Processed and packed with no nutritional value but because they are classed as 'low fat' of 'diet' everyone is willing to consume them.

Apologies for my lengthy absences as of late! With board exams, finishing work and the big move to London coming up, I am finding myself at serious loss for time! Besides that, what is your take on nighshades? In case you aren't familiar with the term, nightshades are part of the solanaceae family, and include foods such as eggplant, tomato, white potato and peppers. However, if you suffer from food sensitivities, allergies, autoimmune disease, inflammatory bowel disease, leaky gut, arthritis or chronic pain, night shades might actually be contributing to your symptoms, as nightshades create inflammation in the body. Now, I have an autoimmune disease and (gasp) ate eggplant last night. I know my body pretty well and I actually react more strongly to brown rice and chickpeas than I do eggplant. Go figure. 🍆🍆🍆🍆
However, I am not here to demonize nightshades! These foods each have their own unique properties and health benefits. For example, eggplant contains a phytonutrient called nasunin, which is an antioxidant that has been shown to protect neuronal cell membranes from damage. However, if nightshades don't work for you, you can ignore the rest of my post, however, if you are keen, than read on for a creamy, garlicky and rich baba ganoush recipe (with inspiration from @kenjilopezalt and @ottolenghi). This recipe will serve 6-8 as an appetizer (for nutrition info, DM)

Grill 3 eggplants on bbq for about 30 minutes, turning every 7ish minutes and then wrap in foil for about 15 minutes. Next, scoop the eggplant flesh out into a salad spinner and gently spin it to remove excess water. Transfer eggplant to a bowl and grate in three garlic cloves, all the juice from half a lemon and a teaspoon of flaked sea salt and mash together with a fork until a paste is formed. While mashing and stirring, add in three tablespoons of tahini and stream in 1/3 cup of extra virgin olive oil. Finish it by adding in tons of freshly chopped parsley and mint. Top with a guzzle of olive oil, pomegranate seeds, sprinkle of salt and more herbs!

Comparto con vosotras/os una variante de la tarta de queso que suelo hacer con más frecuencia. Es el postre preferido de mi marido, asi que siempre me gusta cambiarle o incorporarle alguna cosita nueva. En este caso le he metido mermeralada por dentro y le ha encantado. ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖
✖️R E C E T A ✖️. T A R T A  D E  Q U E S O 
D E  M E R M E L A D A:
Ingredientes:
- 300gr tipo philadelphia light.
- 200gr queso batido 0%.
- edulcorante al gusto.
- 6 láminas gelatina.
- 1 huevo.
- Esencia de vainilla.
- 100gr leche almendras zero @almondbreezees .
Ingredientes para base:
-125gr galletas integrales sin azúcar.
- 30gr margarina light (también se puede utilizar aceite de coco o crema de cacahuete por ejemplo).
Pasos:
1. Poner en el fuego los quesos, la leche, el edulcorante y la esencia de vainilla y remover hasta que se disuelva bien.
2. Sacar del fuego y batir con ma batidora hasta hacer espuma. 
3. Añadir el huevo y las 6 láminas de gelatina previamente hidratadas y volver a batir hasta que salga nuevamente espuma y volver a poner en el fuego unos minutos.
Mover con frecuencia para que no se pegue.
4. Sacar del fuego y mientras se enfria algo, hacemos la base.
5. Triturar las galletas y mezclar con la margarina derretida. Poner sobre el molde y apretar.
6. Verter el contenido sobre la base con cuidado para que no suban trozos de galleta.

Comparto con vosotras/os una variante de la tarta de queso que suelo hacer con más frecuencia. Es el postre preferido de mi marido, asi que siempre me gusta cambiarle o incorporarle alguna cosita nueva. En este caso le he metido mermeralada por dentro y le ha encantado. ➖➖➖➖➖➖➖➖➖➖➖➖➖➖➖ ✖️R E C E T A ✖️. T A R T A D E Q U E S O D E M E R M E L A D A: Ingredientes: - 300gr tipo philadelphia light. - 200gr queso batido 0%. - edulcorante al gusto. - 6 láminas gelatina. - 1 huevo. - Esencia de vainilla. - 100gr leche almendras zero @almondbreezees . Ingredientes para base: -125gr galletas integrales sin azúcar. - 30gr margarina light (también se puede utilizar aceite de coco o crema de cacahuete por ejemplo). Pasos: 1. Poner en el fuego los quesos, la leche, el edulcorante y la esencia de vainilla y remover hasta que se disuelva bien. 2. Sacar del fuego y batir con ma batidora hasta hacer espuma. 3. Añadir el huevo y las 6 láminas de gelatina previamente hidratadas y volver a batir hasta que salga nuevamente espuma y volver a poner en el fuego unos minutos. Mover con frecuencia para que no se pegue. 4. Sacar del fuego y mientras se enfria algo, hacemos la base. 5. Triturar las galletas y mezclar con la margarina derretida. Poner sobre el molde y apretar. 6. Verter el contenido sobre la base con cuidado para que no suban trozos de galleta. 7. Poner con la ayuda de una cuchara, mermelada (sin guardar ningún orden). Avocado Shrimp Salsa Recipe

