Yesterday I baked this golden delicious Jerusalem Bread - كعك القدس. It was a habit for me to buy this bread on a regular basis after school in the old city. It is also sold off wooden carts in the streets in Ramallah, Al Bireh and neighboring cities. Palestinians traditionally have it for breakfast, lunch and between snacks where they eat it along with cheese, olives, eggs, hummus and of course za'tar. The street carts would sell it with a delicious wood fire roasted eggs with charred shells, and a salty herby za'atar. The bread is delicious due to it's crispy exterior followed by its soft and spongy interior. The team are pictured here at the end of a 500m walk through an ancient tunnel, hewn by King Hezekiah to protect #Jerusalem from Assyrian attack over 2700 years ago. You can walk through the tunnel with the waters of the Gihon Spring lapping at your feet and arrive in the Pool of Siloam.
