Day 17- Tasty. Having a Inflammatory Bowel Disease means I never have food without suffering. I'd love to have a tasty Steak and a massive pudding without worrying. My low FODMAP girls night in from the weekend ๐Ÿ’ƒ๐Ÿป Honestly, who doesn't love cooking with friends and spending some quality time together. 
We whipped up low FODMAP pesto fettuccini made with basil, EVOO, pine nuts, Parmesan and garlic infused olive oil ๐ŸŒฑ๐Ÿ˜ Followed it with a fruit platter of pineapple, strawberries, blueberries, cantaloupe and mango (I can tolerate mangoes, yay!) ๐Ÿ๐Ÿ“๐Ÿˆ๐Ÿ‡ On the side we had gluten free marshmallows, melted dark chocolate and Nutella ๐Ÿซ 
Paired with a bottle of red wine ๐Ÿท this was my ultimate girls night feast! Went perfectly with watching the princess diaries!

Lunches for this week are mini frittatas and a side salad ๐Ÿณ๐Ÿฅ— For the frittatas, I used roast pumpkin (which I made the other night), asparagus (blanched in boiling water for 1-2 minutes), goats cheese, chives, egg, salt and pepper. Although asparagus is considered high in fodmaps, each frittata has less than 1 whole spear in them and I seem to tolerate them fine. If you can't you could substitute spinach for some greens!

I had 2 with lunch and feel quite satisfied and that equals to about 2 eggs. I think maybe even 1 and a half would fill me though. Everyone is different!

Pretty impressed with my dinner today! Natural lean protein and beans and veggies. Macro-friendly and also goes with Chinese medicine principles of having different colours on your plate .

Today's lunch probably wasn't the healthiest, especially after a killer gym session. But, my god, it was the tastiest! 
Fodmap friendly fettuccini aglio e olio using gluten free fettuccini (I use @sanremopasta), @cobramestate extra virgin olive oil and a touch of garlic oil to get that garlic taste, cherry tomatoes, parsley, chilli flakes and pecorino cheese. I also topped it with some herbed grilled chicken and served with a side of Sicilian olives ๐Ÿ๐Ÿ…๐ŸŒถ๐Ÿง€โค๏ธ I am half Italian and thoroughly enjoy eating Italian foods. I love fresh and simple ingredients that are easy to throw together. This dish is an all time fav because it's simple, delicious and super quick to make!

I like my avo toast best when the avocado is mashed with lime and mint! By far the tastiest combination I've tried so far. If you haven't tried it, highly recommend giving it a go! I also enjoy some pumpkin seeds for added texture, and a tiny bit of goats cheese to make it a little creamy ๐Ÿ๐Ÿง€๐Ÿฅ‘๐Ÿž๐Ÿ’• The recommended fodmap serving size for avocado is 1/4 of an avo at a time. As avocado is high in sorbitol, exceeding this can really be tough on some individuals tums. Just stick to the recommended serving size until you've tested your individual tolerance. I still find I can cover two slices of toast decently with just a quarter! And then I mash and portion the other quarter of an avo into an airtight jar for my breakfast the next morning and keep the other half of the avo for adding to a salad etc.

Today's dish was house-cured salmon with a gluten free scotch egg, avocado puree, rice, grapefruit and crispy fried rice paper ๐Ÿฅ‘๐Ÿณ๐ŸŸ๐Ÿ’• It was delicious and the grapefruit added a nice element of bitterness. A nice alternative to a gluten free breakfast. I'll definitely be back again!

This mornings breakfast inspired by @basicbodiesguide ๐Ÿ˜๐Ÿ˜‹ I've been looking for easy and delicious gluten free pancakes forever! I dread looking at recipes that have 3/4 types of flour in them or an absolute mountain of sugar! These were really simple and I had all the ingredients on hand! 
1 mashed banana, 100ml of dairy-free milk (I used Nutty Bruce Almond milk), 1 egg and a heaped tablespoon of GF flour (probably about 1tbs and 1/2 with how much I put in). Mix it all together and voila! My favourite FODMAP way to eat out ๐Ÿฃ๐Ÿ’• If you live locally or can make it to the Glen Waverley area, Waya is the best affordable Japanese restaurant I've ever tried! I always get some sashimi and the waya maki (without spicy mayo because it has hidden fodmaps) and it's always so fresh! Plus there are plenty of options for your friends if they don't like sushi/sashimi! 
Highly recommend Japanese for a nice night out! Pair it with some edammame and you have a delicious and relatively healthy meal!