This Avocado Shrimp Salsa is a party favorite! Loaded with shrimp, avocado and a surprising ingredient! Easy, excellent avocado shrimp salsa recipe.
~
1 lb raw shrimp, peeled and deveined*
Salt and black pepper to taste
1 Tbsp olive oil
Juice of 3 medium limes
2 medium/large avocados
½ english cucumber
3 medium (or 4 roma) tomatoes
1 small onion, finely diced
½ bunch Cilantro, chopped
Tortilla chips and Tabasco sauce to serve
Instructions

Season shrimp lightly with salt and pepper. Place a large skillet over medium high heat. Once the pan is hot, add 1 Tbsp olive oil. Add shrimp in a single layer and cook 3 minutes total, turning once halfway. Saute just until cooked through then remove from the pan. Transfer to cutting board, coarsely chop and place into a large mixing bowl.
Squeeze the juice of 3 medium limes over the shrimp, stir and set aside to marinate while you prepare remaining salsa ingredients.
Dice cucumber, tomato and avocado and add them to the mixing bowl with shrimp.
Finely dice onion and chop ½ bunch of fresh cilantro. Add to the mixing bowl then stir together all of the ingredients until well combined and serve. We love this served with hot sauce (such as Tabasco) and tortilla chips.

Well, I had a few ideas for workshops and I had to pick one to start with. I have decided to ask myself "what would be an interesting topic for a workshop?".⠀

I would have signed up immediately for a workshop like this a few years ago - when my diet, lifestyle, routines, self-care were quite different from how they are now!⠀

And I'm not alone in this - since John Picard decided to team up with me. Something that maybe you still don't know about me: I'm a Lomi Lomi massage therapist 🌺 trained here in Ireland with a wonderful teacher (Louise Kleu from Lomi Lomi Ireland) and was during this training that I have met John. He is a great, experienced, and caring massage therapist. Just got back from a walk and was STARVING!!!! So I whipped up this bowl with all the ingredients I had in my fridge. It's fast, easy, healthy and most importantly delicious! Kale, fresh corn, spinach, chicken breast, roasted red peppers and roasted chickpeas. Topped it off with some lemon juice, olive oil and balsamic vinegar and it is 🙌! Who else loves nut butter?! I never get to go to @traderjoes because the only one in the state of Maine is in Portland, so I had to take advantage when I was there this past weekend! I don't usually buy a lot of jars of nut butter (because most are $$), but @traderjoes had such good prices for these! .

Pictured is the mixed nut butter (basically a wayy cheaper version of that brand NuttZo), sunflower seed butter, tahini, and peanut butter! Lol I think I'm stocked up for a while 😂Has anyone tried these before? Oh and of course, I got so distracted by the nut butter section that I COMPLETELY forgot to get that "everything but the bagel" seasoning that everyone says is so good 🤦‍♀️ But oh well, next time 🤗

Woke up early this morning to go for a little run as I am trying to get my body used to early exercise before I go back to University in September and join a gym. Can't wait to start lifting weights and to become stronger, healthier and happy. So far healthy eating is going well, but I am finding it harder to snack on healthy foods too as I have a sweet tooth, however, today I made some 0% fat strawberry frozen yogurt and I loved it! Summer evening dinner, locally grown courgette stuffed with onion, garlic, courgette pulp, tomato, rice and tapenade.

Waiting to be baked! 
Recipe:

Scoop out the pulp and baked covered courgette halves at 190 for 20mins (until slightly softened). Meanwhile sweat half a chopped onion and one crushed garlic clove then add 6 roughly chopped tomatoes and the pulp of the courgette. Summer for 10mins. Add your rice (pre cook!) and 1tbsp of tapenade, splash of balsamic.
