Staying strong by bringing insanely delicious eats to my in laws (who know and understand my shenanigans)! These turkey thighs were roasted at 375F for a little over an hour on a wire rack set inside a sheet tray.  I rubbed a mixture of fresh minced poultry herbs (rosemary, sage, & thyme), salt, and @kasandrinos olive oil under and over the skin. 🦃🙌🏻

🍪What you’ll need🍪 1 can of chickpeas, 1 cup of oats, 2 HUGE tablespoons of natural peanut butter of choice, 2 handfuls of chopped peanuts (yes this is needed), 2 ripe bananas, 1 teaspoon baking powder, like a lot of cinnamon and 1 grated zucchini (hey sneaky veg). -

👉 Start by blending your chickpeas & bananas in a blender and then add it to a big mixing bowl 👉 add the oats, peanut butter, chopped nuts, baking powder and zucchini to the mix and combine with a spoon. Line some baking trays with baking paper and pop the mixture in tablespoon sizes on the tray and flatten each cookie *note the mixture will not expand a lot* Bake for 25 minutes @ 200 degrees stopping halfway through to flip them (ensures crunch on both sides!) -

XMAS TIME || Are you already as excited as I am about Xmas coming closer? This is one of my favorite desserts. 🍉 xmas trees dipped in @pure_n_free. It's super easy 😎

Simply cut SoMe slices of watermelon into little triangles. With a knife make a little hole into the middle if the rind and stick a wooden popsicle stick in.
Spread the watermelons on the stick on a tasty coveted with parchment paper and put in the freezer for about 1-2 hours.
Combine 1 cup natural coconut yoghurt with 1 Tbs hulled tahini, a dash of cinnamon, cardamom and the zest of 1/2 an organic orange. Now dip the tops of the watermelon into the yoghurt mix (you might need the help of a little spoon for an even coverage) add some sprinkles.
Once all pieces are done, return to the freezer for another hours or until dessert time and enjoy 🎄🎄🎄

Late night snack stash. Breastfeeding leaves me hungry in the middle of the night, so I have been preparing in advance so I’m not rooting around in the dark kitchen trying to find something to eat. Tonight’s selections: lots of water,shine organics calm pouch, @thrivemkt mixed nuts, Trader Joe’s dried mango, local apples I dried in my @excaliburdehydrator , patience dried cranberries (the best!) and dried plums (also from @thrivemkt )...a couple pieces of lactation no-bake bars. I’ve been having family members mix up a batch when they come over and want to do something to help! I’m a bit heavy on the fruit. Any other suggestions??

Cabbage, Sausage, Potato Soup.

INGREDIENTS:
1 pound kielbasa sausage, sliced into bite-sized pieces
2 tablespoons extra-virgin olive oil
3 medium leeks, sliced into ⅛ inch rounds, white and pale green parts only
2 medium carrots, peeled and diced
1 stalk celery, diced
1 small green cabbage, chopped into bite-sized pieces
3 cloves garlic, minced
6 cups chicken or vegetable stock
1 pound red potatoes, diced
1 tablespoon Italian seasoning, homemade or store-bought
1 bay leaf
Kosher salt and freshly-cracked black pepper

DIRECTIONS: - Add sausage to a large stockpot and cook over medium-heat for 5-6 minutes, stirring and flipping occasionally, until the sausage is lightly browned. - Use a slotted spoon to transfer the sausage to a separate plate, and set aside. - Add the olive oil, leeks, carrots and celery to the pan, and stir to combine.  Sauté for 5 minutes, stirring occasionally.  Then add the cabbage and garlic, and sauté for 4 more minutes, stirring occasionally. - Add the stock, potatoes, Italian seasoning, bay leaf, cooked sausage, and stir to combine.  Continue cooking until the soup reaches a simmer.  Then reduce heat to medium-low, cover, and simmer for 15 minutes, or until the potatoes are cooked and tender. - Taste and season with a few generous pinches of salt and black pepper as needed. - Serve warm.

