Got a lot of work done today so I'm feeling super productive - in reality I ordered some rice and string beans for lunch (sounds incredibly boring) because I couldn't cook so here's a throwback to this delicious bowl! Oil free potatoes with salad, cauliflower rice & mashed up avocado! I love super simple meals like these.
I can't believe September is NEXT WEEK! Summer has flown by. Can't wait for that fall aesthetic thooooo ❤️❤️❤️

Vegan sushi is never a disappointment, pink vegan sushi is however even better 😆 such a nice feeling to actually let go of my phone during the days. Usually I check instagram, email, Facebook and other social media pages like every other second. Now I have a strict two times a day rule which haven't actually been that hard. Just enjoying the archipelago so much that my phone seems pretty uninteresting 🙈 #effortlesseating
This is going to sound completely bonkers 😅but I'm completely gaga over these mini sweet peppers 🌶--have pretty much eaten the bag up ☺️But yeah and that was hard to do cuz I just want to admire their mega cuteness all day 😁So yeah just wondering if anyone can relate to being fixated on the beauty of a veg or fruit --so many! 🍉🍉🍎🍋🥑🥒🍍and if so which one? ☺️
In any event this dinner was kinda a mish-mosh of everything --have you ever had one of those days where you just feel so worn out and exhausted and all you crave are salty tortilla chips? Well I do! 🙋🏻So I just gave into my craving as I'm only human BUT along with my salty tortilla crisps overindulging in mega nutritious food such as #broccolisprouts , #raw French beans my aforementioned colourful sweet peppers --remember the nutrients are in the COLOUR 🌈so the more vibrant the BETTER & my cabbage salad from the night before..along with super healthy fats of avocado 🥑 & hummus ---so yeah pretty much have all the major foods groups covered 😏
I've two more nights til Brighton☀️ ⛱and I absolutely can't wait! Just hope I get my energy back and yeah you may see a few more fattening foods in my stories...like I said I'm only human and it's my first proper getaway this year so you best believe I wanna enjoy myself to the max! 🙂--and with my fast day & gym days done giving myself that pass 👌🏼It's all about balance ya'll 💕💕💕

Zucchini Chocolate Chip Muffins! 😁I recipe tested these fabulous muffins for my friend Jess, a registered dietician and recipe developer. These mini muffins use tiger nut flour for the base, mixed with shredded zucchini, chocolate chips, and dried cherries (which I subbed for dried apple). They are super moist, grain free, and low in sugar, but more importantly they are delicious and healthy!! Adults: 👍🏼👍🏼kids: 👍🏼👍🏼My youngest absolutely shudders 😱when she sees 👀 zucchini, but she gobbled these babies down with a happy face. Good morning! Had avocado toast for dinner last night, now I'm having it for breakfast. The bottom is avocado with salt, pepper, radish & mint. The top is avocado & LAVENDER SALT! My mom went to a lavender farm a couple of weeks ago and bought me some lavender infused salt and oh my god it's so nice on some avocado toast! It's not an overpowering flavor but very subtle. I loved it! It's already Wednesday which means we're halfway to the weekend BUT close to the fall semester aka prison. Anyone else starting school next week? Already started? How are you properly preparing?!!

Back at it with the food posts feat 🍝 Gluten free pasta with homemade tomato sauce topped with vegan Brie cheese and a basil cashew spread on top 👌🏽 Had this for lunch during work. Oil free, salt free. I'm trying to lean out a little bit (not much) so I've been super clean with my eating but will allow myself things like vegan cheese because why not 🤷🏽♀️ Moderation. I've been on a good track keeping with staples such as GF oats, potatoes, smoothies, fruit, and veggies, and gluten free pasta or rice noodles. Using all this goodness to keep me fuel and satiated and help me make some gains in my jiu jitsu practice. Taking it seriously even though I'll be gone for two weeks but I'll get right back into it 💪🏽 So happy I found something I love doing and also have a community of people I can share my passion with. I even have a study buddy/friend that I made and we help each other out. I love it 😍
Today I'm talking a rest day after going hard Monday and yesterday and am gonna spend some time with my girls after work. Tomorrow I'm meeting up with my old close friend that's back in my life again and we're gonna be going for a run together plus some calisthenics 😩😬 He's helping me get some strength and back into shape.
So excited and high on life right now 😍
Lentil and broccoli soup aka the Shrek soup 😂💚 Rough recipe:
1. Sautée onions and garlic.
2. Add veggie broth, red lentils and potatoes.
3. When the potatoes are halfway done, add broccoli.
4. When the veggies are done - blend blend blend. And enjoy 😎

Incredibile how in a small town like Cisternino, where most of the people are meat eaters, I found a vegan place where to eat... If you have the chance to pass by I truly recommend you this little restaurant!
What happens when it's your LAST DAY IN DUBLIN for a year (holy shizz how did that happen?)~the most decadent oats EVER: chocolate coconut oats, alpro go on, cherries, pip and nut maple peanut butter, vegan homemade salted caramels and choc shot (will SERIOUSLY miss this stuff in Canada, more than my friends 😎😂)
You know sometimes when you've got tomatoes at the back of the fridge and their skins are starting to go a bit wrinkly and you may not be too sure what to do with them. Ummm... yeah... make this soup. It's only 4 ingredients. It's not fancy, but it is tomato perfection.

The Mr got impatient defrosting the fridge and decided to hack at it with a knife. A face full of freon gas later and a quick race to use everything in the fridge resulted in tofu, sweet potato, spinach and all the vegetables in the house green curry. Le sigh!
spent the past two days about 95% unplugged • minus Google maps because my sense of direction is literally non-existent and I would probably not survive a day in this new city without a GPS 😂 • // instead I spent the day yesterday diving into two museums with some friends. & today we hopped on over to a board game cafe to have some rainy day fun. that was all followed by a delicious vegan dinner with my best girl & a long walk around the city // never forget how nice it is to put your screens down and look up once in a while. how do you like to unplug and unwind? 🔌
