The end is in sight! After another crazy week (the first of many to come 🙃) I am glad to know that I will wake up tomorrow to Friday ! At the minute freezer meals are my saviour - just take it out in the morning and heat it up in the evening and whip up some fresh veg (I.e. Defrost some peas lol). Tonight winding down with a chickpea and carrot tahini, with cous cous, peas, hummus and some roasted aubergine 🍆

We aten bij Zoetelief in Den Bosch. Het was gelegen in een gezellig straatje met alleen maar restaurantjes. Van binnen was het ook super mooi en heel gezellig! En dan die kaart, kiezen was echt niet makkelijk. 😂

What a stunner of a day today ☀️ Decided to go out for a quick run with the ol' Roxy roo. Since it was a shorter run, I tried to keep a fast pace for the whole run (did the first kilometer in 5 mins) However, Roxy had other ideas. Probably a combination of the heat and the millions of other people walking their dogs and her constant attempts to eat the ducks means I was literally dragging her for most of the run 😂😂 If you've ever done banded sprints this is what it felt like except with a 31kg dog. 😫 At least my quads and glutes got a good workout! 😂 .

Was ok, flavour was great texture was.. difficult. May try and blitz the scan bran first. But so filling! I'm using spelt pasta as the gluten in spelt have more soluble structure than conventional wheat, which many find easier to digest - including me!

Tonight's dinner 😋 Being a student it is thought that it can be difficult to be healthy or to have a good diet as 'healthy foods' are so expensive! But this just isn't true! Yes if you decide to go for top of the range for everything, then it will be expensive...but come on that goes for everything in life! If you shop around and put a bit of time into your meals you can make deliciously nutritious meals on a budget! 
Tonight I have a pre-made lentil bag from @waitrose (but it was but 2 bags for £3.50 and there is enough for 4 big meals out of them so less than £1 a meal) and then some mushrooms (£0.90 a punnet) and tender-stem broccoli (about £1.50 from @aldiuk for a pack and only 1/6th used in this meal) and some frozen tuna steaks from @tescofood (on offer when I brought them so about £0.80-£0.90 per steak) so all in all it cost me less than £5 this meal and was really nutritious 🙌🏼 #flexwithbex .
