Whit Chocolate Pumpkin Dough Balls by @eat.drink.shrink 💛

Recipe
Ingredients

1 1/2 cups almond flour
1/2 tsp baking soda
1 1/2 tsp pumpkin spice
1 1/2 tsp cinnamon
3/4 can pumpkin puree
1/2 cup maple syrup
2 tsp vanilla extract
1 banana smashed
1/3 cup almond milk
1 1/2 cups vegan white chocolate chips (divided)
1/3 cup coconut oil
Instructions

Combine dry ingredients. Combine wet ingredients. Fold in 1/2 cup vegan white chocoalte chips. Form balls, place in fridge to set for 15 minutes. Melt coconut oil in microwave, pour over chips. Pop in the microwave at 10 second intervals until fully melted. Pour over the chilled cookie dough balls or dip. Top with a pinch of cinnamon. Place back in fridge to set. Enjoy! #veganfoodvideos

Spiced banana bread donuts by @panaceas_pantry 💙

Recipe
Dry mixture

1 cup all-purpose gluten-free flour
1/2 cup blanched almond meal
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt

Wet mixture

3/4 cup almond milk
1 large, ripe banana, mashed
1/3 cup coconut oil, melted
Dash apple cider vinegar
1 Tbsp chia seeds
3 Tbsp water
2 Tbsp rice malt syrup

Method

1. Preheat your over to 180 degrees C. Set aside a large donut pan (no need to ease if its non-stick)

2. In a small bowl, add the chia seeds and water. Whisk to combine, and let to stand and thicken for 5 minutes.

3. Add the apple cider vinegar to the almond milk, and also set aside for 5 minutes.

4. In a large mixing bowl, sift in all the dry ingredients except the almond meal (just add that straight into the bowl without sifting). Mix very well with a wooden spoon.

5. In a second large mixing bowl, and all of the wet ingredients, including the chia and the almond milk mixtures. Mix very well, until uniform (the oil may sit on top, and that is ok). 6. Pour the wet mix into the dry mix, and stir to only just combine (do not overtax). Spoon the mix into the donut pan, until 3/4 full. Use your finger to smooth out the mix.

7. Bake for 12-15 mins (I did 13), then remove form th even. Allow to cool for 10 mins before banging donuts onto a wire cooling rack to cool completely.

TO MAKE CASHEW GLAZE

3/4 cup cashews, soaked 4 hours then drained an rinsed
1/2 cup coconut milk
30 grams cacao butter, melted (bain-marie style)
1/4 cup rice malt syrup
1 tsp vanilla extract 
Bue matcha powder, OR butterfly pea flower powder

1. Add the first 5 ingredients to a high-speed blender and blend until very smooth. 
Transfer to a bowl. Add blue powder, and stir to combine. Add as little or as much as you like, to create your preferred depth of colour.
2. Once donuts have completely cooled, dip into glaze. Top with coconut, and enjoy! #letscookvegan

Ok just stick with me because this is going to sound crazy!  Creamy potato dill pickle soup!  Yep!  Dill pickles!  If you're a fan of dill pickles you will love these ultra creamy soup.  The recipe came up on my FB feed. Of course it wasn't plantbased. It had chicken stock, butter, and sour cream. But no matter because it was super easy to alter and definitely worth the try!
2-3 lbs Yukon gold potatoes 
1 onion
2 c shredded carrots
6 c vegetable broth 
1 1/2 c diced dill pickles
2 c pickle juice
2 tsp old bay seasoning
1 tsp black pepper
1 c cashews
2 c water
1/2 c whole wheat flour
Wash and dice (small) potatoes and place in large pot. Add diced onions, shredded carrots and vegetable broth. Cook until potatoes and carrots and soft.  Add diced pickles, pickle juice and seasonings. In a blender combine cashews, water and flour. Blend well. Stir into soup. Most health-conscious people will be more familiar with linseeds (flaxseeds) than they will be with #chiaseeds. So, if you've ever put a spoon of linseed into some water and left it for thirty minutes, you would have returned to find a kind of glutinous solution, kind of like a gel consistency. Well, the same thing happens with chia seeds, which is another reason that they are so good for you; they act the same way in your gut. This means that they are really good for your digestive system, providing both a high amount of fiber, and also this action of forming a gel-like solution moves through your body and cleans up as it goes. It's also thought that this gel physically prevents the fast breaking down of carbohydrates in the body by slowing down the action of the enzymes on the carbs.

