Even after 20 months of doing strict Keto, I still have days where I scratch my head about correct portion sizes and balance of macros per meal. If you're starting Keto and find it all overwhelming with the temptation of falling back to old ways because "it's just easier"...don't quit!

Ok, so you guys that have been by my side for a while know I suck at writing recipes.  I try to explain how I make most of my foods in my instastory.  I took the time to write the recipe to the chicken I made last night and it didn’t even save  my long post 😂🔨. So here I am posting it again but minimal details this time 🤦🏻‍♀️. Ingredients:
4 chicken breasts
5-6 dried guajillo peppers
4 large garlic cloves or 5 small/medium
2 tsp dried oregano.  If you are using powder, use 1 tsp oregano powder. 
Salt to taste. 💕
You are going to remove the stem, seeds, veins from the peppers and boil the peppers in water until they become soft.  Once they are soft you will blend the peppers with the garlic, oregano, salt, and a little bit of the water you boiled the peppers in. 
Place the chicken breasts in the crockpot and season them with salt.  Pour the sauce over the chicken and cook accordingly.  I set my crockpot on high for 4 hours.  And they were done cooking a little before the 4 hrs.  I took out the chicken and shredded it.  Then poured some of the sauce that was in the crockpot into the shredded chicken.

Low carb Sausage Baby Cornbread stuffing made using Miracle Noodle Angel Hair shirataki noodles. .
Ingredients for Bread:

🔹1 Bag of Miracle Noodles, any variety (I used angel hair)
🔹2 large eggs
🔹1/3 cup melted butter
🔹1/3 cup coconut flour
🔹2 Tbs psyllium flakes 🔹1 tsp salt
🔹1 tsp baking powder
🔹1/2 can of baby corn, chopped; save liquid from the can up to 1/2 cup water
🔹1 tsp. of corn flavor (optional) .
Directions for Bread: .
1. Rinse and drain Miracle Noodles and prepare according to package instructions. (I dry the noodles by pan frying in a non-stick skillet until the noodles start to 'squeak'). Set aside to cool.

2. Roughly chop baby corn and add to a dry, non-stick pan.
.
3. Dry roast over medium-high heat until lightly browned.
.
4. Combine reserved corn liquid from the can with water to make at least a 1/2 cup of liquid.
.
5. Add noodles to a food processor and process until smooth.
.
6. Add eggs, coconut flour, psyllium, salt, baking powder and melted butter. Pulse until well blended. .
7. Add roasted baby corn and pulse until the corn is completely mixed in, and the mixture forms a soft, wet dough.

8. Remove from processor and spread dough onto a parchment lined baking pan (or use a silicone sheet).
.
9. Use a spatula to gently press dough to make it about 1/2 inch thick.
.
10. Bake at 325° for 30-40 minutes or until a toothpick comes out clean. It does not rise very much and does not have to be brown, as the bread will be further cooked when making the stuffing. Remove from oven and set aside to cool.

11. Once cooled, cut into small (1/2 inch) cubes and set aside. . * Instructions continued in comments for stuffing portion.

Do you/ have you ever consumed raw dairy? I hope you answered yes. Despite what industrial agriculture would like you to believe, raw daily is not going to kill you and is far superior to its pasteurized counterpart. In fact, I will not consume milk unless it is raw. .

Pasteurization of dairy means that all enzymes are killed! This leaves you with a dead substance that is a lot harder to digest. This is why those who are lactose intolerant can often consume raw dairy without issue because the lactase enzyme is still fully intact.

In addition to being easier to digest, raw dairy is also more nutrient dense. Raw dairy from grass-fed cows is loaded with fat soluble vitamins, micronutrients, healthy fats such as MCTs, and immune supportive bacteria.

If consuming raw dairy, I recommend getting the whole milk variety so you can take advantage of all the fat to aid in the absorption of the fat soluble vitamins. Keep in mind that dairy is not tolerated by everyone. One final consideration for dairy if you have issues is to consider buying A2 dairy. There is some evidence suggesting that at A1 casein primarily found in US dairy is not as well tolerated compared to the A2 variety.

Keto has definitely helped me reduce my body fat, I'm definitely happy with this result. I have lost 4kg of lean muscle mass, which is lots, now time to stick to keto and try get some muscle back! Haha!

Found these at Whole Foods today. WHAT?! Bacon To Go?! I’M IN! 🥓😍🎉🤗. It was great. Two strips of bacon per pack and these were being sold 2 for $1.99. They look super clean, too and there were really tasty... Not bad on the run! 🥓🥓🥓.

