Homemade beetroot soup, topped with wilted spinach, crispy tempeh (marinaded in tamari + spices then baked in the oven), sprouted lentils, black + white sesame seeds and a splash of coconut cream. 
So easy to make, delicious and filling. 
The recipe will be up on my blog later today/tomorrow (slightly sick of my computer screen after a few crazy days of uni deadlines so probably tomorrow, or maybe the day 😂). For some reason I never make soup but I have the feeling this is the start of a new thing, this was so good. And look how pretty 🌿🌟

I never once imagined a way of having money work for me until I began educating myself on the subject. I began getting my feet wet through this method of investing in I Savings Bonds. I felt comfortable starting here because there is virtually no risk involved and yet still earn interest. This money is only federally taxed which is awesome. I transfer $25 each week and let it grow on its own. There is no high maintenance needed from my end which is also great. I still have a lot of time to focus on other things. Some may not like this, others may not agree with me, and others may find it helpful and that is ok. We are here to support each other, network, and advise one another to achieve the same goal. Financial independence. This is only the beginning of my financial journey and will soon expand into other areas where money continues to work for me. I am always open to your feedback! 🙌Yes cuz sugar/carbs are not the problem, carbs do not make you fat and aren't bad for you neither.
People being afraid of fruit cuz are high in sugar and "sugar makes you fat"🙈or consuming only low carbs fruits, that is sooooo wrong. Everyone should understand that fruit is the most precious and nutritious food on the planet, no one ever got fat by eating fruit or veggies so why wouldn't you eat them? why would you "portion control" your fruit and veggies intake? Eat them, eat as much as you want and see the magic happens. You won't get fat, you won't get sick, YOU WILL FEEL AMAZING
(Of course you need to keep the cooking healthy, eating chips cuz are potatoes is not healthy, fried veggies loaded with oil doesn't count 🤣)

We were going to try out the new gluten free pizza crust from @traderjoes, but our local store was all out due to a potential product problem😮😳. Plan B was to just turn all the pizza toppings into a pasta dish! I have to say that it turned out really well! All we did was toss some gluten free brown rice + quinoa pasta with black olives, red bell peppers, zucchini, and eggplant. Then we topped it with some marinara sauce, and had a delicious dinner nonetheless!🍝

ITALIAN STUFFED PEPPERS with Turkey and Quinoa .

1/2 pack ground turkey 
2 green bell peppers, cut in half
1 cup chopped spinach
1/2 red onion diced
1/2 zucchini diced
5 mushrooms diced 
1/2 cup cooked quinoa 
6 cloves garlic minced 
1 tsp crushed red pepper
1/2 tsp basil
1/2 tsp oregano
1/2 tsp parsley
1 tsp fennel powder
Salt and pepper to taste 
1 cup shredded Italian cheese
1 jar organic pasta sauce .

Preheat oven to 450 degrees. 
Heat up saucepan with olive oil and add ground turkey with salt, pepper, and half the garlic. Brown the meat and set aside. 🍗

Add all diced veggies except spinach. Add all seasonings. Cook until soft 5-6 minutes. Add spinach and cooked quinoa. Add salt and pepper. Add cooked turkey. 🍅

Stuff green peppers with turkey filling mix. Pour 2/3 jar of sauce on bottom of baking dish. Place stuffed peppers on top of sauce. Add more sauce to the peppers and top with cheese. 🧀

Cover with foil, poke a few holes on top and bake for 30-40 min. Remove foil and let broil for 2-3 minutes. Serve as is or with a side salad or garlic bread. Enjoy! 😋

Risotto de champignones y brócoli 🍚

Ingredientes🍽
1 cebolla picada
2 ajos picado
½ vaso de vino blanco
Arroz para risotto (ej 500gr)
Caldo de verduras el doble que la cantidad de arroz (ej 1litro)
200gr champiñones
300gr de brócoli cocido 
1cda de queso untable yo usé @casancremarg 
Queso en hebras yo usé @lapaulinaar 
Sal con moderación, pimienta 
Preparación
Rociar la cebolla picada, el ajo picado y el arroz con rocío vegetal y rehogar en una olla precalentada (usé mi olla @essenoficial). Cuando el arroz se vuelva opaco y la cebolla, transparente, agregar el vino. Esperar a que se evapore, incorporar el caldo.
Aparte, picar los champiñones, cubrirlos con rocío vegetal y rehogarlos en una sartén, cuando estén dorados incorporar el brócoli, apagar el fuego y reservar. 
Cuando el arroz esté a punto, incorporar el queso untable, los champiñones, el brócoli y el queso en hebras. Salpimentar. Dejarlo descansar durante unos minutos y servirlo yo decoré con hojas de menta.

Today I honored my soul by taking a break to go hiking🌄 I'm lucky enough in Portland to have Forrest Park 10 minutes away from me, so it makes a quick hike easy to do. I left with a clear mind, and nourished soul💚 Which actually allowed me to be even more productive afterwards.

