Try New Vegetables

Up until about 2 years ago I would have said that I hated rhubarb. That was until I had an ethereal experience with a Coconut Porridge with Stewed Rhubarb at a local cafรฉ. Now, if I see myself a little Stewed Rhubarb on a cafรฉ menu I'm sold. 
Little did I know that rhubarb came with a whole host of health benefits and had some magnificent healing compounds. 
This is why I always encourage people to grab an unfamiliar vegetable and figure out what to do with it later. That usually requires some googling and often results in a new found favourite or at least, an interesting experiment.

Spent some much needed time with me, myself and I today. Thanks to my friends for understanding. Life has been feeling a little too overscheduled lately and I relished in waking up naturally, without an alarm. I had a leisurely morning in silence with my coffee. Vacuumed the whole house and mopped all the floors , then started some meal prep in my pajamas. The boys (my dogs) got dropped off, so I got myself dressed and we all went on an hour hike on the trails behind my house, then I managed a short work out. Now I'm showered and fresh and in fresh jammies, ready to dig into this little feast! @ohsheglows Walnut, Pear and Avocado Salad with Marinated Grilled Portobello Mushroom caps. With a glass of vino, of course! ๐Ÿท

To save time I season all of my meat once I bring it home from the store. The stuff I'm cooking today goes into the fridge and the stuff I'll cook another time gets bagged and put into the freezer.

Bitch Peas - Bet you didn't know that peas contain 9 grams of protein per cup! While black-eyed peas contain the highest amounts of protein, all peas contain a great variety of essential vitamins and minerals, especially thiamine, folate, niacin, phosphorous and zinc, which are vital to cell growth and development. 
Plus they are amazingly delicious in just about everything in my opinion. 
I personally keep a lifetime supply in my freezer for a rainy day, or every day....

Have a HAPPY WEEKEND with this dairy-free chocolate and beetroot cake ๐Ÿ˜๐Ÿซ๐Ÿ˜๐Ÿซ Despite the lack of dairy, these little slices (of joy) taste great and the beetroot adds a surprisingly nice texture. Plus, you only need about 20mins to get this cake in the oven...I'm really not a 'cake' person (or any kind of baking for that matter) but even I found this one easy!
Ingredients:
50g raw cacao powder (you can get this in Waitrose/other supermarkets/amazon)
1.5 medium eggs, beaten
100ml melted coconut oil (I used @lucybeecoconut)
70g coconut sugar (I used @bionaorganic)
Few drops of vanilla flavouring 
100g beetroot, grated
70g ground almonds
1 tsp baking powder
80g self-raising flour
โ€ข
How to create:
- Grease a shallow cake tin and line with baking parchment. Heat oven to 160C.
- Whisk the cacao powder, eggs, oil, sugar and vanilla flavouring together in a bowl.
- Stir in the beetroot and almonds and mix well.
- Sift in the flour and baking powder and fold through.
- Pour mixture into your cake tin and bake for 40mins. Try and resist the temptation to get it out earlier ๐Ÿ™„.
- Leave cake to cool for 10mins before slicing up and (optional) dipping it into some peanut butter.

And a sprinkle of Himalayan salt

Now if I served this to them at dinner, they may just turn up their noses.... But guess what?

Nine times outta ten, if it's on my plate, 
They want it!!!! This works for everything from soup to salad to my delicious leftovers medley ๐Ÿ˜‚

as a kid you could not get me to eat fruits and vegetables if my life depended on it. I have a weird issue with texture and I could never get passed that. I was impossible to feed. As I've gotten older however, I've fallen in love with fruits and veggies of all kinds! Especially in the form of juices! They're just so refreshing! Ah. Had you told me when I was a kid I'd be drinking fruits and veggies through a juicer I would've looked at you like you were NUTS ๐Ÿ™ˆ
This juice was:
1/2 a watermelon (mine was yellow so it gave it more of a honey like flavor, so good) 
2 beets
A big chunk of ginger (I L O V E ginger) 
And a full lime!

