So Iโ€™m all about the daily habits - do what makes you feel good. Sometimes life gets in the way and I end up feeling average. Ready for another?  Black bean pasta was NOT a win at the Hanley house- the texture was just hard to get over. However the Green Lentil pasta was a win!! I still prefer spiraled zucchini but I like the convenience of having a box of pasta on the pantry shelf - found it at Sams.

I am not a believer in eating something just because it's healthy, and salads are no exception. A couple hacks I use to really elevate a pile of greens: 1. To make a speedy, creamy, + tasty dressing I use a favorite dip from the fridge and thin it with some olive oil and water. Today I used @oasisnaturals 's 'awesome dip' (it is indeed amazing) and other days I use hummus when I have it in the fridge. This takes under a minute to prepare and is so good. 2. I store leftovers from the night before to put on salads. For example today was leftover steak + mushrooms  from steak tacos ๐Ÿ™Œ. Other than that it's pretty much easy to grab items from the pantry to finish off the salad; i.e. sprouted seeds, goat cheese, nuts, sprouts, cucumber. Remember to enjoy what you are putting on your plate! Happy Monday peoples.

Healthy Hack!
Crazy Easy Whipped Body Butter

1 c. organic coconut oil (needs to be solid) 
1 t. vitamin E oil (optional)
A few drops of essential oil (for fragrance)

Directions:

1. Put on all ingredients in mixing bowl.
*Do not melt coconut oil. It will only whip if it is solid.

2. Mix on high with a wire whisk 6-7 minutes or so whipped into a light, airy consistency.

3. Spoon the whipped coconut body butter into a glass jar, cover tightly. Store at room temperature or refrigerator.

Our gluten free organic blueberry banana pancakes were a hit this morning ๐Ÿฅž๐ŸŒ๐Ÿคค Recipe below ๐Ÿ‘‡๐Ÿป 1 large mashed organic banana
1 large cage free egg (sub flax egg if vegan)
2 tbsp melted Pure Planet organic coconut oil
1 tsp organic raw honey (optional) 
1/2 cup organic plant based milk (we used coconut)
4 tbsp The Natural Citizen Organic Protein
1 cup GF organic oat flour 
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon 
1/2 tsp nutmeg
3/4 cup organic blueberries (we used frozen defrosted) 
Mix all wet ingredients except melted coconut oil.  Add all dry ingredients and mix until combined. Stir in melted coconut oil and blueberries. 
Tip: Blueberries should be at least room temp so the coconut oil doesnโ€™t solidify. 
Heat pan to medium low and pour 1/4 cup of batter onto hot pan. Flip after 3-4 mins. Cook an additional 1-2 mins.

Iโ€™ve been making variations of this for yonks, usually on a Sunday. @jholder04  said the other day he reckons Iโ€™ve nailed it. So maybe Iโ€™ll share the recipe.. I use it instead of bread at home, thick slices toasts well, add toppings like: avo, tomato and fermented vege; tahini, banana and cinnamon; eggs; butter; pesto or @plantfood.nz Chipotle! A handy snack for work or addition to salad for lunch. Itโ€™s a variation of a couple of recipes such as @teresacutter_healthychef I substitute the almond meal for buckwheat flour for affordability and because I usually have a bag of buckwheat at the ready (for pancakes and baking) So it ticks the boxes for many dietary requirements (itโ€™s GF)
Buckwheat pumpkin loaf ๐Ÿค—

INGREDIENTS
.
450 g grated raw pumpkin (I use the grater function on my food processor)
4 eggs
1 tsp sea salt
ยฝ tsp Paprika
1/4 cup extra virgin olive oil
2 teaspoons gluten free baking powder
3 cups buckwheat flour
Pumpkin seeds to sprinkle on top
.
METHOD
.
Preheat your oven to fan bake 180 C
Combine the pumpkin, eggs, salt, paprika and oil in a bowl.
Add the buckwheat and baking powder and mix well (use your hands)
Loaf tin: Mine is 10cm x 25cm silicon (easily pops out) otherwise line with baking paper at the base and the sides.
Spoon the mixture into the loaf tin and top with the pumpkin seeds.
Bake for about 1 1/2 hours โ€“ depending on your oven, so check after 1 hour and test.
Remove from the oven and allow to rest on a wire rack for awhile (if you can wait!)

