PPS I make my fajitas using a seasoning rather than wet marinade cause you get a better CRUST. Plus you can skip marinating if you really need to. 👍🏻
CHICKEN FAJITAS| Serves 4 – 5
Homemade Fajita Seasoning:
1/2 tsp each onion powder and garlic powder
1/4 tsp cayenne pepper (optional, adjust to taste)
1 tsp each cumin, paprika, oregano
3/4 tsp salt
1/4 tsp black pepper
3 chicken breasts (600 - 700g / 1.2 - 1.4lb), cut in half horizontally
3 tbsp lime juice
2 tbsp olive oil, separated
1 EACH red, green and yellow capsicum / bell pepper, medium size, cut into strips
2 onions, cut into thin wedges/slices
To serve: Small tortillas, sour cream, lime wedges, coriander/cilantro
1. Mix together seasoning, add to chicken with lime and dash of oil. Marinate 30 min – 24 hours (can skip)
2. Eat 1 tbsp oil in heavy based skillet over medium high heat. Cook chicken 2 – 3 min on each side, remove onto plate and cover with foil.
3. Scrape off burnt bit, turn heat up to high, add remaining 1 tbsp oil. Cook capsicum and onion in 2 batches until charred, season with salt and pepper. Transfer to plate.
4. Slice chicken, serve with warmed tortillas, sour cream, lime and coriander/cilantro.

the star ingredient in the pasta recipe i posted today is my homemade kale pesto! (well, aside from those gorgeous golden brown perfectly seared scallops, of course!). ⠀
this sauce is a staple in our fridge in the summer months when we can buy oodles of kale & basil at the farmer's market for like $3 total & i use it on ERRTHANG: pizza, grilled pizza, caprese burgers, caprese salads, drizzled on grilled corn, tossed into pasta, as a marinade for grilled meat, tossed into roasted potatoes, stirred into vinaigrettes...you name it, i've done it!!
