These protein packed chicken burrito bowls are brimming with so much delicious fresh flavor. They are made up of quite the list of ingredients; quinoa (which is cooked in chicken broth for more flavor), a simple seasoned and grilled chicken breast, black beans, corn, cheese, and that irresistible avocado salsa.

Serves: 4-5
INGREDIENTS:
1 1/2 cups dry quinoa*
3 cups low-sodium chicken broth
1 Tbsp ancho chili powder
1 1/2 tsp ground cumin
1/4 tsp garlic powder
Salt and freshly ground black pepper
1 1/2 lbs boneless skinless chicken breasts
1 1/2 Tbsp olive oil
1 2/3 cups frozen corn , warmed (optional)
1 (14.5 oz) can black beans, warmed along with liquid from the can then drained (optional)
Mexican blend cheese or queso fresco (optional)
Plain Greek yogurt or light sour cream (optional)
Avocado salsa
3 medium roma tomatoes , diced
1 1/2 medium avocados , diced
1/2 cup chopped red onion , rinsed
1 jalapeño , seeded for less heat if desired and minced**
1 clove garlic , minced
2 Tbsp fresh lime juice
2 Tbsp olive oil
1/4 cup finely chopped cilantro

Gluten Free savory muffins 🤤 
Ingredients:
* 1 1/2 cups almond flour
* 1/4 cup coconut flour
* 1/2 tsp salt
* 1 tsp baking soda
* 3 eggs
* 1/4 cup olive oil
* 2 tbsp almond milk
* 4 sliced of bacon, chopped
* 2 spring onions, chopped
* ¼ cup parmesan cheese

1. Preheat oven to 180 degrees
2. Line muffin tin with olive oil
3. In a bowl, mix almond flour, coconut flour, salt and baking soda
4. In a separate bowl, beat eggs, almond milk and olive oil
5. Combine the flour mix and egg mix, stir
6. Add bacon and spring onions, stir until combined
7. Place mix evenly in muffin tin (I made 10 muffins)
8. Top with parmesan cheese
9. Bake for 25 minutes 🤗

The recipie I promised you guys 👉🏽 healthy slow cooker buffalo chicken sweet potatoes 😍😛 For the slow cooked chicken, mix 🍗1/2 cup of siracha (I used @fixhotsauce) 🍗1/2 cup of BBQ sauce (I used calorie/ sugar free @waldenfarmsinternational) 🍗2 TBS of coconut oil 🍗 1 TSP garlic powder 🍗 1 TSP sea salt 👉🏽 mix together and pour on top of 3 chicken breasts, cook on HIGH in crock pot and cook for 2 hours or until chicken reaches 165 degrees. Remove from crock pot, shred chicken then put back in crock pot (in the remaining sauce left in the pot), leave in for 30 minutes. For the healthy topping, mix 1/2 cup of PLAIN Greek yogurt with 1 TBS Apple cider vinegar plus 1 TBS of pepper, top with chopped green onions and ENJOY 😋

Making things that look beautiful take time and effort, and today, I didn't even have the energy to cook for myself. I thought I was just gonna have a bowl of reheated white rice. But because this "rice bowl" turned out to be so quick and hearty, I wanted to share. .
-half cup of white rice, which you can make in advance, freeze, and then microwave .

Para las tostadas (2 personas):
🍞4 tajadas de pan integral 🍳1 huevo + 1 clara
🍶1/2 taza de leche de almendras @milsmilk 🥄Canela, esencia de vainilla, stevia al gusto
🥄1 cdita de peanut oil @amerindiasvital

Mezclan todos los ingredientes menos el aceite de maní, y remojan en pan en la mezcla, en una sartén ponen el aceite de maní y ponen el pan hasta dorar por ambos lados. 
Como toppings pusimos 🥜PB2 @amerindiasvital 🍇blueberries y una pizca de granola! Feliz día!!

So this was my lovely little dinner, yes I always use little plates for every meal because it's the best weight loss tip EVER! Reason being; if you're plate looks smaller that means smaller portions but it looks like allot of food, so on a normal sized dinner plate this wouldn't look like allot of food but in this tiny plate it's like piled on there good! So I've always had a problem with portion control and this too has helped me so much but anyways to the recipe!!
Garlic chicken, vegetable rice and a baked potato, yep that's it! The only prep you really have to do it the chicken, I mean the rest, pouring the rice into a pan and heating up a potato I mean.. it's pretty basic stuff so the chicken. You want to defrost one chicken breast and salt and pepper that guy. Then you want to finely dice 2 garlic cloves, if you don't like garlic as much as me(a lot) you can always just use less garlic! Then I heated up my frying pan and threw that chicken in there and let it chill for a bit, don't be tempted to move it around etc, just leave it be and the chicken will thank you... that sounds weird okay. So when you turn over the chicken after 5 minutes on a medium heat the garlic will have made a delicious charred crust in the chicken and oh lord. The taste sensation. Like o know it's only garlic on the chicken but it's so flavourful and amazing. -1 cup of frozen strawberries⠀
-1 cup of papaya slices⠀
-1/2 cup of mango chunks⠀
-1/2 cup of pineapple slices⠀
-3 guavas, chopped⠀
-1 pear, peeled⠀
-1 frozen banana⠀
1 cup of coconut water⠀

