I first became vegan for strictly ethical reasons but in my research I have found that a vegan diet is much healthier for you. Now we all know there is a ton of vegan "junk", too, but overall much healthier than a meat eating diet. It blows my mind how many years I've been pushing "more protein" and "low carb" yet now I eat mostly carbs (fruit, veggies, beans, whole grains, etc..., all of which have protein as well) and I feel better than I ever have. I have more muscle definition than I ever have and have so much more energy throughout the day. No harsh crashes, no hanger at the "2 hour mark" between meals. I eat when I'm hungry, that's it.
I also want to talk about balance. I went raw vegan for 11 days and felt absolutely amazing but right now I just cannot maintain that all the time. I try to eat raw as often as possible and try to keep as much sugar, processed foods and sodium out of my diet as I can but sometimes I just want a cookie or some dairy free ice cream or FRIES!! And that's ok.
This brings me to my picture above. I grew up eating "sweet" rice. Not great for you but I still love it!! I obviously put a lot less sweetener in it than I did when I was young but it is still sweet rice. Used a little rice milk and sweetener. I coupled with something healthy and now have an awesome breakfast!!

Wäre ja früher nie auf die Idee gekommen, eine fette Schüssel Eis als "Mittagessen" zu bezeichnen, aber wenn es sich dabei um Nicecream handelt, sieht die Sache schon ganz anders aus 😁 Bei der Hitze hab ich auch gar keine Lust auf "richtiges" Essen. Viel zu schwer. Da kommt mir dieses Schüsselchen Bananen-Kirsch-Eis mit Mango, Granola & Kokoschips sehr gelegen.
Das Granola ist übrigens das Zitronengranola von dm. 🍋 Als Müsli schmeckt es mir so gar nicht, aber als Topping für Nicecream macht es sich sehr gut!
Good morning everyone!! 🌤I have decided it would be a good idea that as I experiment with recipes...I don't also end up trying to set my apartment on fire. 🔥So originally I was experimenting with the whole caramelized banana thing...let's just say that the end result led to lots of smoke in our apartment and slightly caramelized bananas. This adventure will be revisited. 😒Though in this bowl with mango, pistachios and blueberry the bananas tasted super fantastic! 👌🏽So not a complete loss. Added some ginger to my oats and sprinkled my mango with red lime chili seasoning. 🌶All the flavor notes I was looking for this morning, sweet and tangy. 💛

Today is my last day of work (after school counselor) and I'm kinda sad. It's crazy how I used to absolutely dread going every Tuesday and Thursday. What I took from this experience was that the most important thing is forming bonds. Some of these kids became like my little bffs 😂 They became comfortable with me, came to me for help, told me their secrets 😕 I'm going to miss them so much (not so much my co workers 😅) but now it's time for summer vacation! 🌊

Anyways,I'm super happy to annouce that a pair of my jeans are finally loose on me!
Back in April and even May, I actually had to wear a body shaper to fit into them. As embarrassing as that is to admit, I couldn't really afford new clothes, so had to squeeze into everything I already owned.
Anyways, the jeans would barely even fit with a body shaper on, but now theyre loose on me! No,not with a shaper (I no longer need to wear it with most my clothes!!!) but bare,without assistance.
So I'm super proud of myself for it, and I definitely plan to keep up the work. #progress

Pão de queijo fit, sugarfree, vegan, e recheado com chocolate. Foi?
Ingredientes (pra render uns 30, pode fazer metade da receita sem problemas)
🧀300 g de polvilho doce ou azedo, eu usei o doce mas o mais certo é o outro.
🧀400g de aipim/batata doce/mandioquinha bem cozida e amassada (usei o aipim)
🧀Chia ou linhaça a gosto (opcional)
🧀sal a gosto
🧀3 Col de azeite de oliva ou óleo de coco
🧀4col. Sopa de tofu batido com água até virar um creme (eu faço tofu em casa mas pode usar ricota zero lactose também ou requeijão/cottage zero lactose sem a água)
🧀 Água até dar o ponto (arraste para ver o ponto)
🧀 Chocolate fit sem açúcar (usei esse aí da cacau show cortei cada tablete em 8 pedacinhos)
Modo de preparo:
Junte todos os ingredientes e deixe a água para ir adicionando aos poucos, pode misturar com a mão ou no gancho da batedeira (já chega a sujeira nas mãos na hora de enrolar né, não sou obrigada! 😂😂😂) O ponto, para ficar bem macio, eu deixo assim, fica chato de enrolar, gruda bastante, mas dá um jeito aí hahahaha ou deixa mais duro, e depois é só ir molhando a mão pra facilitar, enrolando com o chocolate dentro. Asse a 180-200°c até ficarem douradinhos em cima! Está pronto. (Pode congelar antes de assar).

I needed this salad so bad! You know when you eat something and it's just so exactly what you wanted? 🙌🏽 I had the hardest time finding healthy food in Phuket. It was hard enough to just find vegan food and everything was drowning in oil and sodium and msg. (Don't even try asking for it without because they won't do it.) Once I got back to Chiang Mai I went to the grocery store salad bar and filled up 2 containers with salad!😻 A mix of lettuces, onion slices, steamed pumpkin, kidney beans, job's tear, carrots, purple cabbage, bell peppers, peanuts, and pumpkin black pepper dressing (the best dressing ever!) Seriously I think this is one of the best salads I've ever had.👅 Last night was my last night in Chiang Mai and now I'm at the airport waiting for my flight. I may have gone to the store this morning to get one more salad to bring with me for lunch.😊 I have a loooong flight ahead of me, but at least I have lots of fresh veggies, snacks and Trail Runner magazine!👍🏽
