My Keto diet officially starts in 4 days when my vacay is over. Did some grocery shopping today. thats 10lbs of ground beef. im ready lol

Ingredients:
12 small sweet peppers, halved lengthwise and seeded
ยฝ package (4 ounce) cream cheese, softened to room temp
ยผ cup shredded mozzarella cheese
ยผ cup shredded cheddar cheese
ยผ cup grated Parmesan cheese
ยผ cup crumbled feta cheese1 cup spinach chopped1 teaspoon salt
ยฝ teaspoon ground black pepper
ยผ teaspoon garlic powder

Instructions
Preheat oven to 450 degrees F degrees. Line a baking sheet with aluminum foil or lightly grease with oil.

In a Medium mixing bowl, combine the cream cheese, mozzarella, cheddar, Parmesan, and feta cheeses. Toss in chopped spinach, salt, pepper and garlic powder. Mix everything with a fork until the mixture is fully combined. 
Arrange sweet peppers on prepared baking sheet. Spoon about 1 tablespoon cheese mixture into each pepper.

Bake in the preheated oven until cheese is melted and bubbling, about 10-15 minutes. Serve warm. Enjoy!

Directions

Preheat the oven to 350 degrees fahrenheit. Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken. Bake for 16 minutes. Meanwhile, make the creamed spinach. Over medium-high heat, melt 2 tablespoons olive oil in a skillet. Add in the onions and saute 2-3 minutes. Add in the spinach and garlic. It will shrink ridiculously. When itโ€™s cooked through, stir in the cream cheese and parmesan cheese. Continue cooking and stirring until the cream cheese is melted. Remove from heat. For the mushrooms, melt butter and 2 tablespoons olive oil in a skillet. Put the mushrooms in and cook until browned all over. Donโ€™t season with salt until they are browned or they will never brown. Deglaze the pan with the wine. Add in the garlic and season with salt and pepper. Cook until most of the wine is cooked out. Serve the chicken with some of the mushrooms and spinach on top.

My body does best when I include lean protein at each meal! I try to load up my plate with veggies cooked in butter or coconut oil and have some protein with it. Simple, filling, and good!

My workouts have def changed since I dislocated my ribs...I haven't done anything high impact at all. I'm focused on movement just to feel good, not to get ripped or anything. I'm cool with it. I don't ever want to go through that pain ever again (worse than giving birth!) so walking/hiking, biking, rollerblading, yoga, and strength training is my jam.
