Eggs, salad&shrimp&sweet potato, olives&dates, pot roast&potato&green beans

Current challenge: Really needing to find a snack with some substance that isn't meat (because I don't need more than I'm having), fruit (because lots of sugar), or nuts (because allergies). And because I would love to eat less potatoes at meals (because health).🙃 Bananas and avocados are a little on the "iffy" list of allergies too - but I'll have them occasionally.  Until then, I'll prob "crutch" a little too hard on fruit and potatoes. There are worse things to happen.

Afternoon tea is some banana sushi. Mountain bread spread with almond butter with a with a banana rolled up inside. This is the perfect snack to keep little tummies full until dinner with the almond butter providing a protein and healthy fat hit and some good carbs from the banana and mountain bread! And by the way, unless you get a perfectly straight banana I don’t know how those Pinterest people are getting theirs so perfect looking!

Roasted pork + pan fried potatoes in mustard sauce. This is one of my favorite recipes. Full disclosure -- it's an adaptation of a recipe from BlueApron. I tried the service for 1 week and hated that there were no leftovers and a ton of trash. {My recipe below}

1️⃣ In olive oil, roast all 4 sides of a pork tenderloin for 4 minutes on each side. Then place into a oven for 20 minutes @ 425°.

2️⃣ Slice tiny potatoes and a shallot. Pan fry with salt until brown and cooked. TIP: start the potatoes first!

3️⃣ On a pan mix 2 tablespoons butter, 1 tablespoon mustard, 1 tablespoon water, 1 teaspoon dried tarragon leaves, and and dash of thyme.

Mix and enjoy!

I had an idea of what I wanted to do and gave it a go. The result is this awesomeness for D22 M3: balsamic braised short ribs in the slow cooker. These beauties have been going all dat so when I came home, all I needed to do was roast some potatoes and carrots. The cherry on top?? It happens, eh? I’m into treats these days I guess lol it’s been kind of a topic... Now that I’m a “faster” I find I just don’t have a 🐮cow (ha ha #paleojokes 😂👌🏽) over when I eat my #sweettreats these days yanno 🤷🏻‍♀️ I just eat my #paleofoodstuffs like I eat anyway when I do eat (usually 18-22 hour fasting times ⏰) and life is good. I love having experienced all these different ways of eating so I can direct my clients/patients from experience! 3️⃣ @beardedbros bars are great, especially the Raspberry flavor bc it’s nut free, which I feel are easy to overdue.

5️⃣I like to have a variety of teas on hand. Sometimes a craving will pass after a cup of hot tea.

This photo is my beautiful salad that I had for lunch yesterday. Mixed greens, sliced radishes, green onion, cilantro, leftover Mexican pork and onions with a dollop of guac. I used olive oil for dressing with a sprinkle of salt. No heavy dressings needed!! I had left over Spanish style Cauliflower rice on the side too. It was a perfect throw-together meal!

Catching up. I’ll be honest. I’m not truly doing the Whole30 right now. Too many issues have come up and struggling with trying to be compliant while not having the money or motivation to really do it right. But here was tonight’s dinner (swipe right for the main dish) as well as a dish from @primal_gourmet #picadillo  Let’s be real for a moment. I am meeting with a surgeon soon to find out if I might need surgery on my right knee. It’s been in pain since the beginning of December so I’ve been taking it easy and not really doing a lot of movement. Even trying to get my 10,000 steps per day is extremely taxing. So when I was walking from my kitchen into the dining room this morning to clean up a dog mess, I missed the puddle that was right before it. Right leg went out from under me and my left knee twisted and I heard a crack. I’m able to walk but now with pain in my left knee. Calling the doctor tomorrow if it doesn’t feel any better. I hope I didn’t just put myself totally out of commission for a long time. Say a prayer for me for quick healing.

Typically Golden Milk has turmeric and other spices, sweetener and milk all heated together. Here's my method. PLEASE remember that turmeric is very intensely orange and will stain anything it comes into contact with (hands, beautiful manicures, cooking utensils 😬)

Recipe for Golden Milk starter paste 
In a color safe pot heat to simmering:
0.5 C organic turmeric from a trusted source (I like @thrivemkt )
1.5 T ground black pepper (essential for turmeric absorption)
1 T or more organic cinnamon 
1 T or more fresh ginger, grated .5 T organic cardamom .5 T organic ground clove (if you like, omit if you don't!)
0.5 C coconut oil (turmeric is fat soluble)
1.75 C filtered water 
Summer together until boiling, stir constantly for up to 10 minutes. Cool and transfer to a jar. Store in the fridge (mine lasts for 2+ months) 💛
To make Golden Milk (serves 1)
In a blender (I love @vitamix )
1 generous spoonful of starter paste 
Sweetener to taste (I use stevia leaf or honey)
Pink Himalayan salt to taste
2 T coconut cream or cashew cream

Steel-cut Oat PB & J Energy Bites! Ok, kinda weird, but I think energy bites are the cutest snack. Agreed? I'm usually too lazy to make them because I'm happy to just grab a small handful of nuts and some fruit instead, no prep necessary. However, on the rare occasion I do make them, I always think to myself, "why aren't I making these more often?". 😍 These are so nutrient dense that a little goes a long way. Like, two of these would probably cover your snack needs.

I created this recipe with my kids in mind, because they love PB & J, and I thought it would be fun to recreate those flavors in an energy bite. And, honestly, I knew I would want to eat a bunch of them myself, too. I used raisins to impart the grape jelly flavor, and included a balance of protein, fat, and slow carbs to ensure these morsels live up to their "energy bite" label. Feel free to sub out the peanut butter with sunflower butter if you need to keep things peanut-free.

I soaked the oats overnight first (really, it's no big deal at all), to soften them and make them more digestible. .

RECIPE: .
▫1/2 cup steel-cut oats (+ 1/2 cup warm or room temp water + 1 tbsp something acidic like lemon juice, kefir, or plain yogurt)
▫1/3 cup peanut butter or sunflower butter (sugar-free)
▫1/2 teaspoon vanilla extract
▫3 tablespoons raisins, finely chopped
▫1 tablespoon honey
▫4 scoops plain, unsweetened protein powder (I used @Teraswhey)

1. Place the oats, water, and acidic medium (see above) in a small, covered jar to soak overnight. No need to refrigerate this. In the morning, drain oats in a fine-mesh sieve for a few minutes. Using the back of a spoon, press the oats to get a bit more of the liquid out.

2. Place the drained oats and all remaining ingredients in a bowl and stir to combine thoroughly.

3. Roll into approx. 1" balls. Yields about 15.
