Tim and I are behind times, but at the recommendation of a friend, watched this documentary. It verified things I've suspected for years; food is our greatest source of healthcare. I have been vegetarian for over 10 years, and haven't bought cow milk in over two, but never really considered going vegan because of my love for pizza and nachos. So, to my healthy vegan friends, please hit me up with your favorite tips for transitioning to a whole food, plant based diet. Recipes welcome too! MUFFIN INTEGRALI AL CIOCCOLATO E ARONIA
(senza uova e senza burro)
Ingredienti per 6 muffin:
100 gr di farina integrale, 25 gr cacao amaro, 50 gr zucchero di canna integrale, 5 gr lievito in polvere, 2 cucchiai di composta di aronia, 125 gr latte a temperatura ambiente, 30 gr olio di semi, 40 gr bacche di aronia, 25 gr di gocce di cioccolato
Unire in una ciotola gli ingredienti secchi: farina, cacao, zucchero, lievito, bacche di aronia, cioccolato e mescolare.
A parte in una terrina unire gli ingredienti liquidi: latte, olio, composta e mescolare.
Versare gli ingredienti liquidi nella ciotola con gli ingredienti secchi e mescolare tutto con un cucchiaio.
Riempire lo stampo per muffin con l’impasto per 2/3 e infornare in forno già caldo a 190° per 25-30 minuti.
Far raffreddare completamente prima di servire e spolverizzare a piacere con zucchero a velo.

After an “off” couple of weeks I am back at it today. I picked a new program to start with a friend today because accountability is key! And bonus(!!!) the workouts are only 22 minutes long! I drank two big glasses of water to get my morning started. I got my workout in before the kids got up. Oatmeal with PB and banana for breakfast and I’m off and running! I am grateful every day for the support of my teammates and challengers. If I didn’t have the accountability to keep going I don’t know that I’d be hitting my one year mark in a few weeks.
Working out, eating healthy and dedicating time to myself isn’t always easy, but it is ALWAYS worth it. If you’re thinking that you’re ready to make a change but need somebody by your side to do it then reach out! We can jump in the new year ready to tackle all of your goals together ❤️
No make up selfie after work today! I got up at six, jumped in the shower, put my wet hair in the bun and ran to take my dog for nail trimming before work. After work I finally put my hair down and found out that I got a nice hair style, right?

This mousse was a hit on the Thanksgiving table!
We actually have a few names for it in our family: Nutella, dark chocolate pudding and avocado mouse. Don't worry you want even remember it has avocado. No one believed me at the table!
My favorite part about this mouse is that it's a super healthy desert - no dairy, sugar, gluten or even heavy nuts!
All you need is:
1/3 cup cacao (carob) powder
1/4 cup honey
1/4 cup coconut milk
1-2 tsp vanilla extract
Just mixed all of it in the blender and chill in the fridge for a couple hours. Enjoy!
You can substitute cacao for carob and it won't have such a strong dark chocolate flavor. Let me know how you like it!

1/4 ч. кокосового молочка
1-2 ч.ложка ванильного экстракта
Все смешать в блендере, охладить в холодильнике и наслаждать!

How good is warm banana bread?! If this is not the most nostalgic food in the world, I don’t know what is. I was ecstatic when I saw there were browning bananas in the fruit basket, so rightfully banana bread was a no brainer. This recipe is a 10/10, I’ll link it in the comments 👇👇👇

Everything I’ve had from there is incredible. Sunday just been I had a vegan lamb gyros with mint tzatziki and this tasty looking bugger is a pulled jackfruit taco. Legit one of the best tacos I’ve ever had. .

First time trying @plantbasedeatery at the Wollongong markets. I tried the popcorn chicken and the BBQ chicken with rice. I loved the BBQ chicken - although I think I'd try some of the other options too 😊 .