Yet again dispelling the silly myth that excess protein ramps up gluconeoegenesis and thus bye bye ketosis. Last year I did a lot of protein (450-500gms) with typical keto fat intake to test the GNG monster and had very adequate blood ketone readings to yet again dispel the silly myth of GNG monster

GNG happens all the time, we do not have super powers that alter the rate of GNG via eating "too much" protein. Only diabetics may have to watch out for this

This time around I tested the GNG monster again by keeping protein rather high BUT keep fat LOW. Results on ketone levels = same. Why you say? Because CARBS...that is, the restriction of carbs is all that dictates whether you are on a ketogenic diet or not

Yup a ketogenic diet is and ONLY is about carb restriction. Eat as much fat as you want per your goal but realize 0 grams of fat or 500grams of fat (as long as carbs are restricted) is a ketogenic diet. That being said, don't chase ketone readings; chase results. "Too much" protein doesn't "kick you out of ketosis". I have helped many over weight men & women, (T2D, those with insulin resistance, etc) do this (not fear protein) with the same results so my level of muscle mass, body fat level, etc is irrelevant

Compare this to my normal keto macros of 200-250gms protein, 75-125gms of fat, under 30 grams of carbs. Funny thing is I get "better???" (higher) readings when doing PSMF. This is serious/real ketosis, not fake ketosis (peetosis) from exogenous ketones or stuffing your face with fat/oil/butter/etc just to feel proud over a high number on a meter; my body is super-efficient at mobilizing fats as energy as is anyone else who restricts carbs long enough and doesn't over feed on fat or consume exogenous ketones as too many keto dieters do

Couldn’t be more accurate... just because it’s bulking season doesn’t mean I can get to carried away here.. gotta keep the focus through the holidays. This will be the first holiday season of my life where I have to stay disciplined with my diet choices if I want to reach my goals by spring. Some will tell me I’m being to hard on myself, some will tell me I’m not living my life. I just look at them like their quitters and my goals are far more important then giving into cravings just to satisfy an ill will temptation at the moment. The truth of the matter is- once goals have been reached and you look back on all the hard work it took to get there... well.. that feeling is way better then a poor diet choice has ever made me feel!  Stay focused. Today starts day 9 of PSMF and I'm down seven pounds. I've been pretty strict the whole 8 days except on Tuesday last week and yesterday I had an off plan meal on both days at 12 noon.. basically a standard ketogenic ratio meal but nothing crazy no carbs or refeed all week.  If I can squeeze out another 2 pounds I'll be lucky so let's see what happens with my goal of 10 pounds after 10 psmf days

My numbers are going to be skewed because I started taking creatine a few weeks ago which I haven't taken in ages so I know the water weight is adding up

Why #PSMF? It's a quick way to drop fat fast while preserving lean mass. It is VERY high protein and very low fat and carbs, usually 25gms or less of each. It's sort of similar to what competitive bodybuilders and Fitness competitors call "peak week" except this is much worse LOL

Had one too many #snaccidents late summer and early fall so need to get back to my "fighting weight" then relax until the end of the year before I get serious in Jan/Feb when I start to bring the summer bod back. Also, I didn't want to have a feast on Thanksgiving without properly preparing my physique :-) and the great thing about this protocol is that it's required to have a nice big refeed after you finish those 10 days or so. :)

🍯 Salted Keto Caramel:⠀
2 tbsp water (30 ml)⠀
½ cup Swerve or Erythritol, powdered (100 g/ 3.5 oz)⠀
2 tbsp unsalted butter (28 g/ 1 oz)⠀
½ cup heavy whipping cream (120 ml/ 4 fl oz)⠀
1 tsp sugar-free vanilla extract⠀
pinch of sea salt or pink Himalayan salt⠀
⠀
🍬 Candies:⠀
75 pecan halves (125 g/ 4.4 oz)⠀
1 cup sugar-free chocolate chips or 85% dark chocolate bar (160 g/ 5.6 oz)⠀
1 tsp virgin coconut oil⠀
flaky sea salt, for topping⠀
⠀
✳️ Net carbs per candy: 1.9 grams (recipe makes 25 candies)⠀
⠀
1️⃣ Start by making the caramel. In a medium sized pot combine the water and Swerve. Set over medium heat and bring to a simmer. Continue to simmer for 5-7 minutes until it turns golden and has reduced. Whisk in the butter, cream, vanilla, and salt. If it’s too thin keep simmering until it is slightly thick. Note: it will thicken as it cools as well.⠀
2️⃣ Melt the chocolate and coconut oil over low heat until smooth, set aside.⠀
3️⃣ Line a baking sheet with wax or parchment paper. Arrange the pecan halves into groups of three. Top with a dollop of caramel, a dollop of chocolate, and a sprinkle of salt.⠀
4️⃣ Chill until ready to serve. Store in the fridge for up to a week.⠀

When you are on keto, you should be prepared with some snacks stocked up in order to avoid binging on something that you'd regret later. Lesson learned!
