Raise your hand if you love butternut! 🙋🏼I can distinctly remember the first time I fell in love with this particular squash: I was on a shopping trip with my mother (Juneau, AK has two mostly-empty strip malls, and no major clothing retailers, so we did back to school shopping in Seattle), and we had gotten into our hotel VERY late. Nothing was open, but the hotel had a tiny freezer up front with some @leancuisine meals in them - one of which was a butternut ravioli. I just about died of happiness eating that little meal, and I aggressively sought out that ravioli (and later, everything else with butternut) for the entirety of my college career.
Now, one of my butternut favorites is @rachelschultzzz 's Butternut Squash and Sausage Stuffed Shells (link in profile!) I decided to throw it into this week's meal prep when the deals lined up perfectly on my @ibottaapp account, and I'm so glad I did. I made some small changes (used lean turkey sausage, part-skim ricotta, nonfat milk, and for luxury, the oil used on the roast veggies was truffle), but if you'd like to give this recipe a try yourself, I fully recommend making the original, first (swipe right to see Rachel's!).
Also! If you're crushing #hgcstrong , you can fit in a workout while your squash roasts in the oven! Today is Upper Body Muscle Mania for me!
Guys! I tested my own recipe! Pumpkin chai muffins with some fresh cranberries. Thought of a couple things to improve on, but they taste good to me. 😋
P.S. I did back and shoulders this morning and I think my arms are going to be shaking the rest of the day. 💪🏻
Really wanted to go back to sleep this morning, but I got up to go do leg day! But it was an interesting gym session.
Con: I forgot a water bottle
PRO: Got more steps walking to the drinking fountain
Con: Wireless headphones died
PRO: They changed the music at the gym where it was similar to what I listen , so I was dancing between sets (sorry lady who complained about it to a trainer, but I like it!)
PRO: I increased the weight in my squats today and made it through four sets!
Can I just say that I have been feeling really good the past couple of days. Guess that shows how nutrition is key!
After having a really good workout, I had a egg white scramble mixed with veggies and turkey bacon and a slice of @ambitiouskitchen chai banana bread with @wild_friends super butter. Then for lunch I had leftover veggies with turkey meatballs over some quinoa.

I know that technically, it's Monday night, but I've been gearing up for this post since Friday, and I'm kinda nervous about it, so. . .let's rip this band aid off.
Far left: In this photo from 2015, I was clocking in around 135 pounds, and was a size 8/medium. I was eating about 1300 calories a day, and doing hours of cardio. The weight was coming off, but so. So. Slowly. I had actually lost about 15 pounds between the start of my weight loss journey and when this picture was taken. I was in Europe, newly engaged, and should have been happy. Instead, when I saw this photo, I wanted to cry. -------------------------------
2016 in the middle. I had dropped to 125 (my first 'goal weight' - my actual goal was 118), and a size 0/2 in tops, and 4/6 bottoms. I had just finished one round of BBG, and I felt strong, and very nearly satisfied with my body. I thought that if I cut back even more on my calories, I might actually be happy. This is where my eating became disordered.
Today, I'm back to 135. Maybe I'm carrying it a little better, or maybe it's muscle, because I'm still a 0/2 top and 4/6 bottom. I know that all eleven of the pounds I gained came from relaxing my diet, and although I'm frustrated, I'm not angry. Life happened. I got married. We had parties, celebrated over food and wine, and today, we're wishing each other "happy first 100 days of marriage". I'm not happy with this physique, but I'm happy with my ability to forgive myself for those choices. . .and I'm ready to try again.
I may have died a little during my workout this morning. A 5k with some sprints, a few rounds of a full body circuit (where I have determined I really like the slam ball), and some upper body. It must've been a good workout since my sweat caused an imprint of my shirt onto the mat. 💦💦💦
Best decision of the morning! Not I regret doing 4 miles on the treadmill. Toasted @ambitiouskitchen chai spiced banana bread, @siggisdairy vanilla yogurt, local pumpkin butter, and @wild_friends creamy almond butter! 😋!
P.s. Local radio station started playing Christmas music and I am not ready for it!
Someone probably should check on me later because I tried new abs/core moves and I will definitely will be feeling it! 😬Also, did day 3 of #yogawithadriene to stretch everything out. Refueled with a yogurt bowl and a chocolate greens smoothie for the go.
Easing my way into November. Started with hiit the beach, core work, and starting the #yogarevolution with @adrienelouise I want to practice more yoga and I thought it was a good place to start. Now pancakes!
NBD, just a drool-worthy peek at tonight's green curry chicken sweet potato meatballs, courtesy of the #healthyglowguide ! I swapped full fat coconut milk for light, and I have to say that as someone who isn't super into coconut as a flavor, but does cook with the oil sometimes, I do prefer it light over full fat.
It's Halloweekend, y'all! 🎃 Kicking off the festivities with a big batch of @ambitiouskitchen 's Pumpkin Oatmeal Chocolate Chip Cookies. . .and I HIGHLY recommend that you do the same. I made one batch with @bobsredmill old fashioned rolled oats, and another with @coachsoats . The Bob's version was a little more gooey, which I liked, while Coach's were nutty and firm. I would add pecans to the Coach's if I made this again (which, let's be real. I will).
It felt so good to get back to gym and do some strength training! Started with 20 minutes on the elliptical, did a @laurengleisberg leg workout and 3 of the daily moves from yesterday. So many squats!!! Side note: I need to invest in a pair of wireless headphones so I don't have to listen to other people complaining.
Take me back! After not being in Gettysburg for at least three years, this trip did not seem long enough. It was such a great time! Now I need to get back into a fitness routine until I find another race. Also, tips on getting out of bed? Now that it is darker later in the morning, I don't want to get out from under my covers. 😴
I bought this deck on essential oils + emotions when I was in Salt Lake City in September and I love having the quick reference when I find myself needing some support. On Saturday I found myself not quite feeling like ME. My anxiety was peaked, I was exhausted, and my brain was running a mile a minute. I reached for this deck, through Wild Orange and Rosemary in my diffuser, turned on my audiobook 'Braving the Wilderness' by @brenebrown, ate my gluten free toast with almond butter and banana, and sat in the dark with my eyes closed just listening. I followed that up with a nap and a hot shower. Talk about an afternoon of self care. And it was exactly what the doctor ordered.

