Children in Need Day here in the UK! So I'm going spotty with my porridge today.... chocolate coconut porridge (oats, cacao, dessicated coconut and coconut milk) with cherries, white chocolate buttons and choc shot.... yummy! .
Happy Friday everyone!
November is #nationalpomegranatemonth ! What do you know about this highly valued, age-old fruit? The pomegranate dates back to ancient times, has been cultivated all over the Mediterranean and in the Bible, was considered a fruit fit for a king with great spiritual significance. This amazing fruit has powerful health benefits including anti-tumor effects which fight many forms of cancer, anti-inflammatory, anti-arthritic and pain relief properties, bacterial and fungal protection, fights Alzheimer’s disease and improves memory, lowers blood pressure and supports heart health ... and so much more! You can usually locate pomegranate seeds in your local grocery store, however this is the season to find fresh pomegranates all around. Try this recipe for a spinach pomegranate salad loaded with benefits from top to bottom:
- Baby spinach leaves
- Microgreens or alfalfa sprouts
- Pomegranate seeds
- Red onion, thinly sliced
- Chicken tenders (baked)
- Balsamic vinaigrette. (Top with Feta optional)
Side dishes and healthy food preparation need not involve 10 steps and take all day. Today I am serving a mixed mini pepper salad dressed very simply with salt + fresh lemon juice. Feta cheese is a nice addition if you are looking to add a bit of protein + healthy fat 😊🥗
I have been eating so much fresh fruit recently and it feels so energising, especially berries, I have them on top of porridge, yoghurt or just by themselves and they are so yummy 🍓 I've been feeling a little run down recently and super unmotivated, I think the cold weather is getting to me 😞 My new Coffee Chats video is up if you want to hear more about it🌿
