This Warm Autumn Salad recipe is delicious! Itโ€™s creamy, refreshing and loaded with flavor! Itโ€™s easy to make and a great snack or side

INGREDIENTS:
* 1 sm. Butternut Squash
* 2 Apples, chopped
* 1/2 Red Onion, chopped
* 1 cup Brussel Sprouts, Chopped
* 2 Tbsp. coconut oil
* 1/4 cup Crumbled Goat Cheese
* 1/4 Tsp. Nutmeg
* Chopped Parsley as Garnish
* Sea Salt and Black Pepper to taste

DIRECTIONS:
1. Preheat oven to 400 degrees F
2. Mix in bowl, Squash, Apples, Brussel Sprouts, Onions, Oil, Nutmeg, Salt and Pepper
3. Place on a baking sheet and Roast for 45-50 Mins tossing every 15 mins
4. Remove and let cool for 5 mins.
5. Serve on plate and top with Goat Cheese, or vegan cheese of choice and Parsley garnish.

This yummy Crockpot Chili ๐ŸŒถ is perfect for a cold day! Make it in your crockpot for dinner tonight!!๐ŸŒถ๐ŸŒถ๐ŸŒถ Tex Mex Crockpot Chili 
Ingredients:
	1 can organic  corn kernels (drained)  1 can organic  kidney beans * 1 can organic  pinto beans (drained)
* 1 can organic  black beans (drained)
* 1 7-ounce can green chiles (you may want to omit this if you're cooking for kids) * 1 14-ounce can organic stewed tomatoes (Mexican-style is best, if you can find it - do not drain)
* 1 package organic  taco seasoning mix
* 1/4 tsp. cumin
* 1/2 tsp. salt 
Directions: * Place the corn, kidney beans, pinto beans, black beans, green chilies and stewed tomatoes in your crock pot or slow cooker and give it a quick stir.
* 	Next, add in the taco seasoning mix, cumin, onion powder, salt and garlic powder and quickly stir again.
* 	Cook on low crockpot setting for 8-10 hours.
* 	If you're in a hurry, you can also set this on high in the crockpot for 3 hours. Garnish and enjoy.

You can also add veggie crumbles such as Boca, or if you eat meat, chicken or ground beef or ground turkey.

Clean Mashed Potatoes ๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ”๐Ÿฅ” Growing up Iโ€™d gladly have mashed potatoes and gravy with every meal.ย  Who  am I kiddingโ€ฆ Iโ€™d gladly do that now!  Hereโ€™s the kicker: the way I used to make them had loads of butter and heavy cream and man, were they delicious!ย  Since going mostly dairy free,ย  Iโ€™ve really missed a proper creamy mashed potato. For the sake of this mashed potato experiment, I wanted to make them completely dairy free for those of you who canโ€™t handle butter either. * 4-6 potatoes, organic, peeled and cut into large chunks
* 1 teaspoon salt (for cooking water)
* ยฝ teaspoon salt
* ยผ teaspoon pepper
* ยผ cup almond milk or nondairy milk of choice * 1 tsp minced garlic
* 3 tablespoons olive oil * 1 tablespoons chives
*  Butter or vegan margarine (I use Earth Balance)

1. Place cut potatoes in a large saucepan and add water to about 1 inch above potatoes. Add 1 teaspoon salt.
2. Boil potatoes until fork tender, about 30-40 minutes.
3. Drain potatoes.
4. Mash potatoes with a potato masher or use a hand-mixer and blend in salt, pepper, almond milk, olive oil, butter/margarine and chives. 
Enjoy!

Ingredients
For the cornbread:
* 6 Tablespoons vegan buttery spread melted
* 1ยฝ cups yellow cornmeal
* 1 cup gluten free flour blend (I used Bobs Red Mill)
* 3ยฝ teaspoons baking powder
* 5 Tablespoons unsweetened applesauce
* 2 Tablespoons coconut sugar
* 1ยผ teaspoons salt
* 1โ…› cup non-dairy milk of your choice

For the stuffing:
* 1/4 cup vegan buttery spread
* one large sweet onion chopped
* 4 stalks celery chopped
* 1/2 cup chopped fresh parsley
* 1 teaspoon Italian seasoning
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 2 1/2 cups vegetable  broth
* 1 cup finely diced red or green bell pepper

Instructions
1. Preheat the oven to 350 degrees F. Lightly grease a 9x13 inch pan.๏ฟฝ
2. In a large bowl, whisk together the cornmeal, gluten free flour, sugar, salt, and baking powder.๏ฟฝ
3. Add the applesauce, vegan buttery spread, and non-dairy milk.๏ฟฝ
4. Stir until combined, then pour into the prepared pan, smoothing out with a spoon.๏ฟฝ
5. Bake at 350 degrees for 20-24 minutes, or until a toothpick inserted in the center of the cornbread comes out clean. Let cornbread cool.๏ฟฝ
6. To make the stuffing: Preheat the oven to 375 degrees.๏ฟฝ
7. Put the vegan buttery spread in a large skillet and melt it over medium low heat. Add the chopped onions, bell pepper, and celery, and cook until they start to soften, about 10 minutes.๏ฟฝ
8. Add half of the chopped parsley, broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low.๏ฟฝ
9. Coarsely

Black Bean Lentil Salad with Cumin-Lime Dressing 
#Vegan, #gluten-free

Ingredients

1 cup dry lentils (green or brown) or canned lentils, rinsed and drained (I use Eden Organic)
15 oz. can black beans, rinsed and drained
1 red bell pepper
1/2 small red onion
1-2 tomatoes
Green onion
Cilantro or parsley, if desired {For the dressing}

Juice of 1 lime
2 Tbsp. olive oil
1 tsp. dijon mustard
1 tsp minced garlic or garlic powder
1 tsp. cumin
1/2 tsp. oregano
1/8 tsp. salt

Directions

Cook lentils according to package directions, leaving firm not mushy. Drain. Or if using canned lentils, just rinse and drain. 
Then make the dressing: place all ingredients in a small bowl and whisk to combine. Set aside.
Finely dice the bell pepper, onion, and tomatoes. Roughly chop the cilantro.
In a large bowl, place the black beans, bell pepper, onion, tomatoes, and lentils. Add the dressing and toss to combine. Add cilantro, parsley and green onion, if desired, and lightly toss.

Serve immediately or chill covered in the fridge for at least an hour to let the flavors combine.

I then topped it off with a handful of black olives. Another very filling and satisfying meal. Keto does not have to be complicated, or expensive. Just do the best with what you have. My meals may not look very glamorous but they taste incredible,  keep me satisfied, and on the straight and narrow keto track! This was my lunch today. Leftover ground beef taco meat scrambled into two eggs, topped with sour cream, Sriracha, and Tabasco sauce. Totally filling and satisfying meal. The only thing missing here is some avocado. If I had it it would definitely be on there.

My last 2 train trips have been delayed by a combined 2hrs 30mins, and there sure are more glamorous (and warm) places to be at 6.30am on a Monday then Newton Abbott train station โ„โ˜ƒ

Ingredients

1 cup unsweetened almond milk
1 small Granny Smith apple, chopped
2 tablespoons natural peanut butter
2 teaspoons honey or maple syrup
1 scoop or packet Vanilla Juice Plus complete protein powder
