Day 3 of @eatsmart_om Deliveries. I signed up with @eatsmart_om for their healthy planned meals. Each plan is customized to the diet you need to follow when on a healthy journey. I am excited to see the results and i am hoping the meals come in fresh, tasty and on time. Just look 👀 at these beauties! Potatoes are my favorite source of carbs for a post-workout meal! I tend to feel sluggish and bloated when I eat too many grains, but potatoes 🥔 give me the carbs I need without feeling crappy! I like to mix it up between sweet potatoes and regular potatoes each week.
🚨PERFECTLY ROASTED POTATOES🚨
1) peel your potatoes and chop them up into small sized chunks
2) toss them with olive oil, salt, pepper, and thyme
3) place them on a baking sheet in an even layer
4) bake at 400 for 20-30 minutes (depending on the size of the potatoes chunks)
Feel free to get creative depending on your fat macros. If you have a lot of fat left, use more oil 👍🏼 Or if you have a low fat allowance each day, use less oil and then spray your baking sheet first.

Slept in this morning, I pressed snooze and woke up too late to work out. So I was able to get it in, but what was suppose to take me 37 minutes, took me about an hour and 30 minutes! I must have pressed pause 50 times! While hubby was still at work, I had to make dinner, help out with homework, serve dinner, all while I was suppose to get my work in. And again, this is why the morning works out for me.. In the morning you get it out of the way, No one needs anything, and I get it done quickly. So tonight was a lil challenging and I could have said you know what, I’ll skip today, But nope! This momma has goals and I’m sticking to them. I've tried it all over the years. I've taken diet pills, belonged to a gym for years which I absolutely hated, I've done low fat, low carb, no carb. And every time I would lose weight, but I'd always gain it right back. Then I'd feel like a failure all over again. Why did I fail? Because I didn't have a support system and I never learned how to eat the right foods in the right portions. Plus I could never find any kind of workouts that I liked or enjoyed. Once I found these fun workouts that I could do right in the comfort of my own living with amazing trainers who are so motivating and started drinking a yummy nutritional shake everyday and learned how to finally eat properly for my body, that's when it finally worked for me. That's when I was able to succeed and I was finally able to lose the weight and keep it off! Las cosas se ponen peor porque muy pocas personas saben realmente si están comiendo bien todos los días.Actualmente los conocimientos más básicos y más importantes como las características de una dieta equilibrada en alimentos y porciones, se dan por sabidos, pero en realidad, no es así. Vivimos en un bombardeo constante de información pseudocientífica que confunde y altera la percepción de lo que es una dieta sana.El resultado es que terminamos sin saber lo que es un mito de alimentación y lo que es verdad. Entonces ahí es que nos damos cuenta estaremos comiendo bien o comiendo mal? Por tal razón debemos saber que una dieta se define como todo aquello que comemos durante el día, sin embargo cotidianamente el término hace referencia a los planes de alimentación diseñados para la obtención de un resultado específico como por ejemplo: bajar de peso, controlar los niveles de azúcar, etc. •

Day 2 of clean week workouts is in the books!
Today was a cardio day which is not my favorite but I got it done! A little embarrassed to say that I pulled something in my back..... during the stretching portion 😳
Super excited to make another dinner from this awesome program tonight! There is still time to join my October group of you'd like to try this or any other program.
120 days challenge: Day 17 of whole30
Breakfast: Chocolate Chia Pudding topped with Berries and Seeds
3 Tbsp chia seeds
1 cup coconut milk
6 dates, stones removed
1-1/2 tbsp raw cocoa powder
Blend the dates, coconut milk and cocoa powder together till smooth. Combine the chia seeds and milk in a jar with lid. Shake well and place in the fridge overnight.
Serve the chia pudding topped with the berries and seeds.
Lunch: Cucumber and Avocado Salad
1/2 cucumber, peeled and cubed
1 medium avocado, diced
6 cherry tomatoes, halved
6 olives, halved
Juice of 1/2 a lime
1 tsp dried oregano
Pinch of salt and black pepper
Combine all ingredients together. Allow to sit for at least 30mins before eating.
Dinner: Asaro (Nigerian Yam Pottage)
1/2 tuber of Yam, sliced, peeled and cut into small chunks
1 cup water or chicken stock
2 cooking spoon of palm oil
1 tbsp tomato puree
2 tsp chilli powder
1 tsp chilli flakes
1 large smoked mackerel
Salt and pepper to taste
1 tsp dried thyme
1/2 cup thinly sliced Cavolo Nero (kale)
Put the yam chunks, tomato puree, palm oil, chilli powder, chilli flakes, thyme salt and pepper to taste. Cook till the yam is soft then add the fish and green veg. Once the yam is soft, mash some yam.