So this morning, I whipped up a quick meal of @wellshire bacon, broccoli sautรฉed in the leftover bacon grease, roasted white sweet potato, and @probioticboost garlic kraut (from my local farmerโ€™s market). Oh and a matcha latte of course ๐Ÿ˜‰

* HEALTHY BURGER ALERT*
What you see right here is a turkey and feta  burger with a butternut squash bun topped with lettuce, tomato, beetroot and halloumi ๐Ÿ”๐Ÿ”๐Ÿ” This lighter, more nutritious version of your standard beef burger is so satisfying!! I tend to make a batch of turkey burgers and keep them in the fridge to serve up in different ways for lunch/dinner throughout the week. Give it a go!

Ingredients:
For the burgers (makes approx. 5):
250g Turkey mince
A few cubes of feta, crumbled
1 x small red onion, finely chopped
Juice of 1 lime
Pinch of salt and pepper
1 egg, beaten (optional, but helps to bind)
Pinch of flour (if needed, to help bind)
1 tbsp rapeseed oil (for frying)
For the toppings and bun (for each burger):
2 butternut squash โ€˜disksโ€™, about 1.5cm thick
1 tsp rapeseed oil
Lettuce leaves
1 x large tomato slice
Couple of slices of beetroot (optional)
Couple of slices of grilled halloumi (optional)
Pinch of sesame seeds

To create:
- Heat the oven to 180C.
- Combine all the burger ingredients (except the oil) into a mix, mixing together well.
- Drizzle the butternut squash disks with oil and roast for approx 20 mins (or until soft throughout).
- In the meantime, Heat the oil in a large frying pan on a medium heat and fry the burgers. Aim for about 8 mins on each side, or until cooked all the way through.
- Once everything is cooked, place a squash disk on a plate and stack the lettuce, tomato, burger, halloumi and beetroot on top. Top with another squash top and sprinkle the sesame seeds on top for a โ€˜burger bunโ€™ effect. You may need a cocktail stick to hold everything together ๐Ÿ˜‰

Afternoon sweet treat? Every. Single. Day? We can either be in denial and try our hardest to resist the temptation of a biscuit and chocolate binge..or be ok with your sweet tooth for now and just be prepared with some more nourishing goodness like a batch of bliss balls...
Hereโ€™s a not so sweet snack for when you just want a sweet treat. This is my version
of my fav @yummololaberry Lemon Pie Bites:

Lemony Balls ๐Ÿ‹ 
1 1/2 cups shredded coconut
1/2 cup cashews or almonds
1/4 cup melted coconut oil
1 tbsp tahini
1 tbsp maple syrup, coconut
nectar or other sweetness
1/2 tsp vanilla extract or paste
zest of 1 lemon
juice of 2 lemons
pinch of salt
extra shredded or desiccated
coconut for rolling

Whiz all of the ingredients in your food processor or Nutribullet, until smooth.
Roll teaspoon size heaps into balls, it helps if your hands a slightly damp for this.
Roll in coconut and place each ball on a flat tray or plate and into the fridge to set.
Store in a container in the fridge or freezer and take with you in a small jar/container for when the sweet tooth strikes. I dare you to take a batch of these to your next office morning tea ๐Ÿ‘Œ๐Ÿผ ๐Ÿ‘‡๐Ÿผ

I know now a days we can get "make your own salad" place pretty much anywhere around the world, it's a trend, it's a healthy choice, but wait... what about the dressing...? Sometimes the taste/portion of dressing comes out of expectation, and I've had those times when I had too much seasoning that doesn't make my salad healthy anymore.
 Everytime I have salad since then, I always get the dressing on the side, and dip whatever I want. That way I can reduce calories and sodium, this little trick really helps! I had roasted mashroom and tofu on salad, those has flavors already so I didn't really need dressing actually! Remember, when it comes to food or life or mood... whatever it is,
