Lunch for tomorrow! Halibut, 1/4 avocado and a mason jar caprese salad! Yum! I will be up before the chickens and I'll be working a very long day in the OR tomorrow. This is how I keep my energy going! Did I mention I'm down 2 scrub sizes and back into a standard size surgical gown?!?! Everyone is starting to notice and it feels amazing. I have to give a shout out to this delicious fish 🐟 My coworker brought me some beautiful halibut steaks that he caught on a recent trip to Alaska! I can't even get over how delicious it tastes. The top ones are from around Halloween (last year) and the bottom ones are from this week. The third pic is what I wore for a Halloween costume last year. 😁 This year I think I am going to be a Baywatch lifeguard. 😅 If you have a better idea, I am all ears.
Lazy dinner. I use a @latortillafactory low carb Tortilla as my base and add whatever toppings I got on hand! This takes 10 minutes in the oven. Meals don't always have to be so complicated. Also got a @lacroixwater lemon 🍋 because the obsession is real.
Tortilla chips were cut into triangles and fried in coconut oil on medium heat. Not as crunchy like a normal chip but keto friendly AF 👌
Spinach artichoke dip:
1 8oz cream cheese (softened)
3/4 c mayo
1/2 sour cream
1 c shredded mozzarella
1/4 c shredded parmesan
1/4 c shredded pepper jack
2 c frozen spinach
1 can artichoke hearts ( drain and chop)
1 TBS minced garlic
1/2 TBS garlic salt
Salt+ pepper to taste
Fold together with spatula. Place into 8x8 pan. Top with precooked bacon pieces. Bake for 25 minutes at 375

Pot roast for dinner tonight! The meat was so tender and delicious. I obviously made the potatoes for my family, but I ate a few carrots, smothered my meat in butter and cheese, and threw DOWN! I'm anemic, so I crave red meat in the worst way. Luckily there's enough of this leftover for a few more meals. 😋
Day 86: #ootd 🦄 Luckily snapped a picture as soon as I got to work today since I was only there a couple hours. Daycare called me to pick up the big little with a 103.4 fever! This has been a sickly week at our house. 😥

Tonight's carb up meal is brought to you by leftover rice from the last carb up with some palak paneer on top. A couple of days ago, my girl @100ketodays messaged me because she wasn't feeling like herself and was considering a carb up. She tried it, and guess what? SHE FELT SO MUCH BETTER! Like to the point where she's going to try to implement a carb up each week! I'm proud of Alexis because it can be scary to go from a strict keto approach to strategically adding carbs, but she did it and she has no regrets!
I carb up every 3-4 days normally to regulate my gherlin and leptin (reset hunger and fullness hormones). I do it at the end of the day because #carbupsleep . You need at least 50g of carbs minimum, up to 1.5 times per pound body weight, the amount will vary by person so it will take some experimenting, as well as experimenting with the source of carbs. I don't recommend carbing up with junk food because 99% of the time, I don't eat junk food (super processed, sugar laden shit). When you do a carb up, you should swap the fat for carbs after a normal day of keto eating -- in other words, for the last meal, don't eat high fat AND high carb, you should get MAX 3 tbs fat in a carb up meal.
