- 1/4 tsp thyme⠀

- 1 whole chicken⠀
- 10 cups of water⠀
- 1/2 yellow onion, peeled and quartered⠀
- 1 tbsp organic onion powder⠀
- 2 tbsp minced garlic⠀
- 1 tbsp garlic salt⠀
- 1 teaspoon dried thyme⠀
- 3 ribs of celery (use the leaves - they're loaded w/ vitamin c, calcium and potassium)⠀
- 2 bay leafs⠀
- 1 tablespoon apple cider vinegar (important ingredient, don't nix this one!)⠀
- pink himalayan salt and freshly cracked pepper to taste⠀
- cheesecloth, or a fine strainer⠀
⠀ --- Directions ---⠀
- Set aside your gizzards and any other innards that come with your chicken.⠀
- Add a little salt and pepper to your chicken and smoke as you normally would - cook until 180 degrees.⠀
- Pick off all the meat you want to eat, leaving the carcass behind.⠀
- Add the carcass and the innards to a crockpot on low⠀
- Add the rest of the ingredients.⠀
- Cook for at least 12 hours on low with the cover on (so the water doesn't evaporate) -- you can cook even longer, I think mine went for 16 hours and some people let theirs go for 24 hours.⠀
- Because you cooked the chicken first, you won't have as much fat and gooey stuff on top like other recipes. But if you do, just scoop them off the top.⠀
- Pour the broth through the cheesecloth or fine strainer (I never have cheesecloth around, and a fine strainer works fine for me).⠀

- ½ pound salmon⠀
- 1 tablespoon olive oil⠀
- ¼ teaspoon celtic sea salt⠀
- 1 medium cucumber, peeled, seeded and diced⠀
- 1 shallot, minced⠀
- 1 serrano chile, remove seeds, minced⠀
- 2 tablespoons mint leaves, minced⠀
- ¼ cup lime juice, fresh squeezed⠀
⠀ --- Directions ---⠀
- Turn oven on to 500°⠀
- Cut fish into 2 pieces, leaving skin on; rinse and pat dry with paper towel⠀
- Place fish skin side down on a metal baking sheet⠀
- Rub fillets liberally with olive oil, then sprinkle with salt⠀
- Reduce oven temperature to 275°, then put sheet with salmon on lowest rack⠀
- Roast 8 to 13 minutes ?so that centers of thickest part of fillets are still translucent when cut into with a pairing knife⠀

- 3 cups baby spinach, roughly chopped⠀
- 1 cup full fat coconut milk⠀
- ¼ cup lemon juice, freshly squeezed⠀
- ¼ teaspoon celtic sea salt⠀
- ¼ cup olive oil⠀
- 1 pound salmon⠀
- 12 sprigs thyme⠀
- 1 tablespoon olive oil⠀
- 1 teaspoon celtic sea salt⠀
⠀ --- Directions ---⠀
- Heat olive oil in a large skillet⠀
- Saute leeks and fennel for 6-8 minutes until soft⠀
- Stir in thyme and spinach and cover skillet for 2-3 minutes until spinach is thoroughly wilted⠀
- Stir coconut milk into mixture⠀
- Transfer mixture to a vitamix and puree on highest speed until smooth⠀
- Blend in lemon juice and salt⠀
- While vitamix is running on medium speed, slowly drizzle in olive oil⠀

- Gather all your supplies together, get your slow cooker plugged in and let's get started.⠀

- 2 tablespoons Tones Southwest Chipotle Seasoning⠀
- 2 teaspoons Mrs. Dash Table Seasoning⠀
- ⠀
⠀ --- Directions ---⠀
- Preheat your oven to 375F convection bake.⠀
- Weave the bacon. 15 pieces that are vertical, 12 pieces horizontal, and the extra 3 cut in half to fill in rest, horizontally.⠀
- Season your bacon with your favorite seasoning mix.⠀
- Add your cheese to the bacon, leaving about 1 1/2 inch gaps between the edges.⠀
- Add your spinach and press down on it to compress it some. This will help when you roll it up.⠀
- Roll your weave slowly, making sure it stays tight and not too much falls through. You may have some cheese fall out, but don't worry about it. Add your seasoning to the outside here, if you'd like.⠀

