It's always easier grocery shopping with a toddler, right? This one spent the trip eating bananas, an $8 bag of dried strawberries ๐Ÿ˜ฌ๐Ÿคฆ๐Ÿฝโ€โ™€๏ธand chocolate pudding off the shelf. One of these days I'm going to forget my wallet and not be able to pay for all the half eaten food in my cart. ๐Ÿคท๐Ÿฝโ€โ™€๏ธ
This week's meals:
๐ŸŒถ Veggie pasta salad ๐ŸŒถ Roasted butternut squash with farro, veggies, vegan sausage and parm ๐ŸŒถ Spaghetti squash enchilada boats ๐Ÿšฃ๐Ÿผ And that's all I could come up with this week. I think a mid-week grocery trip will happen, especially now that I'm upping mileage (8 miles to start my Monday!) and eating everything.

I skipped yoga last week because I was "too busy" ๐Ÿ™…๐Ÿผ and didn't journal once. ๐Ÿ‘‰๐Ÿป But, this past weekend I finally told myself I NEEDED to take some "me" time!  So that's what I did. My rapidly growing rabbits reunited in the holidays for some creative cooking sessions! We have some beautiful pork ribs from our local friends @riverinaberkshire and some marinade whipped up for dinner. I sat at the bench and directed - I think I've got a good thing happening here! The marinade was gluten, dairy, wheat and egg free which is an essential part of my gut healing program - compliance is crucial to getting things back in balance. I'm looking forward to helping anyone who feels their guts aren't firing on all cylinders! Yum!! I had a pack of chicken tenderloins that I needed to use and was scouring my brain for something to do with them when I remembered @paleobailey is the queen of easy one pan meals! I found her honey mustard chicken & veggies recipe and made it + roasted carrots for dinner. I will definitely be making this again! 
Also, I found out tonight how little 2lbs of carrots really is. There is maybe a handful leftover for lunch. ๐Ÿ˜ฌ

Spaghetti vegetable sprouting up in pots in a 'mini greenhouse' set up. For some of my seedlings, I am trialling using old plastic quilt/ blanket covers to keep my potted seedlings safe from snails and slugs this year! ๐ŸŒฑ๐ŸŒฑ๐ŸŒฑ Whilst spaghetti vege/ squash seed is usually planted direct, I like to start a few early and see how they go when transplanted, as we have a short warm season here in Canberra, so why not try?

Crispy spicy tofu for dinner

Ingredients:
Tofu, I use Super Firm
A little of your favorite oil
@flavorgod Dynamite or your favorite seasoning 
Directions:
Open tofu and drain water and cut into cubes. 
Heat a touch of oil in a large skillet and add tofu cubes.
Cook tofu to your preferred consistency.
Add favorite seasoning or sauce.

A cleaned-up remix of shrimp scampi pasta! There are only so many omissions and substitutions you can make with a dish like this before you compromise on flavor. I'm pretty happy with the middle ground I found here! I used @jovialfoods organic brown rice pasta, which in my opinion has the exact same texture and flavor of regular spaghetti. For the sauce, I added 2 tbsp of @kerrygoldusa grass fed butter, a healthy splash of cooking sherry, 4 cloves minced garlic, 1/4 cup fresh squeezed lemon juice, a pinch of red pepper flakes, salt and pepper. I simmered the shrimp in the sauce until it turned pink, then tossed the sauce and shrimp into the cooked pasta. I topped it with fresh basil and diced tomatoes to finish. This dish has BIG flavor and I savored every bite. Can't wait to try it with spaghetti squash and ghee and report back!

