Happy Wednesday everyone! Today was pre-op day, labs, ultrasound and found out results from wearing the heart monitor a few weeks back. My blood work went great the tech was able to get blood the first time which was awesome considering most people can't find my veins. They have me scheduled to go in at 6 a.m. now for my surgery. My heart monitor found I was having episodes of tachycardia or fast heart rate. For now we have decided to see how things go after having baby as I never had a problem with this before. Hoping it's a fluke and I don't have to start on the heart medicine my doctor suggested...:( So for now my mental countdown is on...I have tomorrow then Friday morning it's happening! So hard to keep my nerves under control at this point. I'm a hormonal mess.... Hoping tomorrow is a fantastic day of making sure everything is all ready and to relax. Hope all have a great evening. I'm off to prepare dinner!

"Nacho Cheese" cauliflower soup for lunch! Yum! You could use this as a cheese sauce for nachos, enchiladas and Zoodles as well as on many more things!
½ cup raw cashews or walnuts
1 medium onion, rough chop
1 red bell pepper, rough chop
2 stalks celery, rough chop
2 carrots, rough chop
2 cloves garlic
1 head cauliflower, rough chop
4-6 cups vegetable broth
2 bay leaves
Salt, pepper, garlic, crushed red pepper (to taste)
1/2 c nutritional yeast
Boil water and soak nuts of your choice.
In a 1/2c broth sauté all veg but cauliflower for 5-10 mins. Add cauliflower, bay leaves and the remaining broth just covering the cauliflower. Bring to boil, cover and reduce heat. Cook until cauliflower is soft. Remove bay leaves. Drain water from nuts. Put the softened nuts in vitamix or any other blender. Add cooked veggies to blended and enough broth to cover save remaining broth. Blend until smooth add nutritional yeast & spices and blended. Continue adding broth and blending until you get to the desired texture.

The guidance around the types of fat we should be consuming for a healthy diet is ever changing. Currently, it is recommended that we choose unsaturated fats such as monounsaturated fat (like that found in avocados) as they are supposedly better for heart health than saturated fat.
Research suggests that monounsaturated fat helps to protect against heart disease and lowers blood pressure. The oils provided by an avocado include oleic acid and linoleic acid and are therefore recommended as part of a balanced diet to prevent high cholesterol.
There is no doubt that the calorie content of avocados is greater than other fruits and vegetables. One small study has shown the fat content of avocados can lead to feelings of satiety which can help with appetite regulation.
However, as research has developed, the avocado has been commended as a good example of a nutrient dense food. Alongside the benefits outlined above, they are a rich source of antioxidant vitamin E, plus a group of carotenes which are thought to help keep the eyes healthy.
Avocados are native to Central and South America and did not appear in the UK until the mid-1900s. They are now commercially produced in the US, Caribbean, Mexico, Brazil, Israel and Australia. Sadly the climate restricts avocados growing in the UK.
Whether its breakfast,lunch or dinner, guacamole, added to salads, crushed on toast, or used as an alternative coating to pasta dishes. There really aren’t enough superlatives for the wonder Avocado.

Chocolate Dream Bowl
Milk of your choice (I used coconut)
Cut up your frozen bananas, so they'll blend more easily. Add them to your blender or food processor. Add in cocoa powder to taste (probably start slow, you can always add more!). Now, add in the smallest possible amount of your chosen milk. This is key if you want a thicker smoothie/nice cream. You want to add just enough liquid that you're able to blend the frozen bananas. Blend, and add more liquid as needed.
