🙋🏻I am a shake/smoothie person. I know not everyone is - you do what works best for you and your nutrition goals/meal planning. It works well with my schedule and is a great way for me to sneak in 2 cups of spinach. I was having a serious carrot cake craving but it was 10am and I felt it was socially unacceptable to dive into a giant slab of carrot cake at that hour
So I busted out the old Pinterest and after surfing some recipes I came up with this masterpiece:
🍴Carrot cake oatmeal 🍴
I mean really this recipe is flawless:
it's healthy oats, a serving of veggies and it taste like a treat!
Add one medium shredded carrot (for two servings) to oatmeal with a pinch of nutmeg, cinnamon, ground ginger and cook until oats are done.
Turn off heat and add a splash of vanilla and 1/4 cup cranberries or raisins and let stand for five minutes.
Divide between two bowls and top with walnuts, shredded coconut and a drizzle of pure maple syrup.
🔫Seriously. ✔Forget it. 😣We ALL struggle with those "off" days... 🚫Too much sugar.

It's been a long time since I made one of these but it's exactly what I was craving post workout. And it totally hit the spot! .
My preference is to use vanilla Shakeology as my powder in it so I can also taste the flavors of each of the fruits in it. And I'm so excited that vegan vanilla Shakeology has now been released so I can stick with keeping my dairy intake low (cream in my coffee is my only other dairy) and my tummy happy. Café Latte Shakeology has been released in vegan as well. I've already switched my shipments over! .
In addition to all the greens and superfoods in Shakeology I added a handful of spinach to this. Although I love my veggies is pretty awesome when they taste like dessert! .
My niece, Emma, asked if she could help me cook @fitkidskitchen Mexican lasagna. I like to sneak in a layer of spinach so I asked her to help with that part.
