GF Vegan Pumpkin Scones
After a few recent visits to local coffee houses, I found the scones and pastries behind the glass calling to me. I resisted…however, I immediately took my cravings to my kitchen in the pursuit of a clean-eats pumpkin scone. Not only did I want it GF and vegan, but I also wanted to use readily available products and uncomplicated prep. After meeting these conditions…tinkering in the kitchen…and testing a batch…I now have to honestly say…my scone cravings have been superbly satisfied. So, for all my GF, vegan peep coffee house patrons…this one is for you.
1 cup almonds (*alternatively, almond flour)
1 cup GF oats (*alternatively, oat flour)
2/3 cup coconut flour (like @anthonysgoods)
1 scoop vanilla pea based protein powder (such as @Nuzest_usa Smooth Vanilla Clean Lean Protein)
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1 cup pumpkin
1 teaspoon uncultured blackstrap molasses
2 tablespoons coconut nectar
1/4 cup almond milk
2 tablespoons melted coconut oil
1 tablespoon alcohol free vanilla
1/2 cup cacao nibs
Preheat oven to 350 degrees. Place almond and oats in a dry blade container for a high powered blender (like @vitamix). Blend together until a flour consistency is achieved (*alternatively, use almond and oat flour). Add flour to a food processor with remaining ingredients, minus nibs. Process until well combined. Add nibs. Pulse until well incorporated. Place batter on a parchment lined baking sheet. Cover with another piece of parchment and using a rolling pin, flatten dough into the shape of a circle about 3/4” thick. Bake for 15 minutes. Remove from oven and cut into even slices. Return to oven for 10 minutes longer. Remove from oven again and separate slices. Bake another 7 minutes. Remove from oven and let cool. Top with glaze (below) and chopped nuts. Store left overs in refrigerator for up to three days.

Their entire menu is based on the Anti-Inflammatory Diet. I ordered the “Ancient Grains Bowl” - miso glazed sweet potato, turmeric, charred onion, snow pea, grilled portobello, avocado, topped with hemp seeds. Cook 1/3 cup oats + 1/2 cup egg whites + 1/2 scoop protein powder + 3/4 cup almond milk + 2 tbsp cacao powder + organic cinnamon. Topped with blueberries, pomegranate seeds, cacao nibs, desiccated coconut, bee pollen, and of course the main star of the show - dat cashew butter drizzle 🤤⭐️

1/2 c @bonafideprovisions chicken #bonebroth (could sub ~ 1/4 c olive oil to make vegan)
1 packed c basil
1/2 c packed @organicgirl spinach
1/2 T olive oil
3 T nutritional yeast
1 T hemp seeds
dash pink sea salt + pepper
optional: 1 tsp @philosophielove green dream + 1/4 tsp @sunpotion moringa
Saturday's are for sweet potatoes and snacking and spreads and sweating and studying and sunshine and smiling. I am feeling bleSSSSSSSSed that my day has thus far included all of those things. Incorporating green veggies into my meals this week has been essential to beating jet lag and just feeling the absolute best version of myself. Recently, I have been noticing a positive difference in how my body has been feeling and how it reacts to stress as of now versus this time last year. At this point last year I was dealing with tons of anxiety that I did not know how to get rid of - overwhelmed with a new job, a new schedule and a new home.. I would start to feel stressed not only in my mind but also my digestive system, joints, muscles, etc.
Over this past year I’ve made it a point to reduce the amount of sodium that goes into my food, eat mostly organic, incorporate even more vegetables into meals than before, enjoy dark chocolate every single night, slowly incorporate non-toxic beauty and cleaning products, and enjoy more acts of self-love and self-care. I TRULY believe that 🌿food is medicine🌿 and the time that you carve out of a day to love and honor yourself makes you best equipped to be there for others and roll along with all things life.
Another day, another meal where I say to myself “okay thiiis is the last time I’ll be able to eat outside on the porch”. ☀️☀️ Still hangin on to summer in Chicago and eating like its fall- roasted sweet potatoes, mashed cauliflower, coconut & curry marinated chicken thigh. 🍗🍃🍠

1/2 cup coconut flour
1/4 cup almond milk(or milk of choice)
1 scoop collagen
1/3 cup honey
1/4 cup coconut oil(melted)
1/2 tsp baking soda
1/4 tsp salt
2 tsp vanila
80 gr. chocolate.
Preheat oven to 175c.Mix dry ingredients in a bowl. In another bowl mix wet ingredients. Add dry to wet mixture and mix untill combined.Fold in chocolate chunks.Add to 20x20 ceramic dish and bake for 20 min.
