35 mins with Italian seasoning) ❤️
