One of the best things you can do for yourself on a Sunday is make a meal with epic leftovers. It’s the best feeling to start the week with food in the fridge. On those nights when you’re starving and don’t want to cook, you’ll cheer for Sunday you. These ancho enchiladas are one of my favorite Sunday meals, packed with whatever we have on hand.

One of my favourite ingredients...the orange! and currently in season! Far superior than orange blossom water or orange extract and certainly better than any artificial alternative. The natural oils in the zest just can’t be replicated and I personally think it’s nicer than satsumas, clementines or tangerines #day21of365#CGCD
Sundays are for #mealprep I get a lot of questions about what I usually eat so here’s my grocery haul for the week 🙌🏼 I use the #iifym approach so I can have more freedom.
My protein staples are chicken, ground turkey, egg whites, along with protein bars and protein shakes when I want something sweet. My complex carbs are usually red potatoes, oats, or rice. I am really digging Brussels sprouts lately! Now that I know how to properly roast them ☺️ and I also love the quick throw in the microwave bags of cauliflower rice and mashed cauliflower when I’m in a hurry or need to bring something quick to work!