It's been awhile since I've posted a #buddyupdate, so I thought I would share our latest experiences with an IBD dog. We've been crazy busy since we took an extended weekend to go camping; life & work certainly didn't pause for us while we were up north. Buddy recovered extremely well from his abdominal explore; he was given the green light after two weeks of strict crate rest. Let's just say he is over the moon to be allowed to run at full speed again... and boy, oh boy, is he a fast one! ๐Ÿ˜ˆ We've started weekly B12 injections, which Buddy stands completely still for & is an angel. We also started transitioning him from his old diet to a new prescription diet while he was recovering from surgery. Buddy didn't show any side effects or digestive issues during the transition, BUT when he was finally fully transitioned to his new prescription diet, he began having complete liquid diarrhea. We went an entire week cleaning up after daily accidents and could tell Buddy pretty embarrassed as well (RIP our hardwood floors). ๐Ÿ˜ฐ After consulting our specialist, they recommended a short term antibiotic for his tummy troubles & possibly re-mixing back some of Buddy's old diet with the prescription diet. We have yet to pick up the prescription--I'm not a fan of just giving antibiotics if they're not truly needed to solve the core problem--but we have started to mix in just a little of the old diet with prescription diet. Happy to report that we're 2 days accident-free! ๐Ÿ’ฉ๐Ÿคž๐Ÿผ

Wednesdays are by far my longest day of the week. I'm at uni from 8/8:30 am until 6pm! I would also consider myself someone who really relies on food as fuel! I honestly cannot concentrate through a whole day if all I'm thinking about is how hungry I am ๐Ÿ˜“

So here I thought I'd showcase how I'd pack a low FODMAP lunch to last me all throughout the uni day that's healthy and satisfying. 
Here we have -cut up strawberries, raspberries and blueberries ๐Ÿ“
-two mandarins - @cobspopcorn plain salted popcorn - cut up cucumber and red capsicum - oven baked chicken seasoned with @mingleseasoning low fodmap seasoning, zucchini, carrot, green beans and a small serving of broccolini (whatever amount you can tolerate) ๐Ÿ†๐Ÿ…๐Ÿฅ’๐Ÿฅ•๐Ÿ— I always start my day at uni with 2 slices of @alpinebreads sprouted seeds fodmap certified bread and @mayversfood natural smooth peanut butter. I also keep a water bottle on me which I drink throughout the day! 
With all of this I feel super satisfied and am able to concentrate throughout all my classes (one of my classes alone is 3 hours!) and work on my assignments. 
I can post more ideas of uni/work friendly lunches if others are interested. Would also love to know what some of your go-to uni/work lunches are!

This weeks lunch I stuck with one of my favorite things to make that is the easiest and where I get most nutritional bang for my buck ๐Ÿ’ธ Beef and veggie stir fry ๐Ÿ”ฅI cooked up some grass fed beef and stored it separately and then sauteed up some ๐Ÿฅ•๐Ÿฅ•zucchini, broccoli, red onion and cilantro in some coconut oil and coconut aminos for that amazing sweet and salty taste ๐Ÿ˜ Added some guac ๐Ÿฅ‘ on top for a bigger source of healthy fats to make a balanced and delicious dinner! Tip if you want to create a stir fry for the week, use your imagination! Use up any leftover veggies you have in the fridge so they won't go bad or get wasted, throw in some garlic and onion to bring out some flavour and pair it with a healthy and easy source of protein and fat! This week was grass fed beef, if youโ€™re eating vegan simply mix in some soaked and cooked chickpeas, lentils or some brown rice! Guacamole ๐Ÿฅ‘ is one of my favorite ways to get my healthy fats in but you could also top it with some pine nuts, chia seeds, extra virgin olive oil.. Ect. It really is that simple to eat a healthy balanced diet!

Last nights FODMAP friendly Father's Day roast dinner. Roast pumpkin, roast potatoes with rosemary and thyme, roast beef with rosemary and thyme, carrots, cauliflower (have successfully reintroduced) and the star of the show - FODMAP gravy ๐Ÿ˜ 
We winged the gravy a little bit and it turned out great! First we made a rue with gluten free flour and butter, then stirred through some beef stock made with the Massel 7's stock cubes (no garlic or onion) and then added the meat juices from the roasting pan. 
Definitely not the healthiest thing to top your meat with, but a nice Father's Day treat! ๐Ÿ’•

