Feeling a little under the weather? Did you know that the strength of our immune system is affected by the health of our gut?
One of my top ways to keep colds away during the winter months is to focus on gut health.
Today was all about comfort as it is raining pretty heavily in Vancouver. I whipped up this gut healing soup in less than 30 mins! Give it a try:
In a pot:
Sautee onion and garlic in avocado oil
Once onions are translucent, add one head of chopped cauliflower
Sautee until cauliflower is lightly brown
Add in 1 tbs tumeric
Dash of S+P
Sautee a little more until cauliflower begins to soften
Add 2 cups filtered water and simmer
Once cauliflower is very soft - blend with a hand blender in the pot
Garnish with parsley and your good to go!

How to make:
Shred the frozen bananas in a food processor using the top grater.

2 cups of sunflower seeds⠀
2 cups of desiccated coconut⠀
1/2 cup of raw cacao powder⠀
1/3 cup of tahini⠀
1/2 cup of maple syrup⠀
1-2 tbsp of water⠀
1 tsp of vanilla⠀
pinch of salt⠀
8 drops of wild orange essential oil (food grade quality) or zest of 2 oranges.
1. Line a square tin with baking paper.⠀
2. In a food processor, mix all the ingredients together starting with the seeds and coconut together and then adding the wet ingredients. ⠀
3. Press the dough in your tin with your hands pressing firmly. 4. Leave to set in the fridge for one hour then cut into squares.⠀
5. Best kept in the fridge. Enjoy!

I personally think pumpkin pie filling is the best part anyway. That's where all the flavor is! If you're looking for ways to eat healthy this holiday season while still enjoying all the traditional favorites, this is a super easy way to save a substantial number of calories. Ditch the crust.
Typically, crusts are prepared with butter or shortening & white flour (i.e. high in fat but very little nutritional value) while the filling is made with pumpkin, which if full of fiber, vitamins, and antioxidants. There are tons of healthy recipes out there (refined sugar-free, etc.) so you can maximize the nutrients in this dessert without sacrificing any flavor. That goes for crusts too! Lots of alternatives to white flour & shortening.
Calories will vary by recipe. The numbers above based on Libby's recipe, 1/8 of a 9" pie.

1 cup ripple
1/4 cup Trader Joe’s coconut cream
1/4-1/2 avocado (depending on the size of the avocado)
1 tsp imitation rum
1/4 tsp nutmeg
Couple shakes of cinnamon
Monkfruit to taste (or sweetener of choice)
The sweetness is essential in egg nog! Be sure to use enough sweetener but obvious not too much!
