First meal prep was 🔥, literally. Made honey, Sriracha glazed meat balls Sunday and it did not disappoint. Found this recipe on Pinterest and tweaked it around a little. Made 5 big lunches. If you like the heat then ohh man are you going to like this..
Mix 2lbs of ground turkey, 1 c panko breadcrumbs, 1/4c chopped green onions, 3/4 tsp garlic powder, 1/2ish tsp salt & pepper, 2ish tsp sriracha, 2ish tsp honey, two eggs, & adobo seasoning
Preheat over @ 375. Pat the turkey into little meatballs (around 25-30) and place on a greased cookie sheet. Bake for 25 min.
For the sauce, mix; 1/4 c sriracha, 3 tbsp of soy sauce, rice vinegar, & honey, 3 minced garlic cloves, and 1/2 tsp sesame oil in a sauce pan over medium heat until it starts to boil.
Once it boils turn it down to simmer and whisk. I had to add a little corn starch for it to actually thicken. The sauce also is pretty hot, so add a little** sugar if you want the flavor, but want to cut down on the heat. Only a little. •
Served it on a bed of shredded carrots and brown rice with a lime wedge and green onions to top it off 😬
Today I tackled spicy food. My OCD has always been present. One of my earliest memories to feature it was when I was about four. I ate a crisp that was well done and it tasted... different. It tasted wrong. Ever since then I have been unable to eat food with a strong taste. My OCD prevents me. This is why I added chili beef to my pizza tonight. Not only that but I was alone and I actively went out of my way to do it. That's a big thing for me. Usually, for food fears, I need to be pushed into it. I'm quite proud of myself for this one. I know it's another pizza with a different topping, which is what my day eight fear was, but I find that you have to face a fear more than once in order to beat it. And honestly, the chili beef, while spicy, wasn't bad... Consuming vitamin K2 alongside vitamin D is better than vit D on its own... the K2 actually deposits the calcium and vit D INTO the bones rather than next to the bones or other places like the arteries which could become a serious problem. It is often advised to take vitamin D3 in winter as this comes from the sun, however more research is suggesting we take vitamin K2 with it to make it worth while!

They use the most flavorful mozzarella, and the cheese canceled out most of the heat from the Hot Cheetos. It was just a crunchier, saltier pepperoni pizza for me!