This gluten free low lactose sticky ginger birthday cake wasn't a complete disaster but it wasn't a complete success either ๐Ÿ˜… the bottom half had the consistency of bread and the top half was fluffy and sponge-like. I think a different cooking method is required. This gluten free low lactose sticky ginger birthday cake wasn't a complete disaster but it wasn't a complete success either ๐Ÿ˜… the bottom half had the consistency of bread and the top half was fluffy and sponge-like. I think a different cooking method is required. Low FODMAP butternut squash roasted with paprika, cumin and garlic infused oil; with Mediterranean veggies, fine beans and @quorn_uk hotdogs. Not the most attractive plate of food but it was tasty and wholesome, meat free and low carb. Super easy dinner using the @monashfodmap certified @somefoods capsicum, olive and chilli pasta sauce ๐Ÿ๐ŸŒถ๐Ÿ’• Easily one of the tastiest fodmap certified sauces I've tried so far, and one of the best quality in terms of ingredients. I could even see chunks of Kalamata olive throughout my pasta when I tipped it out of the jar.

Great go-to healthy snack that you can make in batches ahead of time - chia seed puddings! ๐Ÿ“๐ŸŒ๐Ÿ’• I combine just under a tbs of black chia seeds, 2 tbs almond milk, 1 tsp vanilla extract and a dash of cinnamon into little mini containers and give them a mix and chuck them in the fridge! Really great to make at night because they'll be all set by the morning and then you can just top them with strawberries, blueberries or even banana and go ๐Ÿ’ƒ๐Ÿป I don't add any sweetener to mine as I find the combination of the almond milk and the vanilla extract topped with fruit sweet enough. But you can add a dash of maple syrup if you like ๐Ÿ’–

With a side of my chicken zucchini meatballs which you can learn all about in my last post ๐Ÿ‘‡๐ŸผTopped with hemp seeds and my super quick dressing: coconut aminos and olive oil! Having organic extra virgin olive oil uncooked on things such as salads is SUCH a great way to add a healthy source of fat to your diet, adding coconut aminos along side helps bring out that flavour and enhance the already delicious salad ! To make things easy, I simply pre cut a bunch of ๐Ÿ…๐Ÿฅ’๐Ÿฅ• and red onion for the week, stored it in the fridge so it's super easy for me to whip up a salad on the go, as well as my chicken zucchini poppers that I meal prepped as well! My almond milk is ready !
I love it ๐Ÿ˜. My favorite alternative to milk . 
Recipe:
1 cup of almonds
3 drops of vainilla extract 
2 dates 
1 table spoon ๐Ÿฅ„ agave syrup 
Preparation 
Place the almonds in a ball with water ๐Ÿ’ฆ and let it soak overnight.
In the morning wash the almonds and the water ๐Ÿ’ฆ from the previous night you can use it for your plants.
-place the almonds into the blender - add 4 cups of water and 2 dates
- blend - filter the mix with a kitchen cloth or a cloth funnel - the remaining almond paste you can use it for your pastry or you can dry it at low temperature in the oven and store it in a bag for later usage - now add some vainilla extract and the agave syrup ( both are optional )
- drink ๐Ÿน or store it in the fridge max 4 days.

After an extremely busy and stressful week at uni, I finally got to have a break at my all time fave brunch place @thevoltcafe ๐Ÿ’• 
Pictured is the chilli scramble made especially without any milk, on gluten free bread with kale and cauliflower. I have successfully reintroduced cauliflower into my diet and can eat it without any issues for those wondering why I have something high fodmap. 
Cathy and the rest of the staff at the Volt are hands down some of the most friendly and knowledgable people I've ever met while eating out. They always talk me through the different menu options as to what they're able to adapt to suit me, and what dishes don't have onion and garlic etc. The majority of the menu is #glutenfree because Cathy herself is a celiac, so if you're someone who finds it hard to eat out due to being celiac give it a go!

๐Ÿ˜Œ Tonight's dinner is Scottish inspired. I've made my low FODMAP take on haggis. There's no lamb's heart or lungs or sheep's stomach or onions or oatmeal so it's a bit of a stretch ๐Ÿ˜… but I tried it on a Scotsman and he practically licked the plate so I think it was a success. I made it with two leeks (green leaf part), a celery stick, fine beans, carrots, all finely chopped and softened in garlic infused canola oil. I added 300ml of FODMAP free stock and turkey thigh mince, 1/2 a tsp of ground nutmeg, coriander, cinnamon (should have used mace but I didn't have any), a tsp and a half of ground pepper and a 1/4 tsp of cayenne pepper; then simmered for 15 mins. To finish I stirred in four tsps of @tescofood freefrom gravy granules and simmered for five more mins. Finally I served with boiled potatoes and baked cumin sweet potatoes.
