Intermittent fasting is an exercise in self control,. Delaying breakfast till 12, makes me appreciate this so much more, with the added bonus of many health benefits such as increased metabolism. 
Ingredients for vegan pancakes
1 cup of oats
1 cup of plant milk
Half a large banana 
Table spoon of flax seed (ground)
Teaspoon of baking powder.
Blast everything in a blender and cook in a none sick pan.
To avoid pancakes breaking turn with a wet spatula. 
Top with tasty healthy things

Double butter muffins! Aka butternut and peanut butter muffins 😅. Ingredients : butternut purée, peanut butter, whole-wheat flour, soy milk, flaxseeds, maple syrup, applesauce, pumpkin spice blend and baking powder. 
Started off as a pancake recipe then I realized that it just wander gonna work haha, it wasn't holding together at all!
So I added somebody more flour and threw them in the oven.

Once I was up I had some breakfast then headed out for a long walk around the streets and ended up at the beach where I went for a swim and laid in the sun for a while. Came back and had some lunch, then spent the afternoon reading and relaxing until dinner time!

Vegan peppermint chocolate chip brownies, coming right up! 🍫I took inspo from @emilieeats with these bad boys, and man, did they not disappoint the fam on Thanksgiving 💯Modified her recipe a bit, but overall I’m SUPER impressed with her recipe developing skills 👏🏻Make these for yourself and let me know how they turn out! 
THE GOODS:
* 1 cup pitted dates
* 1 cup almond butter
* 1/3 cup unsweetened applesauce
* 1/2 cup almond milk
* 1/2 cup oat flour
* 1/3 cup cocoa (or cacao) powder
* 1 tbsp peppermint extract
* 1½ teaspoons baking soda
* 1½ teaspoons vanilla extract
* Dash of salt
* 1 cup dairy-free, soy free chocolate chips
* 1/2 c powdered sugar * 1 tbsp water 
MAKE IT: 
1. Preheat oven to 350F. Lightly grease an 8-inch x 8-inch pan or line with foil.
2. Add dates, almond butter, applesauce, and almond milk to food processor or blender. Process until well combined, stopping to scrape down the sides.
3. Add oat flour, cocoa powder, peppermint extract, baking soda, vanilla, and salt. Process until completely mixed.
4. Stir in 3/4 cup chocolate chips until all ingredients are combined.
5. Pour batter into the pan and bake for 25-30 minutes. Let the bars cool in the pan for 10 minutes; place in fridge for faster cooling time.
7. For frosting drizzle, combine 1/2 c powdered sugar and water in a small mixing bowl. Whisk with fork until you have a nice icing consistency. 
8. Add remaining 1/4 c of chocolate chips on top of brownies and drizzle with icing.
9. Slice, serve and enjoy with a nice cup of milk 🥛

Foreground: Thanksgiving Plate -- Herb-Crusted Seitan, Yukon Gold and Sweet Potato combo, Brussels Sprouts, Apple-Fennel Stuffing and Cranberry Relish. Behind that is the Hominy dish.  I also had the Kabocha Squash soup & shared an order of Brussels that were prepared differently than those in the Thanksgiving Plate. On my thanksgiving menu was Trader Joe’s vegan turkey-less roast, sweet potato casserole (@ohsheglows ), stuffing (@thugkitchen ), cheezy potato casserole (my own recipe), and apple pie (@therealchefaj ). Everything was more delicious and well received by my family than I ever hoped it could be. Thankful to spend today surrounded by loved ones ❤️

Look after your liver folks! Your liver works hard, 500 jobs hard...it’s the only organ that can regenerate itself; thank goodness🍷 since it’s our filtering system. My mum is having her tumours in her liver basically burnt off, it’s called ablation. I believe she will have two holes in her liver after the procedure is over. We are waiting patiently to hear how it’s gone, we’ve been here ince 6:30am. Absolutely incredible how much your body wants to continue being a host for all the good and bad bacteria in and on us. I’ve had my mum on a plant based diet and liver nutrient protocol and her CAT scan showed that the tumours after being discovered 7 months ago had not grown but had shrunk a little. Good news since it had been quite a worry about how long it was taking to get into see the liver specialist. I made a soup base with red curry paste, added lemongrass and fresh garlic in which I cooked the mushrooms, kale and tofu. Served with jasmine rice and seaweed sprinkles 🙌 Like when I drink ginger tea, this kind of spices somehow make me feel healthier after I eat them 😊
