🤔We have here a jalapeno popper potato skins bacon burger🍔! I must admit, this got a little crazy. Don't get me wrong, it was totally delicious and I would do it again....only different. We each had 1/2 of this but both of us took off one side of jalapeno potato skin and ate the rest with a fork. It was just too much. So next time only 1 popper side and 1 plain skin side.
I baked the potatoes and then hollowed them out. Deep fried them to crispy. Filled each with a roasted and skinned jalapeno packed with cream cheese. Put that in the skin, topped with mozz and baked until done. You can probably figure out the rest 😊
I would not discourage anyone from trying this, and I'm so not sad we did it.

Fried chicken and pancakes this morning at Iron Horse Tavern in Sacramento. I was pleasantly surprised at how much I enjoyed this. Chicken was crispy yet moist and the pancakes were also perfectly cooked.
🙋I think we may have a problem in this house with our addiction to all things🔥🌶. Today I made the spicy Thai wings again, so now I'm spitting fire but in the best way possible. And a nice cooling slaw on the side is a necessity with these little devils.
The base recipe comes from @bewitchinkitchen but you know me by now....if I can make them angrier, I'm gonna make them angrier 😈
Red pepper flakes
Toss the wings in this and bake @400° for 40 minutes.
1 cup sweet Thai chili sauce
2 limes juiced
2 tbsp coconut aminos (or soy sauce)
2 tbsp sriracha
2 tbsp sesame oil
A fat handful of Thai peppers, chopped up
1 habanero, chopped up
Mix it all together and then I use my stick blender to pulverize all the hot peppers into the sauce to smooth it out.
After the 40 minute bake, dip the wings in the sauce ( I only used 1/2 the sauce on 2lbs of wings. Saving the rest for another recipe 😉), and bake for 10 more minutes. If you're like me you'll want that cooling slaw. If you're like my husband, you'll want the slaw AND a ramekin of ranch dressing to dunk them in. 😆
🙋Welp, I made me some dinner tonight! I say that because the man would not come near this. He opted to make himself a burger instead 😂. This stuff though.....
First off, I have to thank @sunnyanderson from #thekitchen for the pesto and heavy cream sauce idea 😉. She puts hers on pasta but I have here zoodles with hominy and peas. 🙋Early start this morning. The storms have had me awake for hours but I'm not mad about it. I had these peppers to use up, so I thought I'd do them up with red onion, a jalapeno, garlic pepper and a teensy bit of worcestershire. I'm going to let them cool and then pack them into a food saver bag and put them in the freezer. That way they're ready for sausage and peppers at a later date. Now back to my coffee 😊
🙋8 Cabbage rolls and a lone stuffed pepper in the crock pot for dinner tonight. 7 of these will get frozen for future meals. I used:
Yellow bell pepper
Shredded yellow squash
Red pepper flakes
And for the sauce I make a mixture of:
Canned diced tomatoes
Red pepper flakes
I love this sauce because it's sweet and tangy and perfect with the spicy meat mixture.
🙋Soup, because I felt like it. It's got
Fresh grated parmesan
Sourdough soaked in milk
Baked for 10 minutes at 400°, then dropped into the soup.
*anchovies* 😉 (smashed into paste)
Chickpeas with the liquid
Red pepper flakes
Brought it all to a boil, then turned down to simmer for about an hour.
The anchovies....you'd never guess they were in there, but they gave this soup incredible umami!

Item 2: These spicy peanut and shrimp rice noodles! Sounded amazing, looked amazing...but unfortunately was sorta overcooked and some were undercooked 🙈 anyway it was the only miss tonight...#munchpost

🙋Happy Wednesday! Well, I did it. For the 1st time in over 2 months, I got my butt up out of bed and actually went out walking. It felt so good. The chilly fall air is just beautiful. I used to joke about how relentless my "personal trainer" (my little doggie) was about early morning cross-country treks, but he was on to something with it. It not only wakes you up, but it makes you feel alive and ready for anything. Come on Wednesday!
And then I came home and made turmeric and cayenne spiced hominy with an egg, and some leftover steak and potato on the side. Oohhh....and coffee 😊
🙋I hope everyone is having a terrific Tuesday! We've been on the run for the past couple of mornings, so there has been no breakfast 😔. But to make up for it we have steak and eggs for lunch!! With steamed mixed veg. Food just seems to taste better after going umpteen hours without any. And this meal was far from a disappointment.