Another half marathon in the books!!! Got a new personal best with 2:34:51 and defeated my dreaded mile 11. It was weird that I was getting warm in the middle of October this morning but it was a good race! Then I of course got my post race ice cream 🍦!!!
Finished up another @healthyglow.co HGC Strong workout tonight! 💪🏾 I've been loving these workouts and how they're helping me to stay consistent in my fitness. 🔥
I'm always learning new ways to make working out a part of my regular schedule. Right now, that means giving myself A TON of grace. It's easy for me to get caught up in the idea that I have to be in the gym for an hour or do some ridiculously hard exercise for my workout to matter. I have to constantly remind myself that all of that is just not true. Every small step I take is helping me reach my goal. Whether it's going to a HIIT class, yoga, a workout in my apartment gym, or just a walk with the dog. Every time I choose to intentionally move my body is small reason to celebrate. ✨
The crazy thing is, ditching all those dumb fitness "rules" just encourages and motivates me to move my body more. Because guess what, there's NO pressure! No pressure to lose 30 pounds in 30 days, "look" like I'm in shape, or lose more inches. All of that stuff just falls away and I'm just having fun. Doing what I love. ✨
Seriously, if you're struggling to stay consistent or find motivation - I want you to cut yourself some slack! Find the movement that fills you up, that you can't wait to do again, that brings you joy, makes you feel powerful and just do that. Then do it again. Fitness shouldn't be about rules, pressure, or guilt over missed workouts. It's a way to show love and self-respect for the one body we've been given. So have fun with it and take the pressure to be perfect off yourself. I promise, you're doing better than you think. ❤️
For the last couple of weeks, all I have wanted are carbs...bread, cereal, anything but my usual healthy and nutritious meals. I went with it, filling in the gaps with veggie soups, but I know I'm starting to turn the corner now that I find myself craving my usual favorites like my morning smoothie packed with fruits and veggies! Yum!
Exactly one year (and a day) between these photos. This time last year I had just finished my first 5k race and was feeling physically great. This is also around the time that my relationship with my body/food was at it's all time worst... something I never had experienced in the past and never excepted to feel. Anxiety around food, drinking with friends, missing a workout, etc. had all began to weigh down on me. Fast-forward a year and I just finished my first half-marathon (WHAT) and I am finally beginning to feel more and more at peace with my body just as it is. No more calorie counting and no more intense workouts because the "I have to" feeling. I've been reading and listening to podcasts about intuitive eating and movement over the past year and am working daily on making sure I am doing what feels right for myself in the moment. Some days that I means I have a big burger and a couple beers and sit on my butt all day... other days I want a veggie packed salad after doing yoga... or a combination of the two. I've decided to choose living my life over stressing about things that really don't matter even if that means I wear a slightly bigger size in clothing. I have grown to truly enjoy working out and eating lots of clean food but that certainly does not mean that's all I do/eat. #Balance is everything and it's exactly what I'm trying to find for myself. 🏃♀️💕✨💪#throwbackthursday#tbt#HealthyGlowCo#HGCcommunity#strongisthenewskinny#fitbabesunite#fitgirl#progressnotperfection
I may not really feel like it right now, but with each day I am making progress and feeling a little better. I am reminding myself that progress is progress and sooner rather than later, I will be back to my healthy, glowing, and active self. ✨

