🦃 Happy Thanksgiving 🦃
Today has got us thinking about festive flavours, and every year the star 🌟 of our table is our homemade 🍎Apple & Cranberry Chutney 🥄 Perfect with turkey 🦃 and chicken🐓 or even as a great addition to sandwiches 🍞 and wraps 🌯. Plus once made, it will last up to 6 months!
Here's how to make it 👇
Add 1kg of peeled, cored and diced cooking apples🍏🍏, 4 sliced white onions, 50g finely chopped root ginger, 1 tsp black peppercorns, 6dsps Stevia and 250ml apple cider vinegar all to a large saucepan. Put on a low heat and stir gently, allowing the sweetener to dissolve.
Bring to the boil, before lowering the heat to allow the mixture to reduce without the lid, for 45 mins🕗. Stir regularly so it doesn’t stick.🥄 Once the 🍏 apples and onions are tender & the mixture has thickened, add in 500g fresh or frozen cranberries. Allow to simmer for 10 mins, you want them to soften, but not to burst.
Spoon the hot chutney in to sterilised jars and seal. Store unopened in a cool, dark place. The chutney will keep for up to 6 months.

2 in a row for Co. Tyrone tonight... Trip to the Lough shore to The Tilley Lamp in Ardboe. Rumour has it that a feed here has infact, killed a cow before 🤔😂 Unreal again.. had 2 chicken kievs, garlic fries (Dracula woulda had no chance at us that night) with all the trimmings on the side. 🍷🍷🍷🍷 If you haven't tried the mighty combo of garlic fries and peppered sauce- I think you needa get yourself to the Tilley or the Yankee ASAP and prove me right 👍🍟
Mexican Molletes is the very typical meal for tea time. So simple yet so delicious back home my mom always added chorizo on top with the sauce as well! 👌🏼
- I bought the rolls in @lidlireland - when you cook your black beans make sure you season them well (stock, paprika, sea salt, pepper, tabasco, herbs for example)
- And for the salsa: I used about 15 chillies 🌶 (but you can use 2 or 3), 2 tomatoes, 1 onion, 1 garlic clove, and some corriander.
Toss everything in olive oil with some seasoning until they are all sautéed. Then just blend adding 1/2 of a stockcube. Add some water if its too thick and thats it! So easy and so delicious 😋

We are crazy about this delicious, super healthy recipe.❤ Great for lunch or for a fabulous spread at dinner, served up with Free hummous 🍴
Here's how to make it! 👇
Heat some low cal spray oil in a pan then fry 1 diced onion and 2 finely chopped garlic cloves over a low heat until softened, 4 to 6 minutes.⏲ Place in a large mixing bowl with a drained tin of chickpeas and 1tsp ground cumin and 1 tsp ground coriander, then mash together with a fork or potato masher until the chickpeas are totally broken down. 👊👊👊 Stir in a handful of parsley 🌿🌿and season to taste.
Add 1 beaten egg 🥚, then mix together with your hands until fully combined.
Mould into 4 balls and oven bake until golden.
Serve hot or cold in a wholemeal wrap with sliced avocado🥑, sliced tomato🍅, and 1 tbsp of lighter than light mayo and a handful of lettuce.
Oh...and did we mention, it's all FREE on plan! Woohoo!

Creamy Chicken and Mushroom
I done mine in the slow cooker but you can do it on the pan.
4 chicken breasts
Red pepper, Yellow pepper, Mushrooms, Onion (any other veg you like) 1 crushed garlic clove
80g light Philadelphia cheese garlic and herbs one.
1 can of Erin light Mushroom soup
2 tsp mixed herbs
1 tsp paprika
Dash of salt and pepper
70ml Chicken stock (water and 1 stock cube dissolved)
Cook for 3-4 hours on high slow cooker or on a lower heat for longer hours. You can also do this on the pan and same method (less water, add more gradually) and keep reducing 😍❤️👌
The only thing better than a @nuanaturals turmeric latte is when you can drink it or of a cup the size of your face 😂 I’m enjoying my golden milk with some chia pudding! Super delicious post morning workout treat!
