Straight out of the oven and I really don't think this one will last long......two hungry boys already circling it! Banana, almond, coconut, cacao nibs and wholemeal flour whizzed up into delicious banana loaf. The boys will have this for brekkie with some blackberry compote and we'll take a few slices on our adventures tomorrow afternoon too. With only 30g in the whole loaf of coconut sugar it's not going to have them hitting those sugar spikes either. Half term hero recipe for sure!
Chocolate, Banana and almond loaf
100g ground almonds
100g wholemeal flour
75g coconut, flaked/dessicated
30g coconut or caster sugar (or leave out completely)
4 super ripe bananas, mashed
110g coconut oil or butter
4 tablespoons of milk
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
75g cacao nibs or dark choc chips
2 teaspoon vanilla essence
Mix in all the ingredients in one large bowl until thoroughly combined and bake either in a 12 hole muffin tin or a parchment lined loaf tin. Bake for 25/30mins at 180/350.

I haven't been baking for a while and have to say....I miss baking on a regular base.
So, these cupcakes are actually samples for a potential customer to taste.....I made my famous Lemon Cake with a lemon butter-cream cheese frosting, a Carrot Cake with a caramel butter-cream cheese frosting and a German Marmor Bundt Cake with a chocolate cream cheese frosting.
I wonder, which one will be picked by the customer.
