My dinner tonight was inspired by this delicious meal I had a few weeks ago at @vegenation in Vegas ...epic Jackfruit tacos with sooo much flavor and my dad got this delicious tomatoey dish. If you're ever in Vegas be sure to leave the strip and check out @vegenation in downtown! Definitely the best meal I had while in Vegas with the nicest staff 💚
🌮Cooked Jackfruit tacos for dinner tonight!🌮 How I did it:
•Sauteed 2 garlic cloves / half an onion in a bit of coconut oil
•Added a can of chopped jackfruit and cooked it for 5 mins
•Added a bit of veggie broth, cumin, smoked paprika, chilli powder and salt.
•Mixed in half a tbsp of maple syrup for flavor
•Mixed in Vegan Soyrizo (from Trader Joe's) and voila!! Jackfruit deliciousness!!🌮🌮🌮 Topped the tacos with fresh avocado and salsa.. yumm!! Wish I would have had cilantro 🌿 to make this even better. 😊

Pastor de yaca 🌮 • 2 chiles guajillo
• 1 chile pasilla
• 1 tomate
• 1 diente de ajo • 1 cdta. de comino
Hervir en agua los ingredientes durante 5 minutos, licuar y agregar la sal y el comino... ~~~~~~~~~~~~~~~~~~~~~~~
Para la salsa:
• 1 chile habanero
• 1 cebolla blanca
• 1 taza de pulpa de yaca
• 3 limones
Picar el chile, la cebolla y la pulpa de #yaca y exprimir los limones.

💫🗣To all my transitioning vegans or vegetarians out there I have something that you MUST try if you love the texture of chicken or pork. J A C K F R U I T😋| It is a relative of figs & breadfruit and grows in tropical areas of Southeast Asia, Brazil and Africa. It has a fairly neutral taste so it takes on the flavor of whatever sauce or seasoning you pair it with. I purchased the canned version since I didn’t have time to find the actual fruit today, but it was still tasty and I can’t wait to get my hands on the fruit next week to make that infamous “pulled pork” BBQ jackfruit sandwich that everybody is always bragging about.👅💦 Tonight my bff & I made jackfruit fajitas with peppers, onions and mushrooms and it was simple and amazing😍🤗🌱

One of my favorite dishes growing up was chicken mole. It is a typical Mexican dish my mother used to make with an amazing sauce full of chocolate, peanuts, and spices.
But since I don’t eat meat anymore, I decided to veganize this favorite dish into something which was actually healthy to eat.
I used the same amazing spices to make Pulled Jackfruit Mole Tacos and they were out of this world amazing! Jackfruit is an incredible fruit which when cooked, has a very similar texture to meat but without the saturated fat, trans fat, cholesterol, and violence.
I bought the two cans of jackfruit from a local Asian market and the mole sauce from a regular market. I will provide the delicious Pineapple Guacamole recipe tomorrow.
Pulled Jackfruit Mole Tacos:
2 cans jackfruit in brine
1 10 oz container Dona Maria Mole sauce
1 large onion diced
5 garlic cloves crushed
3 cups diced mushrooms
5 oz water
1. Drain and rinse jackfruit in a colander. Take each piece of Jackfruit and pull apart with fingers as if it were chicken or pork and place on a plate or bowl.
2. Place all ingredients in a crock pot and cook on high for 6 hours stirring occasionally.
2. Spoon the Pulled Jackfruit Mole onto browned corn tortillas and add diced tomatoes, guacamole, cilantro, @tofuttibrands vegan sour cream, salsa, and fresh lime juice. Add sliced jalapeños if you like it spicy! 🔥🌶
No meat, no dairy, no animal products whatsoever. Just 100% plant based goodness!

Now that I’m almost feeling myself again (and not terrified of Bali Belly) I can reflect on the amazing fresh organic produce they have available! We spent quite a bit of time at @pelotonsupershop working our way through the menu, and it’s one of the best cafes I’ve been to! Such a great concept too with the Peloton name!!