How beautiful is this bowl! It sounds silly but I think the presentation of a meal makes so much difference to how much you enjoy your meal so I tried to incorporate lots of colours with this bowl and of course nicely presented it for the gram. This is a #vegetarian meal with my main protein source as chickpeas (which are so bomb by the way, try them if you haven't before) but you can swap the chickpeas for chicken breast or even hard boiled eggs, you could use any vege you want too! Inspired by @thehappypear, for this soup, I baked the Red Kuri squash in a 400°F oven for about 40min.⏰ While the squash was baking, I chopped up some carrots, potatoes, celery, ginger, & fresh sage, & simmered it all over low heat in some filtered water. 
Once the squash was baked, I added it to the soup pot, including majority of its peel. Added some salt, & blended it to smoothness using an immersion blender.

Oh my, I loved this soup for it's taste & healing properties.😋 Some of the kids found it a bit spicy because of the ginger, but there is nothing a little avocado can't fix!🥑 Hope you give Red Kuri a chance, whether in soups or simply baked - I’ve definitely become a fan!👍

Why I Started My Instagram Account📸

For those of you that don’t know, I started my account for fun in 2013 under the name, “thecleanfoodiediaries”. If that doesn’t say much about my mindset at that time, then idk what does. Who has been here from the early days?

I was a freshman at the University of Vermont and was going through a time of extreme health issues with my relationship with food + body image. I started it to start keeping myself accountable, documenting meals I liked to make and that were dorm friendly! I wanted to start my journey to “finding myself again” and physically seeing the changes I was making

I had zero intention with my account. I wanted it to be completely private. I hid it until I accidentally linked it to my Facebook page 😂🙈

Sure, just a small quick story, but a lesson that I think we all forget. HAVE FUN. I think we all get a little too hard on ourselves. My whole explore feed is filled with “posed vs. unposed” pics because that’s “what is in”. Why have an account if you’re gunna just follow everyone else and just keep using the same trends to propel yourself? I think the idea of Instagram, especially in fitness, has come to this: some people with bigger followings believe this makes them eligible to act a certain way, treat others without respect, and receive certain things. Lol no. It has come down to trends that give no value, but things that only get high engagement

🌿 Preheat oven to 425 degrees F.
🌿 Toss peeled, cut Brussels sprouts in olive oil and sea salt.
🌿 Add cherries or cranberries if you have them (or just toss the Brussels sprouts).
🌿 Spread them out on parchment paper on a cookie sheet.
🌿 Put the sheet in the oven for 15-20 minutes, depending on how crispy you like them.
🌿 Take sheet out of the oven and let cool for a few minutes. 🌿 Enjoy!

✨cabbage✨kale✨broccoli✨carrots✨mesclun mix✨iceberg lettuce✨cilantro✨red & green peppers✨cherry tomatoes ✨sauerkraut ✨homemade vegan parmesan cheese
👉🏼tip #1: grate carrots on the slicing side of your grater. In a bowl combine carrot slices, apple cider vinegar and pink Himalayan salt and let sit for around 30 min. Tastes like delicious juicy pickled carrots as the salt draws out all the moisture in the carrots👌🏼
👉🏼Tip #2: creat different layers, textures & sizes when chopping up your veggies to create interest when eating it. For example a big hunk of cabbage in your salad isn't going to taste very pleasant, but chopped finely into thin strips gives your salad a nice bit of crunch.
👉🏼tip #3: the dressing makes all the difference! Instead of buying ready made bottles of salad dressing that are loaded with preservatives, gluten and sugar make your own it's so easy and adds much more nutritional value. In this salad I added: (keeping in mind it was a bowl that served 4)

Looking for a delicious healthy snack option for you and the family that will quench those sweet tooth cravings? Than look no further! Introducing my "Choc Top Cashew Bars" 🤗

BASE
1 cup coconut flour
1 cup Cashew spread
1/2 cup pure maple syrup/honey
1/4 cup coconut oil
1 tsp vanilla essence
TOPPING
200g 90% Lindt chocolate 
2 Tbs coconut oil

Combine all base ingredients into a food processor and blitz together until it forms a dough. Press into a lined square slice tray.
Put the chocolate and remaining coconut oil into a microwave safe bowl and zap for 30 seconds. Pull it out and give it a mix before putting it back in for another 20-30 seconds. Stir until it's nice and smooth. Pour the chocolate mixture over the slice and spread evenly before placing in the fridge for a minimum of 2hrs. This recipe will serve 10 large bars or 20 snack size bites.

Put the chocolate and remaining coconut oil into a microwave safe bowl and zap for 30 seconds. Pull it out and give it a mix before putting it back in for another 20-30 seconds. Stir until it's nice and smooth. Pour the chocolate mixture over the slice and spread evenly before placing in the fridge for a minimum of 2hrs.