Pancakes topped with a berry nut creme by @miss_gruenkern 💖
For the berry nut creme just blend almond butter, dates, berry powder and some nutmilk.
Pancakes: 1 ripe banana. 90 ml nutmilk. 15 g nutbutter or coconut oil. 80 g spelled flour. 20 g cornstarch. 1 tsp baking powder/natron. 1 tsp apple vinegar. Some vanilla.
Blend banana, nutmilk and nut butter for 1 minute. Add flour and starch and mix it together quickly (with an whisk). Mix baking powder and vinegar in a separate bowl and let them react. Than add it to the batter and mix in. Let the batter chill for 15 minutes. Ready to bake in a non-stick pan.

2 tsp of liquid smoke
2 tbsp of Tamari or soy sauce 
1.5 tsp of onion powder 
1.5 tsp of garlic powder 
2-3 tsp of Lawry's seasoned salt or any salt seasoning. (Sea salt are ok too)
1.5 -2 tbsp of peanut butter or any nut butter**optional 
2 tbsp of your favorite BBQ sauce+ more for brushing on to the seitan ribs
2 cups of warm water 
Mix all above ingredients very well and set aside 
In a large bowl, add 1.5 cups of vital wheat gluten, 1/2 cup of Besan flour and 3 tbsp of nutritional yeast.  Give it a good mix.  Add wet mixture to dry ingredients.  Mix well right away.  Move to grease baking pan.  Flatten the seitan mixture to rectangle and score.  Bake at 350 degrees fahrenheit for 20 minutes.  Brush with BBQ sauce on both sides and put it back in oven for another 10-15 minutes,  you can also grill them for a nice grill mark or just switch the oven to broil mode at the last 1 minute.  Just be sure to stay close to the oven and don't leave them in the oven more than a min or two for the broil mode.. Cut and serve. Mid-week meal prep 😋 If you watched my stories you would have seen me zoodle-ing and making a mess cooking this pasta sauce 🤣 So much splatter 😅 I also spiralized some potatoes too (so are they called poodles then? 🤔🐩😕), and air-fried them to make crunchy chippies and the first batch were so yummy I ate them before thinking about taking a pic, then the next 3 batches were not amazing 🙊 Some bits were a little burnt and other bits undercooked 🙈 I'll try again another day 😀 I hope you're all having a fab day 😙😙😙

Being vegan is not always the same as being healthy. Yes, it's healthy to stay away from animal proteins and fats, but that doesn't mean that you are getting all your nutritients covered in your vegan diet. And what about substitutes added in the vegan alternatives?

There are many vegan alternatives to meat and dairy. You can get vegan burgers, sausages, vegan minced "meat", vegan balls, vegan icecream, vegan cheese, vegan yogurt, etc.. Summed up: delicious fatty, salty and surgarish foods. Of course we like the taste of it. -
I'm not saying that you always should avoid eating these foods. I occasionally eat them myself. But it's a good idea to know that— despite the fact that these foods are based on plants, they are also processed. Meaning several other substitutes are added for preserving flavor or enhance the taste.. That's why they look good, taste good and the main reason you will crave them again and again..

Just think about this every now and then. When you choose what to eat in your vegan diet(or in any diet).. maybe there are other options than processed foods available? Are there any whole foods, fruits, vegetables, nuts and seeds for consuming? I prefer to be a healthy vegan and choose natural foods if I can. Without added color, flavor, sugar, salt and fat. It's not always possible, but I whenever I can. -
My diet is consisting of mostly raw foods. But I like to implement beans/peas/potatoes/oats or baked greens for at least one meal a day(often the last meal). Whenever I can I choose foods that are organic and unprocessed. -
I love my morning smoothies or juices. Nurturing me with high levels of natural vitamins, minerals, antioxidants, carbs, healthy fats and plant protein.

Start of our mini holiday requires a green mango & passion fruit smoothie!! 🌱😍😋 I was SO excited to find frozen organic mango here in NZ this week! @oob.organic I just made @rhys_wilks and I a massive green smoothie with fresh cold press apple juice, mango, passionfruit (they have these awesome cubes of pure passion fruit pulp here in NZ 🙌), orange, a few handfuls of green leafy veg, hemp seeds (great source of omega 3 & 6 & protein), and my favourite current obsession - mango turmeric yoghurt! 😍  @raglancoconutyoghurt  We have a big week with lots of travelling ahead and this is a great way to boost our immune systems pre-trip! Plus it's starting to warm up for spring here in nz! Which means perfect smoothie weather! ☀️ I think I've acclimatised as I'm warm in 15 degree weather now!! I may struggle with the Aussie  heat!! 🙈