Buffalo Chicken Jalapeno Popper Casserole⠀
⠀ --- Ingredients ---⠀
- 6 small Chicken Thighs⠀
- 6 slices Bacon⠀
- 3 medium Jalapenos (De-seed if you aren't a fan of spicy)⠀
- 12 oz. Cream Cheese⠀
- 1/4 cup Mayonnaise⠀
- 4 oz. Shredded Cheddar⠀
- 2 oz. Shredded Mozzarella Cheese⠀
- 1/4 cup Frank's Red Hot⠀
- Salt and Pepper to Taste⠀
⠀ --- Directions ---⠀
- De-bone all chicken thighs and pre-heat oven to 400F. Season chicken thighs well with salt and pepper, then lay on a cooling rack over a cookie sheet wrapped in foil. Bake chicken thighs for 40 minutes at 400F.⠀
- Once your timer hits 20 minutes, start on the filling. Chop 6 slices of bacon into pieces and put into a pan over medium heat. Once bacon is mostly crisped, add jalapenos into the pan.⠀
- Once jalapenos are soft and cooked, add cream cheese, mayo, and frank's red hot to the pan. Mix together and season to taste.⠀
- Remove chicken from the oven and let cool slightly. Once they are cool enough, remove the skins from the chicken.⠀
- Lay chicken into a casserole dish, then spread cream cheese mixture over it, then top with cheddar and mozzarella cheese.⠀
- Bake for 10-15 minutes at 400F. Broil for 3-5 minutes to finish. Optional: Top with extra jalapenos before you broil.⠀

⠀ --- Ingredients ---⠀
- 2 lbs ground beef⠀
- 1 yellow onion⠀
- 1 red bell pepper⠀
- 32oz of 100% tomato juice (add more if you like a thinner chili)⠀
- 28oz can of tomatoes, diced in tomato juice⠀
- 15oz can pure 100% pumpkin⠀
- 1 tbsp pumpkin pie spice⠀
- 1 tbsp chili powder⠀
- 2 tsp cayenne pepper⠀
- 2 tsp cumin⠀
⠀ --- Directions ---⠀
- Brown the meat in a large pot over medium heat. Strain and then put back in the pot.⠀
- Chop the onion and pepper, then add into the pot with the meat, cooking until the onions become translucent (3-5 minutes)⠀
- Add in the rest of the ingredients and let simmer on low for 30 minutes.⠀
- Taste your chili, adjust seasonings as you like and cook for another 30 minutes.⠀

- 1 ½ pounds ground beef⠀

- 4 medium bell peppers⠀
- 3 tablespoons olive oil⠀
- 1 tablespoon soy sauce⠀
- 1 tablespoon minced garlic⠀
- 2 tablespoons sugar free ketchup⠀
- 2 teaspoons oregano⠀
- 1 ½ teaspoons worcestershire⠀
- 1 teaspoon hot sauce⠀
- 1 teaspoon liquid smoke⠀
- ½ teaspoon ground black pepper⠀
- ⠀
⠀ --- Directions ---⠀
- Add all your ground beef, oil, and spices into a Ziploc bag. mix them well until all ingredients are combined.⠀
- Marinate this in the fridge for 3 hours.⠀
- Get a pot of salted water boiling on the stove, and while it is coming up to a boil, take out the core of the peppers.⠀
- Blanch the peppers by boiling them for 3 minutes and then removing them from the water to dry.⠀
- Preheat your oven to 350F⠀
- Fry some bacon that is finely chopped, don't cook it all the way - you just want to par cook it. Mix it in with the beef when done.⠀
- Stuff the peppers with the bacon and beef mixture.⠀
- Cook the peppers for 50 minutes, or until the meat inside is medium temperature.⠀
- Add cheese on the top of the peppers and broil them, or broil them naked to get a char on the top.⠀

