My awesome meatloaf recipe: keto friendly! 80% lean ground beef stuffed with mozzarella, spinach, tomato and feta! So freaking good and I ate it for several days. If I'm cooking in bulk, I like to cook with red meat because I feel like the tastes last longer, and even gets better compared to chicken. To me, microwaved chicken is pretty damn gross, so if I eat chicken the next day its most likely being eaten cold. For my second meal I got egg drop soup 🍜 cause I have a cold and I knew the soup would have me full and warm which it did and I didn't feel the need to binge. Sucks tomorrow tho I'm doing a show where they feed us lunch and I know they always feed us pizza 🍕🤦🏽‍♀️ pretty nervous about it, still thinking what to do. I don't have any prepared foods cause I haven't gone shopping. I know if I eat the pizza purging will definitely follow. I can't wait to destroy this extra 25 lbs that's making me feel subhuman. Get to where I can eat pizza and not feel unworthy of life. Homemade Broccoli and Cheddar Cheese Soup! This soup is very keto-friendly and delicious! 😋🍵 1 cup: 18g Fat, 5.5g Carbs, 12g Protein. 
Super simple: just cook 5 tbsp of butter and 1 onion together. Add 6 tbsp flour and whisk together. Add 2 cups half and half, add 6 cups low sodium chicken broth. Whisk together. Add salt, pepper, and nutmeg. Bring to boil. Add 1 head of broccoli, cook about 5 mins. Add 2 cups cheddar cheese and 1 cup velvetta cheese. Mix until melted! Makes 12 cups! Top with parsley and serve!

{Day 184} Just laid my head down and realized I didn't post that today is my 6 MONTH #ketoversary! I started this journey the day after Easter this year on April 17th. I had planned to challenge myself with 100 days of strict keto in order to lose weight for an anniversary trip. Well, 100 days came and went and here I am still just racking up the days now close to 200 days of #nocheat keto! I think back to who I was 6 months ago and I can hardly believe how much I've changed. I've lost 32 lbs and countless inches and have gained back my confidence and my life! My fruit bowl always looks so bereft with just garlic and onion sitting in it. So, I grabbed the avocados off the windowsill, some lemons off my tree and the berries from the fridge and arranged them all for this nice family photo. This is basically the only fruit I have (other than olives, raspberries, desiccated coconut, blackberries, capers and the occasional lime).

Today was a long day, I juggled simultaneous urgencies all day at work, and then a tired and trying toddler at night. I could feel my nerves "frying", I didn't help my situation by skipping meals... I ate my first meal at 8pm 😳 Although you can't make up for missed meals I selected the perfect dinner meal to attend to my nervous system, and blood sugar! And for dessert I made a fat-bomb hot chocolate! This was deeply satisfying and grounding. -----------------------------

I watch some of these DS companies fail. It wasn't until I was with the company for a month that I finally realized "Oh my gosh. This company is great." From core values of the company to incentives, its crazy! I never saw myself ever doing anything with Health & Wellness or Social Media! But here i am! I've been with the company for about 5 months now and I couldn't be happier with my choice. Debt free. Full time in a social work program for my Bachelors & Masters (paid for in cash with my bonuses!) my husband and I are now saving up for our first house and a down payment for my first ever brand new vehicle. I riffed on enchiladas and fajitas and made a chicken enchiladas fajita bake which is less than 5g total carbs per serving, thanks to #traderjoes enchilada sauce which happens to be low carb! Quesadillas made with #josephslavashbread were the perfect accompaniment to this #ketofriendly meal!

WHAT?! #ketopizza on a Tuesday! The dough is #fatheadpizzacrust by #wholesomeyum. It’s 1 1/2 cups of shredded mozzarella with 2 tbsp of cubed cream cheese. Melt together in microwave for 90 seconds (stirring half way through). Add 2 beaten eggs and 1/3 cup of coconut flour and stir together. Knead until you get dough! It says to put on parchment paper but I wouldn’t (it stuck to the paper), just put on a greased pan. Preheat oven to 425 and poke holes into the dough so it doesn’t bubble. Bake for 6 minutes and take it out then poke more where you see bubbles. Bake for an additional 3-7 minutes. When you add toppings bake for another 10 minutes! This pizza has #raos tomato basil sauce (2 net carbs), about a cup of cheese (3 net carbs), 9 pepperoni, and a hand full of olives. The dough it self is 2 net carbs per 1/8. It comes out to about 2 net carbs per slice! I had 3 slices. So good!
