🍋🍋I made my first vegan cake!🍋🍋
It was a lemon drizzle and it was absolutely delicious
It was so so easy to make and had no funny awkward or expensive ingredients!
200g caster sugar
1tsp baking powder
170mils cold water
Rind and juice of one lemon
Mix all the ingredients together and place in an oven at 180 for 35 mins
For the drizzle I just mixed 150g of icing sugar with the juice of one lemon! I added a small drop of water to make it a little more runny!
Pour the icing over the cake when it's cooled!
Spaghetti and meatballs with garlic bread - vegan style. 🤓 We are still taking part in #thepantrychallenge (created by the lovely @nem_belair - scroll back a few posts for more details) and tonight was the night to start using some of the more awkward ingredients... Boyfriend took the lead and made these amazing Italian meatballs using a slightly adjusted recipe by @minimalistbaker - this meal was dreamy 😍
We used up some dried chickpeas that we'd been avoiding as well as some sundried tomatoes that had been sitting in the fridge, and some heels of bread we'd kept in the freezer to make breadcrumbs for this recipe. Pantry Challenge wins! 💪🏻
We are absolutely loving how our attitudes have changed and our creativity has grown since starting this challenge. There are a few more interesting recipes coming this week... Happy Tuesday, Foodies ☺️

The coolest thing happened on Sunday! We were in the checkout at a children's store and this woman started talking to Sammy and me. She started asking us questions and when she asked what I did Sammy jumped in bursting with joy saying that I help people with their workouts!
The fact that she was so proud of me and excited to share this before I could, made me so happy! I went onto tell the person that I am able to help people lose 5-15lbs in 30 days! I provide support and accountability online and have them in a community with others who also have similar goals, to be the best of themselves they can!!! She said that she was interested but that her 3 babies kept her so busy she didn't know that she would have the time to commit, she said she barely has time to do anything for herself!
That's when I told her "That that's exactly why you needed this. You need to make sure you have time to take care of yourself so that you can take care of your babies!" I noticed a sparkling shine in her eyes at these words. We exchanged numbers and she asked me when does this start!? I said "My next group starts on September 4th! Message me when you get home and I will give you more details!"
And with that I have started to help change that woman’s life!
