Course 4. I am making a Truffled Wild Mushroom Cappelletti with a Porcini cream sauce. It will be fun cooking with so many talented and well-known chefs. I’m nervous but incredibly honored.

Q: How did you get into cooking?
I was born and raised in Belmont, MA and I got my start in the food industry as a dishwasher at Stone Hearth Pizza Company. I initially started because I was supporting my music. 
Q: Favorite Dish to Make?
My favorite dishes to make are pasta and pizza; that’s why I spend so much time near the wood-fired oven.

The winter months tend to make it difficult to change my menu as often as I'd like.  That being said, Scott Williams with #gardentobe is always searching out produce for me like a damn bloodhound.  After receiving some stunning stuff, I threw this dish together.  It starts with a burnt juniper spiked goat cheese.  Rutabaga that's sliced thin and picked up in blonde butter until crispy.  Purple ninja radish, last year's parsnips, fermented salad turnips, and scarlet turnips are all poached low and slow in brown butter.  Once they soften a bit, we pull them from the butter and crisp them up in a high oven.  Garnished with black pepper infused honey, pickled shallot,  scallion curls, carrot tops, and a spicy pistachio dukkah.  #jamesbeard #foodandwine #madisonmagazine #wistatejournal #isthmusmadison #farmtotable

Some burn marks and some sleepless nights. got to cook for some people i would have never imagined. Got to be part of a movement in LA with my barbecue family, and see LA get some smokey respect.
