SUPPER: This doesn’t look like much, but this brown butter mushroom 🍄 soup was 👌🏻👌🏻👌🏻. I saw @ketoandcheese talk about mushroom soup one day and the recipe is from @fooddreamer. It was warm and creamy and hit the spot. It was kind of like Thanksgiving in a bowl with all that sage happening. I made a couple of adjustments based on ingredients I had on hand. I used beef broth and added a little more broth than it called for, poultry seasoning (thyme, sage, etc), and added a little xantham gum in hopes that it would thicken the soup. I wish I had an emulsion blender, because I think it would have been creamier than my little pint-sized food processor made it. Definitely adding this to my recipe rotation. Go make ya some!
Pushing my window gradually closer to dinner time. I ate way too much today, feeling stuffed. Can't get my head around having a small portion when I only eat once... even though my body seems quite happy to be fueled by the junk in my trunk 😂😂
SUPPER: A picnic at the park and a quick, hot meal when I got home...I made my first skillet pizza and it was a flop. I wasn’t a fan of all the grease, but I tried to remove as much as I could. I liked how the cheese was a bit crispy on the bottom and it tasted good.
Whole Foods is never a bad decision (unless you cave and get their Mac and cheese 😅). The fish had lemon 🍋 added to the sauce which added so much flavor! Planning on eating a burger later when I get off work so wanted to up the greens for lunch!
Not sure if I was really awake this morning ... I almost burnt my almond flour pancakes!!! 😩 but they were delicious anyways! (I usually make/cook a big patch and save them in the freezer!... Mornings are tough so I need something to “grab and go”)
BREAKFAST: I’m sure we’ll eventually get burnt out on omelets, but for now they have been yummy. I made another pimento and cheese filled one with shredded cheddar cheese on top. •
On another note, I’m a bit irked again by some people who feel the need to not ever like or comment on any of my posts, but when I post a grocery haul they suddenly feel the need to comment and school me on ingredients in things like cheese. Yes, fresh shredded cheese is much tastier than pre-shredded, but I’m a busy mom and pre-shredded is often more of a convenience than something I’d like to be anal about because it’s “not very keto.” If I ask for your advice, or if you have a sincere approach to helping me, I welcome your help with open ears. If you’re going to start your comment with a big FYI, you can keep your keto police mouth zipped and unfollow me or keep scrolling. 🤐🤐🤐 I have learned so much from this community, but I will not tolerate anyone’s hand slapping. I’ll block you in a heartbeat. Be kind.
Yayyyyy me!!!! I AM TOTALLY OFF My Diabetes Medication!!!!!!!! I’ll have to go back in 3 months for another A1C follow up to be sure I’m still doing good off the meds! I’m not cured according to the doctor, but if I keep doing what I’m doing I’ll never have to have them again. And according to the Diabetes Guidelines I’m not even a diabetic any longer! 🙌🏼🙏🏼 2. My Blood Pressure is good but still a little elevated. I still have to stay on my Blood Pressure medicine for now. I will be able to get off that as well in the near future!! 🙌🏼🙏🏼 3. All other blood work came back excellent as well for me. There was never an issue with my Cholesterol. It came back excellent. My thyroid excellent and My kidneys excellent!! Now for the Ultrasounds of my upper abdomen and lower abdomen:
1. The issue I was having in the upper tummy goes unsolved. All came back good with that upper ultrasound. However, he did say I have an infiltrated Fatty Liver, think that is what it was called, which is a first I’ve ever had. SUPPER: Lost track of time shopping for fall clothes for the fam, so we had Chick-fil-A drive-thru on the way home. I know the grilled have better macros, but I split a 12 count and had 6 of these glorious nuggets to myself with a coke zero.
I was making a meal plan for a client this weekend and put some recipes in that I had totally forgotten were amazing! Tonight’s dinner was Keto Crack Slaw. So good even Rodney scarfed his down in record time!
