Tortelloni en brodo is a traditional recipe that comes from the Emilia Romagna region of Italy. These small pasta pockets are traditionally filled with pork, prosciutto or cheese and served in a rich broth.
The Emilia Romagna region is famed for it’s incredible gastronomic contribution to the world, including fresh pasta, Parma ham, Parmigiano Reggiano, and traditional balsamic vinegar. P.S. - if you’re wondering what Tortelloni are, they are the larger sized version of Tortellini.
Prepping tonight's dinner and keeping track of my recipe to post in the blog later this week. I could not imagine cooking without these main ingredients. For me, proteins in this dish are interchangeable (I even make this ragu with mushrooms instead of meat). But I don't know what I would do if I could never cook with carrots, celery, & onions. Or garlic. Or lemon & parsley. Salt and pepper. Olive oil and tomato purée. And of course wine. But let's not think of such horrible things. This dish requires you to use a bottle minus a glass of chianti. Yes, I know what you're thinking. That's a waste of a perfectly nice bottle of wine. But that's why I say minus a glass. It's #MeatfreeMonday and here is my version of @cookingcarafes fabulous dish Mushroom And Thyme Tagliatelle. So simple to make, chesnut mushrooms cooked in a little butter and olive oil, lots of garlic, fresh thyme and tagliatelle pasta, with some parmesan on top.
I added some fresh lemon zest as I didn't have any truffle oil, worked well.
It was super duper tasty. What do you think?

Ho un debole per il pesce 😍. Ragù bianco di pesce e spaghettoni ruvidi. Con aglio, olio, una punta di peperoncino, gamberetti, seppioline, spada affumicato, pomodoro cuore di bue verde, pepe e prezzemolo... risottati! 😍😋😋😋 .