I cooked this rib eye steak with no oil at all! I just used water to saute the garlic. 🤗 As for the salad, that’s just lettuce with my very own Balsamic Pesto dressing - again, no oil! ❤️ Are you gonna follow a specific diet this 2018??? Need to hear your ideas!! 😘

"Kitchen Sink" Low Carb Pizza⠀
⠀ --- Ingredients ---⠀
- 2 1/4 Cup Mozzerella Cheese⠀
- 3/4 Cup Almond Flour⠀
- 4 Slices Bacon⠀
- 1 Can Pre-cooked Chicken Breast⠀
- 9 Tbsp. Creamed Spinach Dip⠀
- 2 Tbsp. Cream Cheese⠀
- 2 Tbsp. Parmesan Cheese⠀
- 1 Large Egg⠀
- 1 Tbsp. Italian Seasoning⠀
- 1/2 tsp. Salt⠀
- ⠀
⠀ --- Directions ---⠀
- Add 1 ½ cup mozzarella cheese to a bowl.⠀
- In a separate bowl, measure out 3/4 Cup Almond flour. Combine the parmesan cheese and italian seasoning with it and mix well.⠀
- In a small ramekin, have your cream cheese and egg ready.⠀
- Microwave your mozzarella cheese for about 45 seconds until it is gooey.⠀
- Combine all of your ingredients in a large bowl, and mix it together well.⠀
- Keep kneading the dough together until you can form a ball. Add more almond flour if needed. ⠀
- Spread the dough onto your pre-greased baking sheet. You want to make sure the pizza dough is thin and has no holes. It should be around 10-12" in size.⠀
- Set your oven to broil setting. Cook for 5 minutes once the oven is heated.⠀
- Remove from the oven, flip the crust (carefully, so as not to break it), and put it in the oven for another 5 minutes.⠀
- Remove from the oven and begin to add toppings.⠀
- Cook your bacon. Cut it into small strips and fry. Drain and SAVE THE GREASE⠀
- Fry your chicken in the hot bacon grease and measure 9 tbsp of the spinach dip. Once the chicken is done, combine these together, making sure all of the chicken is coated.⠀
- Top the pizza with the chicken mixture, making sure it’s evenly coated.⠀
- Put the rest of your mozzarella cheese on top and add the bacon.⠀
- Add the pizza back into the broiler for roughly 5 more minutes- until the cheese browns.⠀
- Let cool 10 minutes, cut, serve, and enjoy!⠀

Chicken Parmesan Recipe⠀
⠀ --- Ingredients ---⠀
- 4 chicken breasts, boneless, skinless (1 to 1½ lbs total)⠀
- 2 cups blanched almond flour (not almond meal)⠀
- 2 large eggs, whisked⠀
- 6 tablespoons salted butter⠀
- 2 (7 ounce) bottles tomato paste⠀
- 2 cups water⠀
- 1 teaspoon herbes de provence⠀
- 6 cloves garlic, sliced⠀
- 16 ounces mozzarella cheese⠀
⠀ --- Directions ---⠀
- Cut chicken breasts in half for thinner cutlets; pat dry⠀
- Dip cutlets in egg, let excess run off then coat with almond flour⠀
- Melt butter over medium heat; sauté chicken until deep golden brown on both sides⠀
- Remove chicken and drain on paper towel⠀
- For sauce combine tomato paste, water, Herbes de Provence, and garlic in a pan⠀
- Simmer for 15 minutes⠀
- Place ½ cup tomato sauce on bottom of a 7 x 11 inch baking dish⠀
- Place cutlets in a single layer; cover with remaining tomato sauce and mozzarella⠀
- Bake at 400° for 10 minutes⠀
- Serve⠀
