Dark Chocolate Churro Muffins 🍫🎂 I used @gfshoestring recipe for flourless paleo muffins and added 1/3 cup @eatpapabears Churro Butter, some cinnamon, vanilla, and 2 oz chopped dark (>72%) chocolate, and used half the honey in the recipe💡Substitutions: excellent with any nut butter mix ins, can also add pumpkin purée with allspice, cloves and nutmeg for a pumpkin pie riff. Midweek supper inspiration, try this warm chicken and avocado salad with curried toasted carrot chips and satsuma. Swap out the satsuma for tasty apricots or seasonal plums which are succulent at this time of the year! 💛
Apricots are rich in antioxidants and a great source of Vitamin A, C and potassium which are particularly beneficial for healthy skin. Plums are another great source of antioxidants due to their high content of phenols.
Heat oven to 190C.
Ingredients per serving:
1x little gem lettuce
1 Bok Choy
1 medium chicken breast
1 satsuma or orange (or plum or apricot) 1/2 medium carrot peeled
1/2 an avocado
Watercress (because it's oh so good for you 💕)
2 stalks of mint and coriander
Juice of a lemon
Place chicken breasts on a baking tray and cook for 20mins or until juices run clear.
Meanwhile, spiralise carrot, cut into bite size pieces and place on a baking tray. Sprinkle with cinnamon and allspice to cover. Place in oven for 5 mins before the end of chicken cooking time. Carrot should be soft but still has bite. 💛
Roughly chop lettuce and Bok Choy and add to serving bowl along with watercress and avocado. Peel satsuma and divide into sections removing the thicker pith and add to the mix (or stone and quarter apricots, or plums). Pour over the lemon juice and mix through. 💛
Once the chicken has cooled a little shred and add to serving bowl. Remove mint and coriander leaves from stalk and add. 💛
Season with pink salt and ground black pepper, dress with toasted spiced carrots.
Serve and enjoy!
Breakfast rituals with the fam. We normally eat at Hong Kong cafes around here, but it can get tiring really fast. My brother @dchan0425 suggested we get some scallion pancake beef wraps and dan dan mien instead 🍜 good ideas 🙏🏻 as always, I like all my food with some 🔥🌶. Our preworkout meal haha. @101noodleexpress