Then topped with agave ! 
So refreshing. I'm truly in love with our co op here for having so many bulk item options! It really helps on cost! 
Because of the endless convenience and availability I have at my door step I'm highly considering trying a "raw till 4" diet. Have any of you tried a raw till 4 diet and if so how did it go and did you like it? Any advice and/or thoughts would be super helpful!

Haddock with black olives, basil and smashed sweet potato ๐Ÿ˜ This dinner is insaneeeeeely tasty and is the quickest thing in LIFE to make! It's also a good way to use up vegetables as you can pretty much chuck in any veg you like ๐Ÿ˜‰
Ingredients (for 2 people):
1 tbsp rapeseed oil
Half a red onion, finely chopped 
1 x sweet potato, chopped
1 garlic clove, finely chopped
1 x leek, chopped
Handful of cherry tomatoes, halved
2 x haddock fillets, cut into chunks
1 tsp smoked paprika
Pinch of salt and pepper
Handful of black olives
2 x handfuls of spinach
1 x tin of chopped tomatoes
Half a mozzarella ball
Handful of fresh basil, chopped
1 tbsp pine nuts
โ€ข
How to create:
- Heat the oil on a medium heat and add the onion.
- Boil the sweet potato for 5 mins and then drain. Crush them slightly with a fork.
- When the onion has been cooking for a few mins, add the garlic and leek and stir.
- Add the cherry tomatoes, haddock, paprika, salt and pepper and then stir. Leave to cook for approx. 5 mins.
- Add the black olives, spinach and chopped tomatoes and cook for another 5 mins.
- Take off the heat, tear up the mozzarella and stir into the pan.
- Serve onto two plates and top with the pine nuts and basil. YUM!

I received this card in the clinic mail with the attached letter. This patient drives all the way from Niagara to see me and all the staff and I just love him! To top off his heartfelt card and letter, he dropped of fresh Niagara peaches this morning while passing through on his way to the zoo!! He has also gifted the clinic with a massive plant that he had nurtured for years in a special pot that he deemed "ellephysio worthy". I think he may be my guardian angel ๐Ÿ˜‡

COCONUT, CASHEW AND GREEN LENTIL DAAL --->> In an attempt to cut down on the amount of meat I eat, I decided to make this vegetarian daal ๐Ÿ› I don't normally cook with lentils but found this dish to be really filling and full of flavour! As always, no sugary/salty shop bought sauces used here - everything was cooked from scratch and the spices worked their natural magic ๐Ÿ™Œ๐Ÿผ

Ingredients (serves 4):
1 tbsp coconut oil
1 x medium white onion, finely chopped
1 tsp cumin seeds
1 tsp cinnamon
1 x bay leaf
2 x garlic cloves, finely chopped
3cm ginger, finely chopped
1 chilli, finely chopped
1 tbsp garam masala
1 tsp ground turmeric
250g green lentils
1 x 400ml tin full fat coconut milk
300ml vegetable stock
100g cashew nuts
2 large handfuls spinach
Approx. 8 x tenderstem broccoli spears
4 cups rice or 2 x packets of @cauli_rice
Handful of coriander, chopped

How to create:
- Melt the oil in a large saucepan over a medium heat. Add the onion and cook for 3โ€“4 minutes until just soft. Add the cumin seeds, cinnamon, bay leaf, garlic, ginger and chilli and cook for 1 min. Sprinkle in the garam masala and turmeric and fry for 1 min. - Add the lentils to the pan, along with the coconut milk and half of the vegetable stock. Bring to the boil and simmer for about 15 mins.
- Tip the nuts and remaining stock into a blender and blitz until smooth. Add this to the pan along with the spinach, then stir until the spinach has wilted into the daal. Add the broccoli and leave to simmer for 5 mins.
- Meanwhile, cook the rice. If using cauliflower rice, tip the cauli rice into a pan with a little water and gently fry for 3 mins.
- Sprinkle the coriander over the daal and fish up alongside the cauli rice. Dig in!
