I need this in my life again.😩😩😩 This was one of my favorite cakes to create. It initially started out as a carrot cake but of course being the usual unprepared and unpredictable me I didn’t have a good binder to use at the time except ripe bananas or any walnuts. I also didn’t prepare a cream cheese icing so I created a sugar-free date caramel buttercream frosting that was amazing! It paired perfectly with the banana pecan flavor! My mother and non-vegan family tried it and they loved it! The recipe will be in my upcoming ebook!
So just to let everyone know... I’m working on my first recipe e-book and a guide to transition to veganism e-book. I'm super excited to be working on my first e-cookbook. Its so exciting and frightenening all at the same time. I just want to offer you all somethings I learned along the way and what I've experienced over the years. Cooking and food has always been a passion of mines and I'm am over joyed to be sharing it with the world. This recipe features the Spelt Hamburger Buns with Lentil Sloppy Joes. It will be in the cookbook along with many other entrees, desserts, snacks and sauces. Homemade buns are sooo much better than store bought! These were made with spelt flour they were so light and fluffy!! The recipe will be in my ebook coming soon.

...guten Morgen ihr Lieben...weil die Küche bei uns heute mal kalt bleibt gibts etwas von gestern 😊 mein roter Spitzkohl wurde gestern zubereitet und zusammen mit der leckeren Kohlroulade von meiner lieben Mama und ein paar Kartoffeln wurde es ein richtig leckeres Sonntags-Essen 😊 den roten Spitzkohl habe ich zum ersten Mal gemacht und ich muss sagen eine sehr leckere etwas knackigere Alternative zum klassischen Rotkohl! Wird es auf jeden Fall ab jetzt öfter geben, denn auch kalt findet er super Verwendung im Salat...Foto folgt ❤️ habt einen entspannten Start in die Woche!!!

Potato latkes tonight!!
I health-ed mine up a bit (naturally) by adding zucchini and using gf flour. We served them with @nancysyogurt cultured organic sour cream and organic unsweetened apple sauce. Needless to say, they were a hit. Not a crumb was leftover! Happy Hanukkah!!
When I’m not slinging oils, I’m making labels for those that also sling oils. Adding another new typeface or two to the store this week, and will hopefully get a few new items listed before the end of the year. Traveling on this beautiful Sunday evening after a "work" trip with some of my best friends and reflecting on where I am at RIGHT now on my journey in LIFE. And these 5 incredible women and I realized something AMAZING while we were enjoying our time in the mountains together this weekend.
So, get this!!! We ALL come from EDUCATION backgrounds!
We were ALL TEACHERS!!!
I used to teach Special Education for almost 10 years before I had my first baby girl! I was also the DIRECTOR of EDUCATION at the DYSLEXIA INSTITUTES of AMERICA for a year. I was BLESSED to have my parents completely pay for my undergrad degrees in Elementary and Special Education. And I was able to fund myself when I received my master's degree in Reading Instruction, with the assistance of my husband, while he was in school getting his MBA that he took a loan for.
But, when I had my first baby girl, I had a panic attack. LITERALLY I was diagnosed with ANXIETY when I would leave her. And when it was time to go back to teaching, I just couldn't leave her. I wanted to continue to teach, but I also wanted to stay home with my baby girl and future kids that I knew we would have, like my mom did with me and my brothers.
So we decided I would stay home, we would live on a tight budget for a year and see how it went. Well, after a year, I still couldn't do it. Panic attacks, anxiety, and just the LONGING to stay home with my child. Life went on, the tight budget was kept, and I longed to be more, but I didn't know how to do it. We had more children, I stayed home and raised them and I continued to do what I thought was the RIGHT thing for me. But a part of me was missing, I felt a void, I felt a need for something more.
My 11 year "maternity leave" gave me 2 more beautiful children but left me stuck, having been out of the classroom for over 10 years and still a longing to provide. To provide for others and to provide for my family. And I was also longing to provide for myself. And with GRIEF not helping me at all, the void was even deeper. My self-worth was next to nothing. It was time to TAKE CARE of ME.

We were both covered in duck tape head to toe (from a lost bet), but those were the words that were quickly uttered at 1 am that solidified our togetherness. .
Q: How did you and your honey get together?
How do you recalibrate for the upcoming week? I rock a cocobun, cuddle as much as I can with the babies and try and get some lite impact exercising in, like yoga or Pilates. It gets me ready for Monday, like it ain't no thang! #newweekwhodis
I had the most random goofy moment this morning, and it unexpectedly filled me with such appreciation for all that we have. I was walking from the shower to my room and triped over the ribbon from a helium balloon. As I, in slow motion, half fell and half lunged the length of my hallway, I couldn't help but burst out laughing! What a blessed life I have; filled with a child's laughter, scattered toys and colourful balloons. I am one lucky and thankful woman.
had the best sunday as a family of 3 👪 which ended with the perfect dinner for 2 // italian wedding soup (turkey meatballs) and deeeeelicious sourdough bread from @agata.valentina

I don't care what you say...but there is nothing that looks better on someone than **CONFIDENCE**.💁🏻 Whether you are the staple "Pinterest mom" or you're rockin' the same shirt for the 3rd day in a row... Whether you've got washboard abs or if you have 50 pounds to lose... Whether you don't ever leave the house without your hair and makeup on point or you have a borderline abusive relationship with dry shampoo...
I mean it when I say the ONLY thing that matters is that you are working on growing your self-confidence DAILY. That you love the person staring back at you in the mirror...that you say and think positive things to yourself...and every day you strive to be better than the person you were the day before.
As for me? I won't ever be the girl who wears makeup every day or the mom who's child's socks always match. I tend to lock my keys in the car and always forget at least one thing at home...my life is far from perfect but you know what?! I love my kids and myself to the best of my ability every single day.
I focus on my abs...but only because I know I love myself best when I treat my body like i love it. And the abs are just a side effect of that. I focus on being a more "put together" parent every day...but only because it feels good to appreciate my own progress.
In reality...it really doesn't matter how things "look." What matters is my confidence in myself and that everyday I try and instill those same attributes to my little's. THAT is one of the most important lessons I can teach them. 💗