Buenos dias yo a la semana hago 2 dias bajos en carbohidratos en estos dos dias:
👉 no consumo carbohidratos complejos
👉 modero mi consumo de fruta a solo mis primeras comidas 👉 consumo muchos vegetales verdes al grill y crudos 👉 agrego 10 gr de proteina y 10 gr de grasa a mi consumo regular

Asi que el incluir alimentos dulces puede ser todo un reto 👊 pero me las ingenio porque 🐽 🍫

La receta del pastel es la misma del red velvet de betabel que puse la semana pasada en jueves #lowcarb haha solo que ahora para el relleno use: 
Yogurt griego+requeson+vainilla .
Y para la cobertura use 1 chirrito de leche de almendras y 1 cucharada (5g) de cocoa sin azúcar adicione stevia.

Tip si ustedes refrigeran esta receta 😍 siento que queda 10000000 veces mejor porque el chocolate queda durito y ashi pero pus yo asi como lo preparo me lo chuto 💪🍫

.tortilla de patata light:
1. Pelais y cortais las patatas y la cebolla cómo hariais para una tortilla convencional y las ponéis en un bol de cristal.
2. Ponéis una cucharada sopera de aceite, sal al gusto y 2 cucharadas soperas de agua. 
3. Tapais el bol con film transparente y le hacéis 3 ó 4 agujeros.
4. Lo metéis 5 minutos al microondas a máxima potencia. 
5. Sacáis con cuidado de no quemaros y le dais unas vueltas para que se cuezan por igual. 
6. Metéis 5 minutos más con el film a máxima potencia.
7. Una vez pasen los 5 minutos lo mismo y 5 minutos más. 
8. Sacáis del micro y machacais un poco la patata. 
9. Mezclas con los huevos y la cuajais cómo una tortilla normal ( yo pongo en la satén una cucharada de aceite más para que no se pegue y no batom demasiado el huevo para que no salga muy seca). Esta buenisima y no se nota diferencia con la tradicional en cuanto al sabor pero si en cuanto al uso de aceite y el lio que se arma al hacerla.

Receta para 1 pieza🌮

Para la Arepa mezclar:
-1/3 de harina integral (o puedes usar harina de avena).
-1 clara de huevo🥚
-1 pizca de sal. 🔸Hacer la mezcla en forma de bolita y ponerla al comal. Asar unos minutos al sartén.

Never forget to rest. The past 3 weeks I took new challenges and worked even more as a Zumba and Groupclass instructor (what I really LOVE). But because of that I have had very little time to workout for myself and to eat healthy. But still I've tried to workout 2 times a week. Since last week I have realized that these overfull weeks are killing my body and mind. Now my new goal is to rest more, so that my body can recover and so that I will feel better in my skin. From there on I will build up again. ~ Try to listen to your body. You have one unique body take care of it ♡ ~

Rocky road waffles for breakkkky 😛😛😛 I make my waffles using 1/2 scoop of @questnutrition cinnamon crunch protien, 1/3 cup of oat flour (just put oats in the blender ➡️ oat flour), 1 egg, and 1/4 cup of almond milk and then today I added @waldenfarmsinternational calorie free marshmallow dip in for fun and topped my waffles with @buffbake rocky road peanut buttter and some waldens farms calorie free maple walnut syrup

Kale Pizza Crust 
Ingredients: 
4 Cups of Organic Kale (trimmed and washed)
2 Organic Eggs 
2/3 Cups Gluten Free Panko Crumbs 
1 Cup grated cheese 
Salt & pepper to taste 
Toppings:
Shredded Mozzarella 
Avocado 
Cherry tomatoes (cut in halves) 
Fresh Basil 
Directions:
Preheat oven to 375 degrees. In a food processor, add kale and pulse until finely chopped. 
Add all remaining ingredients and process until it forms a sticky pizza dough texture. 
Place dough on a parchment lined baking sheet, use your hands to flatten the “dough” until its even.

Bake for about 15-20 minutes or until kale crust is firm. Add all Toppings and bake for another 5 minutes. Cut a slice and enjoy!

