The experimentation with wheatgrass continues - soaked oats and chia in coconut milk, with a tbsp of wheatgrass and drop of vanilla essence. Topped with bloobs 💜 nanas 🍌 yoghurt and whole hemp seeds 🍃 getting all those nutrients for ever growing bubba! Apparently he puts on 0.5lb a week at this stage! .
Now off for a swim with my beautiful little niece Esme and cuddles with my brand new nephew Quinn 😍 see you soon sis @travelmadmum .

Ha back to the days when porridge was my staple breakfast. Cannot be dealing with porridge in this heat - but, with the meal prep i did this week the overnight oats worked a treat! they nearly have the same texture as porridge but they're cold and you don't have to cook them! You just ad your favourite toppings! I can't wait to move into my new permanent flat when i'll be able to experiment properly with flavours and toppings. Chocolate and cherries is one of my favourites and the cherries and so thick and sweet here now! ❤️🍒

salsa verde, toasted pumpkin seeds & crispy slaw. I feel this dish has great potential but the fried courgette was way to greasy for me and put me off the dish but other than that the dish was really nice , I also had bruschetta to start which was really tasty.

Rushed off my feet today and needed a good feed for lunch! 🙏🏼 This spicy tomato, lentil and red pepper soup from @sainsburys really hit the spot 😻 worth noting that the tub also contains 22g of pure plant based protein 💪🏼 also had a few slices of toasted giraffe bread with avocado & tomato, seasoned with a lil salt & pepper on the side! Perfect well-rounded meal 🙌🏼 ✨
It's absolutely scorching in Edinburgh this week but what better way cool down than with some gelato 😛 this is the dairy free gelato from @thebeachhousecafe in Portobello! I always get mango & chocolate because it's a cracking combo 😛🍧✨

A simple healthy and yet absolutely delicious dinner! Consisted of tofu marinated in mustard, tomato purée and chinese five spice on a bed of spinach, gem lettuce, tomatoes, cucumber and some boiled potatoes topped with sweet corn. Something light for these rare, warm summer nights. ♡

☸Ingredients (serves 2.5): 7/8 potatoes
5×tablespoons Ex Virgin Olive Oil
bunch of fresh parsley
bunch of fresh tarragon
⚀Boil potatoes for 30 minutes and leave aside.
⚁Saute the diced red onion and garlic in 5×tablespoons of hot ev olive oil on high heat for 1 minute.
⚂Add in 5×chopped tomatoes with 3/4×teaspoon of salt, 3/4×teaspoon black pepper and let this break down for 3 minutes.
⚃Add in chopped potato, a handful of chopped mushrooms a large bunch of diced parsley and tarragon and stir for 1 minute.
⚄Add the squeeze of 1/2×lemon and 6×halved sunstream tomatoes and let cook on medium heat for 2 minutes before serving with more fresh parsley💚👊💚

For anyone reading this because they followed my old accounts, welcome back to #thatirishvegangirl / There have been a lot of questions regarding what happened to my IG account & YouTube and I want to talk about that now. Something very strange happened to me. After 4 years of being vegan, I no longer cared. I no longer cared about the animals or myself, I was experiencing symptoms of depression and extreme anxiety and I was having a complete identity crisis. I was getting sicker and sicker, my hormones were crazy which the doctor told me was due to my vegan diet but I now believe it was due to the stress. How could I possibly just 'not care' about something that I have been so passionate about for so long? What was I supposed to do? I'd created an amazing platform based around the vegan lifestyle and I just didn't care anymore, I didn't care about anything anymore. I hid behind smiles, secretly hiding how I felt and I knew that the best thing for me to do at that time was to quit social media. I didn't even want to see or hear the word vegan because I felt so ashamed of the way I was feeling, like I was lying to myself and everybody that followed me. I needed to spend time alone with myself and I so badly wanted to feel like myself again, at the time I had convinced myself I'd never return to promoting this lifestyle after what was happening to me which is why I deleted everything completely, regrettably. I am now doing a lot better and it's hit me that what I experienced was compassion fatigue, it's very common in nurses, health professionals and animal activists. Sometimes we care about something so much that we burn ourselves out and I've learned that self care is something that I need to focus on from now on. Finally after a few months, I have got my compassion back and feel stronger than ever and am ready to start again because I miss it so very much, I feel like part of me is missing. I knew I had to get back online and talk about this because maybe someone has been through the same thing. I'm so sorry for anyone I disappointed. I'm so sorry for the animals that I couldn't feel anything for anymore, but I feel now. I care again. I want to share again. ❤️!

I spent all day outside in the glorious sunshine, had to cool down with this yummy shake!
🥛 1/2 scoop @sunwarriortribe chocolate protein, 15g oats, 2 tbsp flaked almonds, 1tsp cacao, 1 tsp maca, a handful of coconut flakes and topped up with half oat milk/half water.. then I added the money maker, a shot of coffee (decaf for me) 😳😍 .
The key here is balance! I've got my protein, fat and carbs all in one.. 👊🏼 you need to find a balance that's right for your body, not based on what others say you should be eating.. or the latest diet. Listen to your body, it knows what it needs. Don't listen to the latest podcast/YouTuber that tells you, okay now you need to cut out fat.. because if you don't, all your hair and teeth will fall out. YOU DO YOU, BOO 😘😘
