Tummy bug still got me feeling a bit eeky but im feeling some what better this morning abd keeping my smile radiating... I had salmon in the fridge for 2 days that i was planning to cook for dinner but since being sick i wasnt cooking much. This morning i made these quick and simple Norwegian salmon fish cakes on crispy skin with a light tatziki. 
Normally i wouldnt weigh midweek, but it feels like people r following this 4 week challenge closely to see if it actually works. My midweek weigh in has me smiling indeed but more importantly is the fact that my labcoat is fitting more comfortable again 😉

Started my morning off with a warm ACV drink. My tummy has been feeling yuck for a few days. Seems i finally got wot the boys had 🤢Couldnt manage to eat so packed in my food to have at work wen im ready. 
4am I rolled out of bed and baked bread. After Nicky Thompson made my loaf, she mentioned the changes she made and as i typically am always aiming for a better bread, i put my chemistry of LC baking into this  modified version of my nut and seed sandwhich loaf. 
I gotta say, i never did like chemistry at school, not even at University lol but since learning how LC ingredients work, i love the chemistry of LC baking 😁

This bread...it just keeps getting better 😉

LC Seed & Nut Sandwhich Loaf (variation) 🔹One meal at a time with Caashifa🔹

Ingredients
1 cup almond flour
1/2 cup coconut flour
2 cups mixed seeds & nuts (ground roughly)
1 tsp baking powder
1/2 tsp baking soda
2 Tblsps psyllium husk
6 eggs
3 egg whites
1/2 cup milk
1/2 cup palm oil or olive oil 
1 tbsp xylitol
2 Tblsps apple cider vinegar
Crack of himilayan pink salt

Mix the ground seeds and flour in a bowl. Add the baking powder, baking soda, psyllium and salt. Whisk together. In a seperate bowl, whisk the eggs, egg whites, milk, oil, vinegar and xylitol. Combine the wet and dry ingredients and mix well. Allow the batter to rest for about 10 minutes. Pour the mixture into a greased bread pan and smooth it out with a spatula, then sprinkle with some mixed seeds. Bake at 180 for 40-50 minutes or until a toothpick inserted in bread comes out clean. Cool completely before sliciing. This makes 1 regular sized loaf.

WEEK 1 📆 has been crazy. The boys were sick, we were cleaning vomit daily and it was just rough adjusting to being back in Saudi. I got my period which came with hornonal surges and water retention and cravings etc. 
My clean eating was ok, not as clean as i would have liked but that is life 📈📉 We had welcome back cookies 🍩 and chocolates 🍫 circulate through the office. A welcome back luncheon 🥂 My friend gifting me with a lovely rice dish which i couldnt deny plus hormonal snacking... I do the best i can by making good choices ✔ most of the time and wen i do put something in my mouth thats off plan, i carry consciousness of it. 
This week i lost some grams, it might not seem like much. Remember that small progress is better than no progress!!! Also remember that everybody is different and we all lose at different rates. Dont lose heart or hope, trust in the process and soldier on 💪. Do not use a.scale to measure your worth or your success. You are more than just numbers 🗒 You might have fat but u ARE not fat...just like u might have long hair, u are NOT long hair 😉

Starting my morning off slow with this fragrantly delicious mug of goodess. I use this mug because it holds about 400ml liquid 😉

Safron and Cardomom Latte 🔹 One meal at a time with Caashifa🔹

Ingredients
1/4 cup boiling water
1 tsp granulated coffee
Sweetner to taste
1 cup coconut milk
2 -3 strands safron
2 cardomon pods 
Fine cinnamon / nutmeg (optional)

Pound the cardomom pods and grind the safron strands. Add both to the milk. Boil the milk in the microwave. Use a whisk and froth the spiced milk. Add the boiling water to the coffee and sweetner. Combine all the ingredients and whisk till frothy. Sprinkle with fine cinnamon and serve warm.

I am experimenting with new ways to add more liver into my diet. I suffer from chronic anemia and can do with the iron boost. So here is a mince and liver bake with caulimash, sauce and cheese 👌

Since my friend so kindly gifted me with supper last night, i cooked enough for both of us. There was even enough filling left for the freezer which i can use next week or the week after in a different dish. The boys r having roast chicken and thats their regular. 
I finally got to try these flavor drops. Yummy. Got it at dis-chem and it came in a box of 3 different flavors. This is the strawberry. 
Friday in Saudi is our Saturday (wkend) so i normally spend the morning in the kitchen cooking and baking, doing laundry and messing with the boys. We dont do lunch but opt for an early early supper after the boys' nap.

When I asked my health coach about exercising she said just be as active as you feel like being, especially in the early days before I reach ketosis. So today, I spent about an hour hooping! It's such an awesome hobby! I just get in the right headspace, and then I just go and go and go. It's so fluid and peaceful. And by the end of the hour I'm sweaty and exhausted. So much fun, and super effective! .