Sweet Potato Egg in a Hole

Ingredients: 
One sweet potato @inspiralized 
1/4 cup egg whites 
1 tablespoon coconut oil
2 eggs yolks 
1/4 teaspoon salt 
Pepper to taste

Instructions:

Heat 1 Tablespoon of coconut oil over medium heat and add spirlized sweet potato, cook until soft 
Separate the sweet potato into two piles and add equal parts of the egg whites to each pile. Create a pocket or “hole” in the middle of the pile (this is where the yolk will go) cook for about 2 minutes. 
Add one Egg Yolk to each hole and cook to desired heat. I typically cook for an extra minute and a half for a runny egg. Enjoy!

Seared Scallops on top a Quinoa & Apple Salad 
Ingredients:

For Butternut Squash Puree; 
1 Small Butternut Squash; cut into 1/2 cubes
Sunflower Seed Oil 
1 Tablespoon Butter 
Garam Masala 
For The Quinoa Salad; 
1 Cup Quinoa 
1 Apple; diced 
2 Tablespoons Chopped Fresh Parsley 
1 Lemon 
2 Tablespoons Flaxseed Oil
Salt and Pepper to Taste 
For The Scallops;
1 Pound Sea Scallops
2 Tablespoons Butter 
1 Tablespoon FlaxSeed oil 
Black pepper 
Directions:
Preheat Oven to 375 Degrees F. Drizzle cubed butternut squash with oil and sprinkle with salt and pepper. Roast for 25-30 Minutes. 
While Butternut Squash is cooking, heat dry quinoa in a saucepan over medium heat to toast for 3 minutes, stirring to keep from burning. Add vegetable stock and bring to a boil. Turn the heat to low and cover, cook for about 15 minutes or until all of the fluid has been absorbed. Take the quinoa off the heat and let it rest for about 5 minutes.

Transfer roasted butternut squash, 1 tablespoon of butter, 1/2 teaspoon garam masala and salt to blender or food processor. Blend until you have a smooth texture. 
Transfer cooked quinoa to a large bowl, add diced apple, chopped parsley, juice of lemon, and sunflower seed oil. Salt and pepper to taste. Combine until everything is mixed together. Set aside. 
Dry scallops with a paper towel and season with black pepper. In a large skillet, heat oil and butter on high heat. Once butter has filled melted, add scallops. Cook for 3 minutes, using tongs, flip the scallops and cook for another 2 minutes. 
To Plate: Spoon 2 Tablespoons of butternut squash mixture onto the plate, top with desired amount of quinoa followed by the seared scallops. Enjoy right away! *Hint- Scallops do not save well, be sure to eat right away.

Ingredients:

2 Tablespoons Peanut butter (or almond) 
1/4 Cup Soy Sauce or Tamari
3 Cloves Minced Garlic 
1 Tablespoon Grated Ginger
Juice from One Lime 
1 Tablespoon Rice vinegar 
1 Tablespoon Raw Honey 
Pepper to taste 
For The Pad Thai: 
2 Tablespoons Avocado Oil
1 Red Bell Pepper, Sliced thin 
1/4 Head Purple Cabbage 
1 Cup Shredded Carrots
1 cup Edamame 
1 Package Kelp noodles (drained and rinsed)  Instructions: 
In a medium size bowl, combine all sauce ingredients; mix until smooth. Set aside. 
In a large skillet or wok, heat to medium and add oil, bell pepper, cabbage, carrots and edamame; cook until veggies has softened. 
Add kelp noodles and sauce, stirring until sauce is evenly combined. Cook for about 5 minutes or until kelp noodles become desired consistency. Enjoy!

Ingredients: 
Shrimp Marinate:
12-14 Shrimp, deveined and shelled 
Juice from one Lemon 
Sprinkle of Cayenne Pepper 
Pinch of Salt & Pepper 
Curry Sauce:
2 Tablespoons Flaxseed Oil 
1 Red Bell Pepper, Diced 
1 Medium yellow onion, Diced 
1 Teaspoon Ground Coriander
1 Teaspoon Curry Powder 
1 Teaspoon Turmeric
1, 14 Ounce Can Diced Tomatoes (with juice) 
1, 14 Ounce Can Unsweetened Coconut Milk 
Large Handful Spinach 
Salt and Pepper To Taste 
Cooked Brown rice (for serving) 
Instructions: 
In a bowl, mix together shrimp and marinate, set aside 
Add coconut oil to a skillet or wok over medium heat; add onion and bell pepper letting the veggies cook for about 4 minutes or until they soften. Add garlic and sauce for an additional minute. 
Add Coriander, curry, turmeric and Tomatoes with sauce, stir and let simmer for about 15 minutes. 
Add coconut milk and continue to stir for about 10 minutes, salt and pepper to taste. 
Add shrimp and spinach and allow to simmer for a few additional minute, until shrimp is cooked through. (they will turn pink and curl up) 
To plate: Add cooked brown rice to a bowl and top with Shrimp curry. Enjoy!