FYI - Sugar of any kind is STILL sugar, so indulge moderately. ๐ŸฅƒSoda to be replaced by either la croix, kombucha, or naturally-flavored carbonated water. โœจThe benefits to this switch is reducing the sugar content and the threat of artificial sweeteners found in diet sodas. La croix is naturally flavored and a healthier option. Kombucha is another great option that still has sugar however it is quite low and provides you with beneficial bacteria for your gut! Flavored carbonated water is probably the hardest replacement however transitioning to this is a great option and an array of different flavors on the market. @wholefoods has a ton of options that are naturally flavored with elderflower being my top pick! Turmeric is bae. ๐Ÿคค I could basically put turmeric in anything (and I basically do ๐Ÿ™Š). One of my favorite ways to sneak in this #superfood is on pan seared salmon ๐ŸŸ. You can play around with it, turmeric is so versatile. Turmeric is bae. ๐Ÿคค I could basically put turmeric in anything (and I basically do ๐Ÿ™Š). One of my favorite ways to sneak in this #superfood  is on pan seared salmon ๐ŸŸ. You can play around with it, turmeric is so versatile. Us flexible dieters can get a bad rap sometimes. But that's usually because people don't truly understand what it is. #IIFYM does not mean "if it fits your mouth". It is NoT an easy way out or a way to eat junk food without gaining fat (although it is possible but not suggested). Educated nutrition coaches are not going to tell their clients to eat whatever they want "as long as it fits your macros" but what's important to understand is that it's a process. A process that requires everyone to follow certain guidelines as a series of priorities. First, you have to focus on hitting your macros, and understanding how to consistently reach your numbers on a daily basis. Second, once you've mastered the first step...you must comprise your daily food intake of mostly whole foods (and this is where things get tricky) and some treats here and there for flexibility to keep the diet sustainable long term. Third, we focus on adequate MICROnutrient intake, and most importantly adequate dietary fiber. If a client NEVER gets past the first step...we cannot work on the rest. What's important to understand is that flexible dieting does not mean HiGh carbs, or high fat, it means that it's specifically tailored to the individual based on their calorie needs, their theoretical, ideal macronutrient split, AND what THEY want Based on their regular eating habits with a focus on small changes as we go. You start cutting things out short term and you can bet you're going lose weight, but you can also bet that you're going to gain it back. And if you quit anything before successfully reaching your goal and then successfully learning how to maintain...it doesn't matter what diet you're doing, you will likely be right back to square one in no time. When it comes to fat loss, slow and steady wins the race but you have to stick it out, and you have to follow something you can maintain. Let's change our relationship with food and start loving life again, food included!

Prepped the meatballs for Mama Maria's Meatballs and the chicken for Sweet and Sour Chicken for the family to make for dinner this week. Also have a couple sauces made as well and some cauli rice & peppers for dinners.  Food prep is key to getting these guys to eat decently when I am not here. BUT -- I had a sweet tooth that I just couldn't shake. Candy corns were one of my downfalls. As the saying goes, I couldn't eat just one. I ate the whole bagful. Couldn't stop or help myself. And then I'd feel awful. Not with guilt or shame (though - yes - some of that). But physically...felt...awful ๐Ÿคข๐Ÿค’๐Ÿ˜ซ The #21DaySugarDetox helped me get control over my sweet tooth. You can get in control of your sugar cravings and unhealthy snacking but only if you eat foods that fill you up and keep you full for a long time. This is known as 'crowding out' . When the Crockpot Chicken Enchilada Stew is so good, everyone wants in on it. ๐Ÿ˜‹

Here are the deets on @bewelllovemel's creation:
1 lb chicken tenders (or wings/thighs)
1 tbsp avocado oil (or ghee, etc.)
1 jar enchilada sauce

Cook on low for 5 hrs, then add:
.
Diced sweet potato
Diced onion
Chopped carrots
Sliced mushrooms
Splash of apple cider vinegar
Seasoning as needed
.
Stir in and cook for another hour.
.
Done! Now add on top of rice, cauli rice, zoodles, pasta, etc. Throw on some kraut, a healthy drizzle of @nancysyogurt sour cream and hot sauce! Such a comfort bowl โค๏ธ.

Okay, I may not have used enough coconut oil on my waffle iron today, ugh! I assumed they were ruined since I had to scrape them out of the iron, but after a quick taste test I deemed them salvageable. I topped with a simple homemade concoction of 1/2 cup frozen blueberries and a tablespoon of ghee heated through. They may not be pretty, but these turned out ridiculously delicious! I will definitely be making this again. Hopefully my waffles won't stick next time. #ilovewaffles

Made @keto.connect chocolate chip cookies the other day and they were so delicious and I'm not a cookie person. Like a good baker I measured every ball and so I got 16 balls of 1tbsp each (not 12) so recalculate macros if you do. They were the perfect ending for my picnic meal. YUP...I've got a little vacation fluff...I enjoyed some chips & salsa this trip, some chocolate, and ate later into the evening than I normally would at home.

But for the first time, I chose to appreciate my body and all it does for me. I climbed cliffs and swam in crystal blue water. I went on long hikes and fun interval runs. I danced and I surfed. This body does so much for me. So thank you body! I promise I do love you!

Chicken salad has dates, celery, apple, chicken, primal mayo, ACV, cashew pieces and curry powder. 
Served it up on Apple "chips" with some broccoli slaw on top for some added veg! .