Fall is absolutely my favorite season so I love that it has finally really started to look and feel like it. I've been cooped up in my apartment by myself all weekend in an attempt to recover and get healthy again, but when there was a break in the rain yesterday, I found myself craving a little bit of fresh air and easy movement. Since I was feeling up for it, I went for it and it sure did feel good. Here's to hoping I'm on the mend and can get back to my normal activity level soon.
@fit_pham made this graphic JUST IN TIME to help me with my #mealprepmonday this week! I'd been planning on whipping up a batch of red curry coconut peanut butter chicken (try saying that five times fast), and I had been debating just putting it on forbidden rice, veggies, or a mix. 🤔 Realistically, skipping some rice would likely cause me to overindulge on other carbs, and it's reassuring to know that the carbs I want are actually sometimes a better choice (when used in moderation, and mixed with veggies) than a substitute.
It doesn't have to be hard. Believe it or not, it can be fun. 💪🏻
You don't need a gym or fancy studio, you can just take your mat outside. ☀
Don't overcomplicate it. Don't overthink it. Don't convince yourself you can't do it. Because you can. 🌟
You have what it takes. I realize sometimes I make it look "easy" to people, but that's only because I made the decision and took the action YEARS ago and it's more of my normal routine these days. It's still not always easy for me, but I sure feel the difference when I make the time and investment in myself. 💜
This morning I did Tone hiit up and bombshell booty. Along with the daily moves from yesterday. I was going to do the ones from today, but my stomach was yelling at me. So vanilla @siggisdairy with @purely_elizabeth granola, pumpkin spice @peanutbutterco , and @bigsliceapples. 😋Happy Friday!!!
Refueling with zucchini egg white oats after a really good workout! I did a 3.5 mile jog on the treadmill, 10 minute ab routine, and the daily moves. So I am out of breath. Side note: I am pretty sure peanut butter is one of my major food groups 😊

Felt great to squeeze in a lil travel workout this weekend! Typically, that's no my strong suit on vacations, a little more eating and drinking than exercise 😆 Yesterday I worked in a little #HGCstrong leg workout, and played around with some equipment planning next week's bootcamp. The good Doctor and I have a dinner date tonight at the Empress, and I'm really looking forward to refueling my achey body after @teamgainsyyj 's KILLER Glutes and Abs class at @limitlessvictoria . Weeknights don't have to be boring! Raided the kitchen for a spin on the prep-ahead quinoa salad from the fall/winter #healthyglowguide : spinach, green bell pepper, cilantro, tomato, avocado, goat cheese, and the pièce de résistance - chicken broth steeped quinoa with onion, garlic, red pepper flake, olive oil, Himalayan pink salt, and an obscene amount of cumin. So. Damn. Good.
Truth: It's not always easy to take a compliment. But after a rough 24 hours which included finding myself face up in my office yesterday afternoon, I am being forced to take it easy for the next few days, which if you know me at all is definitely NOT my style.
My coworker who was by my side through it yesterday, sent me a message to check-in today while I was working from home. After filling him in, he said "You are tough." You know what? He was right and truthfully, sometimes I forget. I AM TOUGH. I am prone to overdoing it and pushing myself a little too far sometimes, but when I'm forced to take a step back, I am reminded of just how tough I am and just how much I can and have overcome. I'm going to be a little sore for the next few days but then I'll be back and stronger than ever.
Officially got my Disney Halloween mug out!!! Then used the @kodiakcakes pumpkin and flax pancake mix to make a mug pancake. I added some mini chocolate chips and peanut butter because why not, I had a great workout!
All I wanted to do this morning was to stay curled up in my blankets! Who wants to go for a run when it is still dark out? Got out there and saw this beautiful sunrise! Good news is my hands were only cold for about 5 minutes 😆

This one's for Wes at @limitlessvictoria : sweet treat drinks don't have to be heavy on the calories. Starbucks Canada just came out with a new fall drink, the Americano Blanco, which is a traditional Americano, but with a couple of pumps of white chocolate added in. I ordered mine with the blonde roast today, and I actually liked it MUCH better than any white mocha I have ever had (not as cloyingly sweet, still smooth and creamy). Pretty certain this will wind up being a regular in the rotation!