Whole fresh cranberries, Granny Smith apple, fresh orange juice and zest, apple cider, cinnamon, allspice, cloves, sugar and grand marnier. Recipe modification-cut the sugar down half a cup and doubled the grand marnier.

On Thursdays we bake... CHOC BERRY MUFFINS. Into a bowl we chucked 1 cup buckwheat flour, 1/2 cup oat flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 2 eggs, 1/3 cup melted coconut oil, 1/2 cup maple syrup, 1 tsp vanilla, 1 1/2 cups frozen berries and 1/2 cup dark chocolate chips. Then we mixed together,  spooned mixture into a 12 cup muffin tray and baked in a moderate oven for 20 mins.

Tomato soup was the easiest thing I could come up with for dinner - and it’s delicious! Made some autumn mash by @nomnompaleo in the instant pot for tomorrow along with sweet potato brownies by @paleomg, a batch of salad dressing and some mashed potatoes by @thepioneerwoman so tomorrow should hopefully be pretty easy! Thanksgiving dinner is ready to go. It was hard to do, but it had to be done. Turkey's whole life was for this single purpose: to nourish and bless our family and friends at a shared meal. It was a pleasure to have her around these past months, and we plan to incorporate turkey keeping into our farm again on a bigger scale.

It's Riberry (type of Lilly Pilly) season and there are so many ways to use these beautiful native fruit without destroying the nutrient profile or adding unhealthy ingredients. I just made (and ate) simple Lilly Pilly Chocolate and it was delicious!

1. Pick some ripe Riberry fruit (keep an eye out in your neighborhood or ask in local garden and community groups if anyone has some to spare), remove seeds, then dry in the oven on low heat or use a dehydrator
2. Double boil organic cocoa powder, coconut oil, and raw honey to melt and combine without overheating
3. Turn heat off and stir in dried fruit
4. Pour onto baking paper in a rectangle container, sprinkle fruit on top, then refrigerate to harden
5. Break apart and gobble it down before it melts!
Alternatively use a healthy made chocolate bar to melt down so it resets when cooled again and won't melt instantly like coconut oil chocolate does.

3 pics: 1- my first time back to outdoor running. Nice slow pace. Nothing crazy with this injury and first day wearing my new shoes. 2- my new Nike Free Run 2017's! They're so comfortable to walk in. We'll see how I feel about running in them in the morning. They make me feel like a chubby ninja! 😂🏃The dogs are burnin' and you know I had to flex on y'all! 💪Picked them up at Dillard's in Stockton 50% off! 🙌 3- I usually play upbeat music while I work out and I forgot I had Gary on my shuffle. When I finished my first mile and paused to stretch and get my breath under control that song came on just as the sun was going down. I can't think of a better song for that moment! It helped slow my heart rate too! Of course I was blastin' everything from Bad Brains to Run The Jewels 💎! LET'S GO!!! 🔥🔥🔥

WE MADE IT TO THANKSGIVING BREAK. 🦃 🙌🏻 it’s been a really challenging semester, but I’m hanging tight and sooooo so ready for a phew days off and some quality time with my boyfriend’s family. feelin’ grateful for my perfect daily smoothie (recipe on the blog) + these gorgeous flowers my parents sent on the opening night of my show. my heart is full and my mind is basically mashed potatoes from exhaustion. speaking of mashed potatoes...happy thanksgiving 😜

I DID IT! 🙌🏻 // Adam asked me to make REAL cranberry sauce for our meal tomorrow... I’ve never made it before, so I was scared. 🤷🏻‍♀️ But I found a clean paleo recipe with only 3 ingredients and gave it a whirl. It was SOOO easy and the best part was that when Adam tasted it, he genuinely complimented the heck out of it! ❤️ Makes me think I should try more things that scare me! HAPPY THANKSGIVING EVERYONE! 😘
