I had no idea I would find such an amazing community and frankly meet some people who I really consider friends. I am finally able to exercise again after my hernia repair💪 So, I did today and it made me so hungry! I tried out something new again and made spinach with avocado & eggs, baked with cheese👌😋 This is the first dinner, second one coming in 1-2 hours as I am really hungry!! Servings: 2
Prep time: 5 minutes
Cooking time: 25-30 minutes
Ingredients: 600gram spinach, 1 big onion(sliced), 1 avocado(diced), 75gram butter, 3-4 eggs, 200gram shredded gouda cheese
Seasonings: Salt, pepper, chili, coriander, Italian herbs
Preparation: 1. Preheat oven to 160°C
2. Cook spinach in a pot, or in the microwave until it is done
3. In the meantime, fry the onions in an oven-suited pan until crispy
4. Then, add the avocado and butter
5. When the spinach is done, put it into the pan too, add the seasonings and stir everything
6. Drop eggs on top and scatter the cheese
7. Put pan into the oven for 5-10 minutes, until the cheese becomes how you like it
Attention: Do not burn yourself with the hot pan handle, like I did! 😂
You may add as many additional cheese or butter as you like, or even stir some (cream) cheese into the spinach 🙌
Okay guys... I tried out a new recipe this morning! It sounds weird, and some of you are going to think it's gross! (No need to comment that lol) But it was surprisingly pretty good! I was worried about the texture but it wasn't bad! Similiar to the real thing!
Here's the recipe:
•Combine- 3 eggs, 1/2 cup heavy whipping cream, sweetener of choice, cinnamon or flavor extract of choice (to taste).
•(Optional- mct powder)
•Whisk ingredients together.
•In a sauce pan, melt 2 tablespoons of butter on medium heat. (Do not scorch it!)
•Once liquidy lower heat and pour in the mixture, continue stirring the entire time. •The eggs will begin to curdle. Just before it begins to stand and its still liquidy, remove from heat and transfer to bowl! •Remember to stir the whole time! •Add additional sweetener or berries if desired. Enjoy!!

Made this little snack for Rocco. It’s lavash bread with a cheese blend and herbs on top. The sauce is Rao’s marinara. He said it tastes just like cheesy garlic toast. Hubby’s been laid up on the couch from his surgery. He’s been nauseous which has helped him fast several days. It’s been a week and he’s getting better each day.

Yesterday, I had coffee at a restaurant and then Starbucks at night instead of my usual coffee at home. I can honestly say I missed *my* coffee, and I think my stomach did as well. I’m glad I can order coffee out if I need to or want to, but I’m happier with my HWC+SF syrup+collagen+MCT oil powder coffee. •
This morning has been all about resting. We are debating going to a local fall event or just being lazy and staying home all day. Do you have any big weekend plans?
Last night's grocery store goodies.. not much, but I'm so happy to have found a low carb pizza/marinara sauce and reduced sugar ketchup courtesy of @shauna_kat for my breakfast wraps 😋 (I'm a little picky with pizza/marinara sauces but the Rao's is actually really good!)
I have always been a lover of Nexxus shampoo and conditioner however I found this at Walmart the other day I absolutely love it and I saved myself $30 or $40! I've seen a lot of posts of people saying their hair is thinning doing the keto diet!
