On average people gain 5-10 pounds over the holidays, did you know that?! Some may think that’s nothing, while others can’t even begin to comprehend gaining anymore weight - but it happens. Since I KNOW I am going to be dipping into the treat jar next week, I need to make sure this week I am eating clean and eating right. Today’s meal prep looks delicious AND nutritious.
Carrots, sweet potatoes and baby potatoes all seasoned with coconut oil and some ranch spice, 2 packages of ground turkey cooked, honey ham cooked and cut, plus we have fruit and protein bars to grab and go!

Want an easy way to get your omega-3 in? And also while ditching all the mercury found in fish? Try a teaspoon of flaxseed powder and 1/4 cup of walnuts daily. This is the simplest best way to get omega-3s!! Fish oil pills have concentrated mercury and other contaminants like PCBs. Our body can naturally convert short omega-3s found in plant sources into long omega-3s found in animal sources. Flaxseed powder can be added to smoothies, cereals, oatmeal bowls (as shown in the picture), and basically anything!!
Finished product was more of a stew than a soup, but hey, it was delicious anyways! Kevin used carrots, turnips, potatoes, red and brown lentils, garlic, home made chicken stock, roast chicken, celery, onion, leek, and probably a bunch of other tasty stuff I don’t even remember!
